as far as carbs: it's my understanding that there are good carbs & bad carbs (just as there is good & bad cholesterol). Whole grains take longer for your body to digest, are usually more filling, usually higher in fiber, and don't spike your blood sugar like simple carbs do. If you have a library near by, check out The South Beach Diet books. I learned a lot about better food choices from those books. fried foods...I don't think ANY of them would be considered healthy. Here's what I do when I have a craving for fried food: I have a pizza stone and I will bake breaded chicken tenders (the Kroger brand is EXCELLENT) or breaded fish fillets on it. I also use it to cook frozen fries. The stone absorbs some of the fats in the food, everything comes out crispy, and I can satisfy that craving without totally ruining my eating plan. It's not healthy, but it's definitely better than deep frying anything IMHO. hope some of this info helps you. I am by no means a dietitian. I do read labels on E V E R Y T H I N G!!! oh...another suggestion to increase your whole grain consumption. Buy some bulgur. It's really easy to cook. When you eat rice, do a 50/50 rice/bulgur mix. If you eat hot cereal for breakfast, stir in some cooked bulgur. I bulgur!!!

Wheat is a grain. Therefore all whole wheat is whole grain. However, all whole grain is not whole wheat.
What do you mean by watch carbs? You should be eating carbs for a balanced diet. Things like Adkins etc where you entirely cut out a food group is unhealthy. So, if by watch carbs you mean taking in only high quality carbs then yes, those are two good options. Thing to remember about carbs is to eat only complex carbs and not simple carbs. Follow that rule and limit the carb calorie intake to no less than 20% and no more than 40% and you'll be on a good path.
A lot of people are so scared of fats and avoid them at all costs. Again this is unhealthy. Ideally your diet should consist of about 20% of your totaly caloric intake. So, again, like the carbs you need to just follow a simple rule as there are "good" and "bad" fats for you. Trans and saturated fats are the ones to avoid eating too much of while unsaturated fats and omega 3 oils are the ones you want. So your question is yes it's healthy to use olive oil as it's considered a "good" fat. However, I wouldn't drench your food in it.
As a very rough rule of thumb the "good" fats are liquid at room temperature.
