Anyone have a really good Belgian waffle recipe? A lot of recipes call for baking mix and waffles made from baking mix taste off to me. I want a really good and hopefully simple recipe for from scratch waffles.

Mash a banana, crushed walnuts, add some vanilla and Cinnamon. mix in batter. gentley add blueberry's blend with spatula. your ready.

I'm not sure if these are Belgian waffles, the recipe came with my Belgian waffle maker and are called "basic waffles". The only other waffle recipe in the book is for buttermilk waffles. I make the basic kind. Simple and easy with ingredients I always have on hand so no special shopping. Since it's just the two of us I sometimes cut the recipe in half.
2 cups sifted all purpose flour 3 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon salt 2 eggs, separated 1 1/4 cups milk 1/3 cup vegetable oil
Sift together flour, sugar, baking powder and salt. In a small bowl, beat egg whites until stiff; set aside. In a medium bowl, beat egg youlks well. Stir in milk. Add sifted dry ingredients to egg yolks and mix until moistened (be careful not to overmix). Add vegetable oil. Fold in egg whites Bake in a preheated waffle maker for approx 4-5 minutes, until crisp and brown.
Makes 6 waffles.

I was watching a Food Network show and the chef (I think it was Sunny Anderson) mixed whipped egg whites into her waffle batter. She said it made them lighter. I've been meaning to try it.
