Dorcas Reilly, whose iconic green bean casserole dish graces millions of Thanksgiving tables each year, dies at 92 When Dorcas Bates Reilly, a supervisor in the Campbell Soup Co. test kitchen in Camden, came up with a green bean casserole in 1955, she had no idea it would make culinary history. She wanted to create a quick dish combining two ingredients that most American families had on hand at that time – green beans and Campbell's cream of mushroom soup. The Green Bean Bake, as it was first called, was tweaked by Mrs. Reilly and her team of recipe inventors into a popular comfort food. I have never partaken of that stuff. I always thought it looks like barf in a bowl.

I prefer my green beans with butter only. But it would be cool to have something you created become big like that, I think.

I make it, but we use both green beans and English peas. The key is plenty of french-fried onions to put on top (even if you have to buy the large can). That way it doesn't all taste the same. There's some crunch.
It's not a favorite of mine, but it's an easy dish to make-and-take for potlucks, etc. And it always gets eaten . . . even if it is because everyone knows what it is.

I prefer my green beans with butter only. But it would be cool to have something you created become big like that, I think. Peace. Only fresh of course. Try tossing your buttered beans with a sprinkling of dried sage.

I know you all hate the cream of glop soup, but I do love the pot roast gravy that you get from dumping a can of cream soup and a packet of dry onion soup on the roast.

If you don't care for that old side dish staple, try making a greenbean and blue cheese casserole, a twist of the old green been dish. Quite good and rich.

It's quite delicous. Of course you must like blue cheese (which I do) to enjoy this dish. One example of the recipe: Easy Green Bean Casserole with Blue Cheese Ingredients 2 tablespoons extra-virgin olive oil 1 sweet onion, chopped 2 garlic cloves, minced 1/2 cup butter, divided 2 tablespoons flour 1 pint heavy cream 1/2 cup crumbled blue cheese 4 cans green beans, drained very well 1 cup french fried onions, chopped 1 cup panko breadcrumbs kosher salt & freshly ground black pepper Instructions Preheat oven to 400F. Drain green beans in a colander. Allow to drain thoroughly. Heat EVOO in a large skillet. Add onions and cook over medium heat until soft and translucent, about 5 minutes. Add garlic, cook one minute more. Add 1/4 cup butter to pan, melt and stir into onions. Sprinkle flour over butter mixture, stir and cook flour for another 1-2 minutes. Slowly stir in heavy cream. Bring to a simmer, add blue cheese and turn off heat. Stir until blue cheese is incorporated (small pieces are okay). Season to taste with salt and pepper. Gently add green beans to skillet and mix until well-coated. Pour mixture into a baking dish. In a small bowl, melt remaining butter in microwave. Add chopped french fried onions and breadcrumbs, mix thoroughly. Sprinkle mixture over casserole. Bake for 10-15 minutes or until hot and bubbly and topping is nicely browned. Serve immediately.

I used to hate it. I don't hate it any longer, but I resent it. DB raves about when my MIL makes it as her contribution to the Thanksgiving meal. She literally opened up 2 cans and mixed them together. Plus, she tied up our microwave when it was needed for other things, while we were running around trying to get dinner ready for everyone. But please, rave about the cream of craperole.

Yeah, blue cheese and the like smell like stinky socks. It tastes worse than it smells. Stinky cheeses are quite delicious. As a kid I enjoyed trying new foods. I was eating escargot by the time I was eight years old or so. Still like them. I've never met a cheese I didn't like stinky and all.

I love green bean casserole. But only made with canned beans. I made it once with fresh beans from the garden. It was just wrong, wrong, wrong. I like green bean casserole made with frozen green beans. The trick is to blanch them well in the microwave before putting them into the casserole to bake. Otherwise they still have too much fight left in them.

As I have matured and learned to appreciate better quality foods, I have graduated to using Progresso mushroom soup, which is not nearly as horrifying as the Campbell's variety. Even then, it needs to be dressed up with soy sauce and a little Worcestershire sauce to add some zing and pizzazz. Zing and pizzazz are important in a green bean casserole.

I like sweet potatoes mashed with just a little maple syrup and some cinnamon. Now I want sweet potatoes. Mashed with maple syrup and cinnamon. And butter. ETA: And possibly bacon.

If it makes a difference to anyone, the above bleu cheese recipe or something similar can be made with Parmesan instead. It was quite good, I thought...but then I’m a saltaholic who likes the original recipe just fine (I like fresh green beans, but agree canned are a must for the casserole...although I’m open to substitutions on the soup.)

Really? People do it all the time around here. I don't like it. Yuck. I like my sweet potatoes baked with a bit of butter, brown sugar and cinnamon. Yummy.
