I tried turnips when I roasted some veggies a couple weeks ago. I'd never tried one before and I was quite surprised that I liked it. I'll add that one again the next time I roast some (which could be sometime in 2018) Mashed turnips and carrots are quite nice together. that would actually make me less likely to like it. carrots are gross. what does a turnip taste similar to? I know it's a root veggie, but that's the extent of my familiarity with it. for that particular recipe, if be more inclined to roast something that would be a contrasting color in the dish. or, well, at least noticeably different from the pumpkin color.

I had the pork chops, gravy, mashed potatoes, cauliflower, corn, and biscuits. Also made stewed apples.

Didn't like it at all.First time I bought fresh beets friend suggested that I roast them (red and yellow) I didn't particularly like it either. So I rubbed a little olive oil on the next ones, wrapped them each in foil and put in oven. I use convection oven so don't necessarily go by time and temp. I set over to 425 and after 30 mins or so I "squeezed" them to see if soft. When I felt were done I let sit for a bit then removed foil.
I have a really cheap washcloth that is rough. I used that to "scrub" off the skin. Came off beautifully and I really like the beets. I'm a lazy cook so peeling them ahead of time was a no go

Last night DH smoked the pork roast (on sale for $4.72) and I made fried eggplant ($1.59) parmesan. SOOO good! Tonight I'm making this for the first time in order to use the JD and zucc in the fridge: Stuffed zucchini The zucc was $1.80 for 2, and the sausage was $3.49. Tomorrow night I'm going to make enchiladas. However, we don't have any tortillas. In keeping with my new goal of staying out of the store except to buy food for this Saturday's party, I'm going to try my hand at making them out of almond flour. We'll see. For the leftover egg yolks, I just found this: Low Carb Lemon Sour Cream PieWed: Fish night. Maybe. Thurs: Out with the ATV club. Something in between grocery shopping and the meeting. Friday: Takeout from? Saturday: Halloween party. Sun: IDK yet. Party leftovers The stuffed zucc turned out well and DH said it's a repeat. I found a different, easier tortilla recipe yesterday, one which doesn't require separating eggs. chiver78, you were asking about it on FB: Paleo Tortillas Recipe. The taste is good, but I made them a bit thick. DH gave me a look after his first bite. I told him they are paleo, but agreed they aren't the best enchilada vessel. If anyone ends up making them, take note of the recipe comments. You'll pour the batter directly into the pan, instead of making balls, as it is runny. And yes, I used the sugar free honey. Tonight I'm making crab legs (on sale earlier this month) and shrimp. DH is welcome.

DH and I worked our butts off yesterday on a project and the Patriots are playing early (1:00), so dinner will be our first trip to a local Steak n Shake. Any reviews?

I just made a batch of this pumpkin mac and cheese as one of my weekday meals - skinny taste recipeI didn't follow the recipe exactly, but what I did is damn tasty. I also mixed in some chicken I cooked yesterday, and topped it with some fresh sage. I will absolutely be doing this again.

Thanks for the link -- for both the recipe AND the 25% off coupon for Delallo pasta. It's the ONLY pasta we eat because it is vegan and I don't have to worry about eggs. It IS freaking pricey though, so that coupon code will go a looooonnnnnggggg way. Off to order a couple cases for home and a couple of case for YDS at college... Oh, and the recipe looks really yummy, too -- on the idea of deconstructed pumpkin ravioli which is one of my favorite pasta dishes.

According to PETA, most dried pasta is vegan, unless it's egg noodles or egg is listed in the ingredients. Is pasta vegan? Most packaged pasta—including spaghetti, rotini, and any other type—is 100 percent vegan. To know for sure, simply check the ingredients on your package! Sometimes, you might see “egg” listed as an ingredient in “fresh” pastas, so avoid those—but generally, pasta contains no animal-derived ingredients. Most boxed pasta contains simply one or two plant-based ingredients such as semolina and enriched wheat flour. www.peta.org/living/food/is-pasta-vegan/Maybe this will save you some money.

It shouldn't cost much because it simply semolina flour and water, after all. But, because it IS vegan, there is a premium: I get it on sale for $2.50 -- $3.00...on sale.

I just checked my box of 79 cent Catelli spaghetti. It's 100% semolina flour. Vegan.

I only used half the can of pumpkin, and different cheeses b/c they were what I had on hand. oh, and I just roasted 2lbs of Brussels sprouts and called it good. definitely report back if you try it. would be curious to know what tweaks you make, and what you think I don't think I realized that the Delallo pasta is vegan. I bought some when I was exploring brands after I made a conscious decision to stop supporting Barilla, and I liked some of the cuts. I remember thinking the rigatoni was quite thick and gummy when I tried that one in a recipe. good to know, though!

Ocean State Job Lot actually carries this brand, I saw it in there yesterday. maybe take a road trip out to my old town? or, and here's the fun part - do you have a Kitchen Aid mixer? making your own pasta is really easy....

One kiddo has a life-threatening, anaphylactic, allergy to eggs, so I'm forced to go with confirmed, committed, vegan brands, not brands that simply take the cheap route and might also make pasta with eggs in the same facility/on the same equipment. He cooks for himself at college and sincerely lives on pasta, chicken, veggies, and grated parm, LOL, so I spring for the pricey, safe, stuff.

I've made pasta, fairly frequently when the kids were younger. Now that YDS is away at school, though, making it isn't nearly as convenient for him. Hence, frequent, large, orders from Delallo. Thanks for the tip -- I'll have to check Ocean State out.

Mashed turnips and carrots are quite nice together. that would actually make me less likely to like it. carrots are gross. what does a turnip taste similar to? I know it's a root veggie, but that's the extent of my familiarity with it. for that particular recipe, if be more inclined to roast something that would be a contrasting color in the dish. or, well, at least noticeably different from the pumpkin color. Carrots are wonderful! Just the right amount of sweet. I could eat carrots all day long!

I made Moroccan Veggie and Lentil Soup and have been having that for dinner for the rest of the week. I also pulled out a few raspberry turnovers and baked them last night. I really need to rearrange the freezer so that there is more room.

dinner tonight will be a portion of the pumpkin mac and cheese and a small Caesar salad.
note to self - the mac and cheese didn't reheat as well as I'd like. next time, I will make a much smaller batch if it's just me eating it. maybe one portion of leftovers.

Monday night was spaghetti. Cost $4.
Tonight is grilled steaks, salad and something else. The grocery store had a package of Tbones on mark down last night. I'm going to say $17ish for cost.

Correction to tonight's pizza toppings. After searching around online, I'm going to make a BBQ chicken fathead crust pizza topped with blue cheese. Cannot wait!

You may know this already, but just wanted to re-iterate.
