For me, it's hair and body stuff. I use Carol's Daughter on my hair, imported African soap, and Shea butter. I take my hair and skin care pretty seriously, and I don't like the way the cheap stuff cleans or moisturizer.

I am afraid to admit that I won't go cheap on Dish soap (has to be Dawn), my shampoo, the babies soap and laundry detergent. I also don't buy cheap diapers, as much as I would like to, and have tried a vast amount of them, my baby leaks through almost every kind of diaper. I would rather splurge on the most expensive huggies and only have a few leaks a week instead of having leaks all day long and having to change the sheets daily.

I guess it depends upon what you call "cheap".
I buy used cars, but high quality.
My wife bought 4 prom dresses for my daughter. They took a stroll thru Saks and Nordstrom, saw the $500 dresses, and the $750 dresses, then went to the thrift store, and bought 4 dresses for a grand total of about $50 for all 4.
She plays French Horn. I bought a top of the line horn for about $5,600. Used. Had been used in a Military Band for years. New, they cost about $11,000. Now, I don't think paying $5600 for a musical instrument is being "cheap". But it's a whole lot less than full price retail!

I don't cheap out on skincare stuff or makeup. I don't buy ridiculously expensive makeup but I don't buy drugstore stuff anymore.

I just blew $2000 on excursions for our cruise. I had considered just hiring taxis or taking trains and doing it ourselves for cheap but I know I would be stressed out about getting back to the ship on time and enjoy the vacation less.

Beer. I won't buy any of the domestic main brand stuff. I'm a little spoiled living in the Pacific North West for great beer so I'll aways spend a few more $ every time I fany a drink or two.

I don't go cheap on much of anything, unless I see it as a comparable purchase. For instance, I will not buy generic food items because the flavor is never the same...however, I will buy generic meds because I can see they have the same exact ingredients as the name brands. And I will not buy generic tools because you can usually feel their poorer quality before you even buy them (usually everything on them is plastic - plastic was a good invention but it was not meant to be used for everything!).

chocolate - I won't buy the cheap yucky chocolate that is put out for Easter. I would rather buy small quantities of good chocolate than a lot of the cheap stuff. Hear, hear! I usually go and buy some quality chocolate from a local distruibutor at about $10/lb. Expensive but you can definitely taste the difference! And I only buy it once or twice a year anyway.

For durable things (tools, furniture) I'm with Bluerobin - buy quality. I've had too many Big Lots bookcases fall apart on me, I'll suck it up and spend 3x more on one that will actually last more than a year. Also bedding - I don't want to spend 1/3 - 1/4 of my life tossing and turning on a hard mattress with scratchy sheets. As far as consumables go, TP, trash bags, chocolate, beer (I'll drink boxed wine and Popov vodka, but I can't do cheap beer!)... all the important things

When I think about it, we don't really go "cheap" on much. We try to buy the best quality, for the best price. We always buy good quality furniture. If we are buying appliances or electronics, we try to avoid buying a Cadillac if all we need is a Volkswagon (regarding the selection of bells and whistles), but we always buy quality.
Quality costs more up front, but the products usually stand the test of time. When we need to buy something, we just wait for a great sale.

I pay an exorbitant amount to my salon for my hair cut/color and haircare products.
I refuse to buy cheap diapers. I have tried a zillion brands, but only Pampers will not blow out and get poo all over. I feel bad enough that my poor little guy has to sit in poo for even a second, I can't stomach the thought of it being all over him AND his clothes and bed. Sitting around in your refuse has to be the worst part of being a baby. I am a serial diaper changer if I think he's got even the slightest of messes. And Wyatt is a serial sharter!!
I pretty much won't cheap out on anything for the baby. I will take lunch to work forever, but I'm not feeding him generic formula!

It's better for me and better for the environment. I'm currently using Carol's Daughter shampoo, cream conditioner, spray leave-in conditioner, and some moisturizer called Marguerite's Magic. I like all of it, but I am by far the most happy with Marguerite's Magic. But that's more of a specifically black hair product. Oh, and I also spent $32 on a 6oz tube of the best de-frizzing/straightening balm ever (no harsh chemicals) - Phyto Defrissant. Massage that into your hair and scalp before blow drying and the hair just gets so straight, silky and soft. Totally worth the money. I also strive to buy products with less chemicals. I'm putting in an order on amazon for pure African shea butter - 32oz for $15.

My hair, if air dried, dries with lots of fly-aways and waves in weird places, but if I blow dry it looks fine, but dries out a bit. My buying-of-products-with-less-chemicals has kind of stalled - I discovered a few months ago a line of facial stuff at The Body Shop that my skin loooooves. Their stuff is decent but nowhere near preservative free or anything... it's their Seaweed line. It isn't cheap. I need to restock on some of those things... I got a groupon yesterday for $20 for $45 at TBS!

I'm getting pickier as I get older.
From the time I started my first Real Job, I've bought only real jewelry. It's mostly 14k, with some platinum and 18K and some 22k I've bought in India. After 35 years it's quite a collection and it's still beautiful.
Our preference for not buying things made in China has resulted in spending more, but buying less often, with a major difference in quality and durability. We've especially noticed this with clothing, shoes, tools and kitchen gadgets. I'm spending 2 days in my company's Zurich office at the end of a vacation DH and I are taking in Spain. DH is charged with finding the perfect Swiss-made meat cleaver while I'm at work, and shipping it home!
Finally, we're getting more relaxed about what we spend on groceries and buying more fresh ingredients and less processed food. DH likes the brands of sorbet that are practically 100% fruit; I like a brand of cereal from While Foods with "heritage" grains such as spelt and others I've never heard of. We're eating healthier as a result of this.

Things we don't go cheap on: Cookware - a good set of pots and pans is worth their weight in gold Kitchen Knives - there's really no point in buying cheap knives Car Care - we trust our lives to this metal contraption. it goes in for regular maintenance and had good tires Computers - however, we can build our own, buying exactly the components we want, for much less expense than buying a prebuilt computer Pet Care - not just veterinary care, but what we feed them as well. We don't get the most expensive food (where every ingredient is preceded by the world organic) but we check ingredient lists and calorie counts and buy a high quality food at a reasonable price. We're also very particular about the dog treats that come in to our house- nothing with sugar or artificial crap. Our dogs pretty much get dried chicken and little rawhide bones or large pork chews Peanut Butter - this is actually a spin off of pet care because we use peanut butter to give our dogs pills. We only buy all natural peanut butter - the one where the ingredient list is 2 items long - peanuts & salt Spices for specific dishes- we have cheap curry powder (for making curried ground turkey) and then we have expensive curry powder for making mango curry with chicken and a few other things like that
