I replace the "fat free" labels with "Extra Creamy Goodness" and they will eat anything. Actually, I cook on the the healthy side and they like my cooking. I'm not super strict though, I allow small amounts of butter and sour cream, etc. so that probably helps.

DH is worse than our kids. I have to hide the containers from him before I use them or he just knows it's not going to taste good.

I don't cook with dairy/salt so DH applies those to his plate after he's served himself...and uses more than he should. The only real complaint I get from him is he doesn't like brown rice. I saute it with a ton of garlic/onion to add flavor but he'd still prefer white. BUT - he understands why I make brown and he eats it. My dc are skinny so they get as much fat as they want...not that it seems to help. But they don't get cookies/candy/etc because "that doesn't help you grow big and strong" while chicken or broccoli does.

Margarita - I guess I misspoke. I saute onions/garlic in a bit of oil, then add broth/rice, bring to boil and then simmer until cooked. I do a ton of onions/garlic - like half an onion per cup of uncooked rice and 4-5 cloves of garlic.

I love brown rice! I cook it with a can of Rotels or enchilada sauce for part of the water. Or cook using vegetable or chicken broth in place of the water. I have brown rice and steamed veggies several times a week for lunch. Also easy to make 'fried' rice with brown rice, some frozen veggie mix (the green peas/carrots/corn mix), and throw in some scrambled eggs and szechuan sauce

You say you saute your brown rice with garlic and onion.. do you do that to toast it first before adding the water/liquid to it and boiling it? I eat brown rice instead of white, but it does lack flavor when I just boil it. Toast it in a tiny bit of rendered bacon and/or brown butter. The flavor will be amazing.

DH is the cook in our family and he's really changed for the better over the years. I just don't eat anything deep-fried or with cream sauces and I rarely eat cheese even though I love it. Too much cholesterol. In 2004 DH had a couple of cardiac stents put in after they found some major arterial blockage (the Left Anterior Descending, which my sister the doc later told me is nicknamed "The Widowmaker", was about 80% clogged). He took Cardiac Rehab classes and, bless him, took them seriously. He uses a lot of olive oil and very little prepared foods except pasta sauce. We both read the labels on canned food. We can't wait for the farmer's market to open every Spring. He still doesn't eat as many green veggies as I do but he eats a lot less junk.
He does, however, sigh longingly at Pizza Hut commercials.
