I told DH I was taking a tip from the TV networks. When they show the same movie for the 82nd time, it's not a rerun, it's an "Encore Presentation". Tonight we had an encore presentation of Sunday's shrimp creole.

My family all love leftovers, especially during the winter months since those are months of stews, casseroles and the like. As I type, I have beef tips with mushrooms and onions in gravy simmering on the stove. There is enough there for 4 adults and 1 teenage boy with a hollow leg to have dinner tonight and lunch tomorrow. Granted, that's dependent upon how hungry said teenager is after wrestling practice tonight.

We always plan for leftovers. It is just DD and I in our household. Right now I am cooking 2lbs of meatloaf in various forms. There is a regular meatloaf that will be eaten on this week and 6 mini-meatloafs in a muffin tin that will go straight into the freezer for another time. There are also 4 baked potatoes in the oven so there will be potatoes on another night.

not that I have any left (I dropped off 3/4 of the pan with Dad...) but I mixed up some Christmas leftovers into the splendid Italian casserole known as "mess" in my area. if I can figure out how to add a pic, I will add a "fresh from the oven" pic of the glass dish later.
the most recent incarnation of mess included: -2 servings of eggplant parmigiana, bite-sized -2 chicken cutlets, bite-sized -3 cups torn-up pasta shells (broken and extra from assembling stuffed shells) -2 cups red sauce (seasoned from cooking meatballs) -1/2 cup ricotta cheese
mix all items in a large bowl, pour into casserole dish. bake for 15 minutes at 300 degrees. add shredded mozzarella to top of pan, bake for another 5 minutes to melt cheese. drizzle hot sauce on top, and serve.
yum! ;D

Frankly, I love leftovers. I've got leftover beef tri-tip that I will have for lunch/dinner for the next two days. Of course, I'm not creative at all ... I just slice and eat. But it still counts as leftover, right? (Oops... "encore presentation!")
And whenever I have an acorn squash ... I eat 1/2 the first night and then cook/eat the other 1/2 the next night or so. I do the same thing with cabbages ... I eat them 1/4 at a time. Of course, for those, I don't actually cook them until I'm ready to eat them.

Molly That leftover tri-tip can become Fajitas, beef stroganoff and/or a stir fry just to change stuff up a bit. Same things can be done w/leftover chicken.

It might be work but it is an entily different taste. Also, something like fajitas and stir fry can be partly made together. I frequently use onions & bell pepper in both. I am a BIG believer in cook 1x, eat multiple times. I NEVER make 1 serving of anything, even rice or pasta.
I will be having a pasta, veg and chicken dish tonight in speghetti sauce. Chicken is already cooked & in single serve portions in my freezer. The extra pasta I make will be a pasta, shrimp dinner on NY day, prob w/ olive oil, butter & garlic sauce.

leeann. . .I couldn't agree more. Holiday meals tend to be more rich and elaborate than regular ones, at least in my household. After a day of enjoyment no one wants to even look at them!
One of my nephews has an hour for lunch and access to a microwave/refrigerator so he's pretty faithful about taking in leftovers. The other only has half an hour and no microwave so he generally takes a sandwich. I, the non-picky eater, will gnaw away at the rest until my stomach rebells and demands a simple grilled cheese!
But unless I nag at them the pumpkin pie I baked (after their begging) is going into the trash! My apple pie? Nyet! I'll finish it up today.

It KILLED me to watch her trash enough sliced turkey on a holiday to feed a family of 4 3x. And the carcas too. Some of the best 'chicken soup' I ever made has been from turkey carcas. ack! I would have gladly taken all of that off her hands. why would she have bought such a large bird to just throw it out??? Snerdley, just curious, are all leftovers off-limits? I mean, would you eat any soups/salads made from leftover turkey? I totally agree that only turkey sandwiches would get pretty tired after a few days.

We do leftovers all the time. Left-over tri-tip becomes beef burritos. Left over roasted chicken become chicken divan, or chicken spaghetti, or chicken salad. When I make a lasagna, two to four servings always go into the freezer to be served at another time.

That is how I cook. I don't even think of it as leftovers. I cook once for as many meals as possible. I have turkey soup I will be doing for lunch this week and suppers will be pork roast and cauliflower salad. Spinach salad once the cauliflower salad runs out.

I just picked up a pork roast to cook for tomorrow's dinner. I'm hoping to get at least two lunches out of the leftovers (and like Donna mentioned, I'll likely have to "engineer" the leftovers if DS is really hungry.) I like to make a pot roast in the crock pot and then turn it into beef stew for another meal. I used to just make enough spaghetti for one meal, but I'd end up tossing the leftover sauce because I wasn't in the mood to cook more noodles. Now I just do a package of noodles and a full container of sauce so there's no waste.

