chiver's mushroom gravy:
1T canola oil 1 stick butter 6T flour 1 sm. onion, finely chopped 6oz baby bella caps, thinly sliced 1tsp dried thyme 6-8c chicken stock
heat oil in a saucepan over medium-high heat. add onion and cook until it shimmers. add mushrooms and thyme. cover pan and cook until liquid is released, stirring occasionally. add butter to the pan, once it melts add the flour. whisk together to make a roux, it's okay to leave the mushrooms in the mix. gradually whisk in stock, simmering to allow the gravy to thicken.

I've always just made gravy from drippings--I'll have to try your mushroom gravy sometime, DS loves mushrooms.
