Made this for the first time to serve with last night's fish: Black Beans and Cauliflower Rice Despite the fact I didn't use the bell pepper, onion or jalapeno, DH said it had some kick and I concurred. It made about 4 servings, and I will definitely make it again. *Making turmeric chicken drumsticks for the first time. My disclaimer: While off Monday, I heard about this: The Anti-Alzheimer's Meal Plan so I thought I'd give it a shot. We already naturally follow part of it, but I thought the legumes and turmeric aspect were interesting. Iggy, Turmeric is bitter by itself - so make sure that you use just a pinch. You may know this already, but just wanted to re-iterate. Thank you, saveinla! I didn't know this.

I don't find it particularly bitter. I use quite a lot of it in cooking.

I don't find it particularly bitter. I use quite a lot of it in cooking. I cook with it a lot too, but always use a pinch - its just for the coloring and the anti oxidant properties. That's how my grandma used to cook and that's what I follow. But YMMV.

Last night's turmeric chicken was really good! DH actually liked it. It's funny how the turmeric made the dishwater yellow, LOL. Next time I make it, I'm going to try the Budget Bytes recipe Chocolate Lover likes so much. I didn't do it this time because we don't have any coconut milk. Happy weekend, everyone!

I have no idea what I'm having for dinner. I've still got a portion of pumpkin mac 'n cheese, but I think I'm all set with that after all I've had this week. woof. I think I can safely toss that without too much guilt. so I can either get takeout from somewhere, or dig through the various soup options in my desk drawer. I may go to Whole Paycheck and grab a burrito, or maybe soup if I like what's on the bar when I go. not sure yet. will update with pricing when I head out later. suggestions welcome

I found some beans and veggie recipes for salads. I have the ingredients to make 3 of these salads....they could easily be served hot, so will be making those this weekend.

Thank you. I get the olives from a small Italian deli close to where I live, so that part is covered. Now if I they can move their gelato to somewhere inside that would help

Black eyed pea salad: No link for this one
Make basic vinaigrette using apply cider vinegar and creole mustard..(.I'm going to use Dijon) season with a pinch of cayenne pepper
Combine vinaigrette with 2 15 oz cans of black eyed peas (drained rinsed and patted dry) 2
2 chopped celery stalks 1 chopped green bell pepper and 3 sliced scallions
Toss well and season with salt and pepper. There were 2 more recipes but for some reason didn't buy all the ingredients . One was Greek Chickpea salad and the other Southwestern Three Bean Salad.

Here is the last one I bought the ingredients for. Will likely make it tomorrow. Parmesan Asparagus and Butter Beans salad Whisk 1/4 C mayonnaise, 3 T grated parmesan, 1/2 t pepper and trim 1# of asparagus cut into pieces. Place in a steam basket set over simmering water. Add 1 C drained butter beans (I bought cannoli (were white beans not navy)) cover and steam until tender - to 5 minutes. Transfer to a platter. I decided I wanted soup, and the options around here are atrocious. so I started exploring everyone's menus. the Mexican place on the road to the highway had black bean soup on the menu, so here I am. it's actually really tasty. going to ask if I can call in to-do orders in the future.
I got a cup of soup and a grilled chicken salad. should be ~$20 with tip?

It's nearing the end of the monthly grocery shopping cycle. Time for creativity and eating down freezer contents. Last night we had smoked spare ribs and I made baked fries with garlic, olive oil and oregano. I sprinkled feta cheese on them to use some of it up when they came out of the oven. DH liked them. Cost was posted last week. Tonight is the leftover cooked steak from an August camping trip. I'll serve with leftover green beans and potatoes. $0.00 Tomorrow night is leftover zucchini Alfredo casserole from July. $0.00 Wednesday is a new one for us: Tuna and White Bean Chili I'll omit the corn to reduce the carbs. Cost approx $2. I've been making an effort to add legumes into our meal plans a la The Anti-Alzheimber's Meal PlanThursday is probably leftovers. Friday-take out from? Sat and Sun, IDK yet.

I am making a double batch of chili. I defrosted the lean hamburger for pasta, but life got in the way. I really needed to go ahead and cook it since it started defrosting a couple of days ago. I'll freeze most of it until it's colder, but I like chili whenever.

Since I got soaked between the car and the house I wanted something warm. I pulled a portion of black bean chicken from the freezer. I also had an apple from the ones my dad gave me. So I'm calling it free.
Tomorrow night will be happy hour food.

I have a dentist appointment on my way in to work, so I don't really want to bring leftovers and leave then cooking in the car for an extra hour. going to grab takeout, I have a "we miss you!!" coupon from a Chinese place near the office. can do garlicky greens and lo mein for about $15, and that will cover three large meals.
between that, the chicken I cooked yesterday, and the rest of the taco meat, I should be set for actual cooking this week. yay!

I am planning on baking some fish and having cous cous on the side with some salsa for flavoring tonight. Either that or I will end up having some type of soup for dinner. It all depends on what time I will get home tonight. If it's really late I will just do hummus with toasted pita.

I had what I call a SS win yesterday. We had 6.5 scallions leftover from a party, and 2 slices of uncooked bacon in the fridge. I googled those ingredients and here's what popped up: Bacon-Wrapped Scallions (Cipollate con Pancetta) I had no idea this existed. Topping the leftover steak with one each added the perfect flavors. I told DH I should have added the leftover blue cheese as well, LOL. Also a win lately: Friday after work I got $39.11 (includes tax) worth of groceries for $7.25 by shopping the sales and using e-coupons for free items. It would have been $1.98 less plus tax if I didn't need club soda mixer. The cashier was impressed, as was DH when I got home. He's getting on board with the free Friday downloads our grocery store offers.

Tuesday night ended up being homemade hamburger helper. It was cold and rainy out so a perfect dish. And I had the stuff to make it. I need to get to the store. Maybe $5.
Tonight is happy hour and Thursday I don't know. If I get it together tonight I will be going up to DH's house and I'm pretty sure he needs to go grocery shopping too.