I'm the only one in the family that will eat left overs.
I LOVE LOVE LOVE leftover lasagna & spaghetti with sauce; and I love the leftover turkey sandwiches even more than the turkey dinner!!
Also topping the list are Shepard's pie and Crock pot stew leftovers

I'm currently eating about a half a cup of veggie lasagna and half a ham sandwich. Lasagna from last night, sandwich from yesterday's lunch. They both taste pretty good right now.

I will have a combination of leftover baked ziti and leftover chicken parmigiana tomorrow. The ziti was Saturday's dinner, the chicken will be spilit between DH and I after I do a stir-fry tonight, using two of three chicken breasts in the package.
Today's lunch was cold leftover steak on a mixed green salad, a favorite of mine. We had NY strip (on sale at Publix) last night, with some left over. I know cold steak may sound strange, but the right cut, sliced thin, with good seasoning (I made a steak sauce from Worcestershire sauce, balsamic vinegar, red wine and a little bit of raspberry juice left from a holiday dessert sauce) is really good.

What can be better than beef stew made from leftover roast on a cold night. Just add corn bread. Have left over corn bread? That is the start for dressing to serve with chicken the next night and then chicken salad comes next. Left overs are part of the circle of life.

Leftovers are hit or miss in our house. DH likes some kinds of leftovers and I like others. That's if there even is any because DH will eat them in the middle of the night and when I go to grab them for my lunch( I almost always eat leftovers for lunch) it's gone. But if I make a huge lasagna he will gladly eat it for all meals of the day till it's gone. I've seen him do it for 4 days straight. Breakfast, lunch and dinner.
We don't save the carcass for anything. I stink at making soups so we just carve as much as humanly possible off the bones and toss them. I freeze some of the meat and just last week I made a stir fry with left over turkey from Thanksgiving. We didn't have many leftovers from Christmas and they were gone within a few days. That's the one thing with DH. I can't freeze a meal as is just to reheat. That's one leftover he won't eat. However my Dad takes them for the nights that Mom's out and he doesn't feel like cooking for just one. I have the wings, legs and thighs of my turkey in the freezer and I want to make something in the crock pot with it tomorrow.

DBF hits his limit eating straight leftovers after the second night. It works out ok, because I can just cook either 2 or 4 servings for dinner. Although he's ok with eating the same lunch every day for a week, but I suspect that's because I pack it for him, and it costs him nothing. And the lunches are usually delicious. This week I made 10 beef and bean burritos with homemade salsa and a big pot of mexican rice for extra awesome lunches that I know he won't mind even on the 5th day.
He doesn't really do casseroles, except for like pasta bake or lasagna, so that knocks out a way of stretching like a roast chicken or a roast. I can't imagine not eating leftovers at all. The nights when I can heat up whatever delicious thing I cooked the night before are blissfully stress free.

martivir - I have family that fight over the drumsticks, so I've never priced these, but have you ever taken a look at hotel-style turkey breasts? it doesn't sound as though you're all that excited about what's coming out of the crockpot, just thought I'd mention it.

I can also stretch a rotisserie chicken almost a week. I've got a couple suggestions for your roast or chicken - quesadillas and chicken salad. is your DH opposed to leftover pasta dishes? if not, I can offer up a few of those too. for quesadillas, if you grab the recipe off a can of Goya black beans for "black beans and rice" and make up a can's worth, you can have a meal's worth of black beans and rice, and then a couple days of quesadillas out of it. you don't need to use the Goya beans if you can find a better deal, but that recipe is spot-on for what I remember from one Puerto Rican aunt's menu. I recommend it to anyone that's interested. for chicken salad, when I pick up a rotisserie chicken, I will reserve all the white meat I'm not having for dinner that night, plus about half the dark meat. the rest of the dark meat goes to quesadillas with the black beans above. I shred the chicken into a bowl, and add garlic powder, onion salt, McCormick's "Italian Seasoning", and a pinch of "summer savory" that is hard to find in the US (one of my 'house spices'). oh, and just enough mayo to hold it all together, since I really don't like mayo. for what I can pull off the bird, I've got enough for a few days' worth of sammies.

I actually have 2 turkey breasts in my freezer downstairs. Normally that's what we eat if we have it during the year. The whole were something like 29 cents a pound and that's what DH brought home. And if I don't sound excited it's because I have no clue what to make with it. I would add some salsa and make tacos but I'm out of salsa and I don't think there is enough meat for that. DH is the only person I've met who doesn't like the drumsticks. He also won't eat chicken legs or thighs. He does eat chicken wings like they are going extinct though. I might try my hand at soup again. DH did say last time that each attempt is getting better.
