I am twitching at your lack of vegetables.... I ate some baby carrots too. Don't worry. I had vegetables. And just realized my dinner consisted of all orange food(s). That is disturbing. Actually, I think Chef Boy-ar-dee puts on the can that it has a "full serving" of vegetables. It must be the tomatoes.

today's been a glorious day of not adulting. I was driven to brunch, where we stayed for a number of beverages. we came home and played with the dogs for a long time, some friends of a friend that went to brunch arrived here (my house is way easier to find than hers, coming on Cape) and we played some board games and traumatized the dogs some. and then after everyone else left, my roommate decides to declare that it's "past his bedtime" and checks out around 6. whatever, dude. I tossed up a bruschetta topping with prosciutto, and boiled off a bag of the spinach and artichoke ravioli I made a couple weeks back. and um......I am absolutely making more of these.

My very lovely neighbor brought over some pasta, a jar of sauce she canned and some garlic bread so I made that. It was very good. DH even ate it after I picked the mushrooms out. I'm full now and I ate vegetables today!! I had a bunch of baby carrots and the tomato sauce.

Sunday: A Walmart brand pizza. $6.98. I've been wanting to try one, and now that I have, I can say I won't do so again. Last night: DH grilled sweet corn and Angus burgers. I fried up some breaded okra. Delish. Tonight: I have this in the Crock Pot: Slow Cooker Mexican Shredded Beef. It's a new one for us, and I'll report back how it is. Wednesday: Something with ground beef. Thursday: Leftovers. Friday: Chinese take out. Maybe. Sat and Sun: IDK yet. Have a fantastic week, everyone.

Chicken strips and a caesar salad. I'm over the orange foods today. That and I ran out of Cheetos.

I plan one fixing a nice salad for lunch tomorrow, so tonight will be a Lean Cuisine dinner. Maybe a slice of garlic bread also.

Chicken strips and a frozen veggie mix. Cost $3-4.
An extra dollar if you count the rice/veggie mix that I pulled out first and couldn't eat. Usually the Green Giant lightly sauced varieties are safe for me. This one had soy protein so it's in the fridge for my brother to eat later. I get so annoyed by places sneaking soy protein into vegetables. Let the vegetarians eat the soy protein if they need extra protein and leave it out of my dang vegetables.

what a case of first day-itis! I was already running a little late and rushing, and took the time to chop some veggies for salads for dinner the next couple nights with a bag of greens and the rest of the jalapeno fried chicken from Monday. well, I was halfway to work and realized I forgot the thermal bag with all the fixins in the fridge. so dinner tonight turned out to be a carnitas burrito from Whole Paycheck. at least I was able to pick up a couple bottles of water, since I also forgot those at home. oh well. $8 - burrito $.39/per - water bottles

I'm roasting chicken drumsticks and thighs with rosemary, garlic and lemon.
Throwing in some diced potatoes, mushrooms and plantains.

Vietnamese chicken pho.
I'm making it from scratch. I threw a pork tenderloin on the BBQ for DS.

can you share that recipe? I need to figure that out on my own, and what to replace any fish sauce with. I know I can't get that out anywhere without a ton of added salt (the common substitution for the "flavor of the fish sauce!") I'm having Shanghai greens and chicken lo mein. there's plenty for tomorrow and then some.

I'm having Shanghai greens and chicken lo mein. there's plenty for tomorrow and then some. I used this recipe as a base. I used leftover chicken, my own chicken stock from the freezer, added some julienned carrots, sliced mushrooms, lemongrass and some red bell peppers. It's a pretty forgiving recipe. You can play with it. www.splendidtable.org/recipes/pho-ga-chicken-noodle-soup

Shish taouk is chicken that spent the night with yoghurt, lots of garlic, lemon, and spices like oregano, allspice, cinnamon and cardamom.
