It's just a different spaghetti variety for us. I find it reheats better than our usual spaghetti. I add zucchini and carrots to the instant pot version.
It's all done in one pan so fewer dishes than my usual preparation. It's probably not faster but it's different and I've been trying to add different things into the menu.

I need to confess -- I baked a spice cake last night and had a nice piece for dessert. There will be dessert for the rest of the week. I need carrots and than I will be making Moroccan Veggie and Lentil stew. The weather has gotten cold and breezy/rainy so it seems like a great time for a warm stew. I am also seriously thinking about Rosemary and Garlic Beef Stew in the crockpot. I am hankering comfort food.

Home late last night from NYC. Hardly anyone knew I was out of state. Last night: Caesar salad with the family. Dad paid. $0
Tonight: Leftover chili from the cook-off I judged today. $0
Wed: Fish, shrimp and veggie $8-$9 Thurs: Pork Crock Pot something. $5 Fri: Take out from? Sat: Leftovers Sun: DH will grill/smoke something

We made Thanksgiving Taquitos. We shredded Turkey and cooked up some sweet potatoes, along with both traditional taco seasoning and other spices like cloves, ginger and nutmeg(and other stuff). We put that filling in corn tortillas and fried them up. Topped them with an apple coleslaw, which included lime and cilantro and served them with a cranberry salsa. We may be on to something.

repurposing some leftover rotisserie turkey. there's still a ton. oops.
I chopped some of that, roasted half a broccoli crown, and will be tossing it with some curly pasta and parmesan cheese. minimal cost, minimal waste. there will likely be another serving of this, I now realize I chopped more than intended.

I made black bean soup, but the hocks anymore since they have bred hogs lean just don't season as well. I should have added ham seasoning. Fixed fried potatoes and cornbread with it. Ground my own corn, need to make it a bit coarser for my taste. Just took a cake out of the oven a bit ago and iced it. Yellow cake with chocolate icing.

Been all over the place with meals. Friday was deli fried chicken, salad, rolls, broccoli and cheese sauce. About $8. There are a few pieces of chicken left. Last night was spaghetti w/meat sauce. Salad. Cost about $6. Meat sauce will go into a lasagna for later this week. Tonight, pork roast, salad, mashed potatoes and probably green beans. Great deal on the pork roast. $5. Will separate it though, too large for the two of us and don't want that many leftovers. Mondays are usually leftovers (garbage day Tuesday) Tuesday, Shrimp and rice (stir fry), cost about $6. Hopefully no leftovers. Wednesday, probably the lasagna. Thurs, Fri, not sure yet.

I think it turns out well, I was doing that for the pups before I bought my instant pot. the only negative I found was that I needed to raise the bird off the bottom of the crock so it wasnt swimming in the juices as it cooks.

DH had leftover pizza from last Thursday. So $0.
I had chicken nuggets and asparagus. The asparagus is close to needing pitched. The nuggets need used as well. I've been trying to work more fruits and vegetables into meals.
Monday night is egg roll in a bowl. Estimated costs $6. Will probably have enough leftovers for lunch one day.
Tuesday night cheddar sausages and broccoli. Maybe the end of the bag of onion rings?
Wednesday night lasagna in instant pot. DH said it looked good so I'm trying it. Maybe $8? Will serve with salad and garlic bread. I'm expecting leftovers for Thursday night.
I am trying to plan carefully this week and use up what is in the fridge. We are out of town Friday and Saturday and leave again next Tuesday for vacation.

I didn't grocery shop this weekend, so I might be freezer diving for proteins this week. I have a bunch of veggies in the fridge that are still good from last week. I do need to stop at the grocery store to pick up ground <something> to cook for the pups in the next day or so. I can always pick up something for myself as well.
dinner tonight will probably be baked fish and a Caesar salad, if I'm hungry by then. I know I have romaine hearts at home already, and I'll be home well in time to pick up fish from the market before it closes.

I've started using the oven now that it has cooled off outside. It was 43 degrees on the way to work this AM.
Last night DH smoked ham slices from the 1/2 pig we bought last month. SO good. He put slices of it on top of the pepperoni Fathead pizza I made. Cost approx $6 with 1.5 pieces ham and half the pizza left. ~Tonight: Deer and pork sausage meatloaf in the Crock Pot. I'll serve it with turnip fries. $6 for at least 4 servings. ~Tues: Chicken and "dumplings" freezer leftovers from this summer. $0 ~Wed: Salmon, shrimp, fried okra. $14 ~Thurs: Volunteering as a food judge. $0 ~Fri: Take out from? ~Sat: Gift card from last Christmas $0 ~Sun: Grill/smoke something. $? I didn't bother to eat last night before checking out super early. tonight, I wasn't very hungry and didn't feel like roasting a bunch of veggies (which had been the original plan). so I grabbed a can of chicken and a pouch of Knorr rice, and roasted a broccoli crown. that rice always gets cooked with garlic, onion, spices, and chicken broth. salty AF, and I pitched what i didn't eat.
cost - maybe $4? packaged things were on sale, broccoli crown might have been $1.

I am having one more bowl of Morrocan Veggie Lentil stew tonight.
Tomorrow is going to be pot roast in the crockpot. The only things I add to it are italian seasoning and peppercini rings w/ juice. It is amazing and perfect for this time of year when the weather gets cooler.

I got home late, made a couple stops on a later train than normal. definitely didnt want to cook anything. so I got takeout. I love this Chinese place in the last plaza I stopped at, and it's been awhile since I've been over there. an order of pork gyoza and some rice noodles with chicken came to $17.
the gyoza were tasty, and it barely looks like I've touched the noodles. there's definitely two more meals out of that.

Last night DH and I ended up splitting my leftover taco salad from lunch. I rounded the salad, diet soda, and generous tip to $20. We'll have the salmon tonight as I suspect I'll get home earlier than expected from the food judging. Tomorrow night we'll have leftovers instead of take out.

I have a package of chicken thighs I need to cook tonight. that will be the IP lemon garlic chicken recipe I posted a few pages ago. may or may not eat that tonight, idk. right now, I'm at the sports bar b/c I wanted a pizza to pick at for a few days. this looks great. I also got a cup of chicken rice soup, b/c its soup weather. will have to remember that it is really good here. pizza is $13, soup, idk. beverage is $7, will tip accordingly. the leftover pizza will be breakfast on the train this week, one slice at a time. ETA - soup was $4.50. eh, it is what it is. I'll probably just grab a bowl next time.amd call it good. I just knew today I wanted a pizza to have leftovers.
