I found a really great bleu cheese for $1.50 a pound today, and, since it freezes well I bought a bunch! Now, I just need more recipes Really looking for a tried and true bleu cheese dressing/dip recipe and any others you've got (I'm going to make chicken cordon bleu and at real bleu cheese to it--love it that way. Also on hamburgers). Simple and quick is best for me since I work full time, but if I get more complex recipe responses I'll try them too. TYIA!

I'll use it on a salad with spinach or other baby greens, sliced red onion, mandarin orange wedges and walnuts. I've got an oil/wine dressing recipe that goes great, but I'm usually lazy and use bottled. This is also good with grilled chicken slices and some homemade croutons to make it a meal... Now I'm getting hungry, maybe I'll make this for dinner!
ETA: I did make this for dinner and it reminded me that above is how I like it, DH holds the oranges and tosses the chicken in hot/wing sauce and uses ranch (or a bleu cheese) dressing. I don't have a recipe for bleu cheese dressing, we just use the bottle, but we both like tons of cheese on of this salad.

We like bleu cheese crumbled on beets, either hot, freshly roasted beets or cold sliced beets on a salad. We're also fans of bleu cheese burgers, bleu cheese omelets (don't use too much!) and bleu cheese and apple bruschetta (brush sliced French or Italian bread with olive oil, toast until golden, top with very thinly sliced apples or pears, sprinkle with bleu cheese. Makes a great winter lunch with soup or a great summer lunch with a mixed green salad.

Marinate a couple of chicken breasts in balsamic vinegar for several hours. Cut an opening in the side of the breast. Stuff with the bleu cheese and some fresh chopped garlic and basil (you can also mix in some feta cheese). Place in a 375 degree oven until cooked thoroughly (depends on the thickness of the breasts, but usually around 20 minutes). Top with a little more bleu cheese and stick under the broiler for a minute or two.

I make a mac and cheese from scratch that has blue cheese in it. Really good if you are into comfort food.

I put blue cheese on a bagette and then I get a really thin sliced beef and cut it into little piece and quick braise it in balsamic vinegar. I toast the bagette so the cheese melts/warms up a little and the bread gets a nice toasty thing. Put arugula on it and serve it with salt & vinegar potato chips.

I make a steak topping with bleu cheese. Put 4 tablespoons cream cheese and 2 tablespoons blue cheese in a microwave proof bowl. Add a dash of garlic, and mix with a fork. When the steaks are pulled off the grill, microwave the cheese mix for about 30 seconds, or until melted. Stir well with a fork or whisk, spread on steaks, and top with a little fresh parsley.

I made the steak topping last night (for Valentine's Day) and it was great! Thanks for the idea!
We used to have a restaurant called "The Magic Pan". They had a great appetizer that I liked and sort of reproduced at home. It is very similar to the steak topping actually. You basically mix the blue cheese with cream cheese (no heat). I"d make a piece of toast and spread this topping on it. Then I use "Pinch of Herbs" which I don't think is available any more to put on top of it. You could also heat it in the toaster oven to melt the cheese mixture more.
Also, you can easily freeze blue cheese especially if it is in chunk form. We buy the chunks at Costco and freeze it in the container it comes in. When I need some blue cheese, I chip some out of the container. It works very well.
I also use blue cheese to make my bruscetta (?Spelling). I use roma tomato (1 large or a couple of small) diced. Then I add some cut fresh basil (I cut it in think strips with the scissors but you could chop it up too). I usually use 4 or 5 large leaves or more small ones. Then you add some blue cheese (you can tell, this isn't an exact recipe) maybe 1 or 2 T chopped up. Then you use 1T balsamic vinegar and 3T olive oil. Maybe a little salt and pepper to taste. Also 1 clove of finely chopped garlic. I put this on crustinis (?Spelling??) which you just cut a baguette into fairly thin slices. Put it on a pan, brush bread with olive oil. Toast the bread in the broiler. When you take it out, use a cut in 1/2 garlic clove and rub the inside on each piece of bread. This is a great spring appetizer when you have fresh tomatoes and basil.

Buffalo Chicken Dip (It calls for dressing, but maybe you can doctor it up with blue cheese somehow)
5 boneless/skinless chicken breasts, cooked and broken into bite-sized pieces (shred it by hand). 1 cup hot sauce 1 cup blue cheese dressing 1 brick cream cheese (8 oz) 1 8oz package of shredded Taco/Mexican cheese Fritos Corn Chip scoops (either 1 large or 2 small bags)
1. Preheat oven to 350 degrees. 2. In a large saucepan, melt the cream cheese on a low flame. Mix in the blue cheese dressing. 3. Continue to stir, adding the hot sauce. 4. Add the cooked chicken, and stir until the meat is thoroughly soaked in the dressing. 5. Pour mixture into a 13x9" baking pan. Bake at 350 degrees for 35 minutes or until hot and bubbly 6. Remove from oven and top with shredded cheese. Serve with Fritos once the cheese has melted.
You can adjust the amount of hot sauce if this variation is too spicy for your taste. My DH and I like foods slightly spicy, so if you reduce the hot sauce to say 3/4 cup or 1/2 cup, just adjust the amount of blue cheese dressing so you are using 2 cups total of the hot sauce and blue cheese dressing.

I make mac and cheese with gorgonzola, so I think it would be good with bleu cheese as well. I sometimes make buffalo shrimp crostini with bleu cheese crumble. At $1.50/lb, is it even good cheese? That would scare me out of buying it!
