I used to love fries before they made them 'healthy' by changing the oil/grease they are cooked in.

I like French fries fried in duck fat. I'm curious. This obviously changes the flavor to some degree. Do the fries taste like duck? Or do they just get more/better flavor?

When you chill home-made chicken soup, skim the fat that rises to the top and save it. Try frying potatoes in it. Or latkes.
