Do you have a special skill you think someone here may benefit from - or do you have something you'd like to learn more about? According to friends and family (esp my MIL!!!) I have mastered the art of crispy chicken skin. Let me know if you're interested.

BTW - You have an open invitation for a chicken dinner anytime. To get really crispy skin you have to pat the bird dry, dry, dry with a paper towel. Water steams and makes the skin rubbery. Rub some olive oil on the skin and sprinkle liberally with salt and pepper. Besides flavor, the salt will draw additional moisture out as well. I start with the high temp method to render fat from the skin - 20 minutes at 450, then down to 350 until the bird is cooked. Usually takes about 20 minutes a pound. Mmmmm...

I am still an amazing foul shot shooter. Nobody can beat me on the playground or gym. I always hit 8 out of 10 or more.

I am extremely tenacious. If I decide to do something, I just go do it. Once I decide I want to learn a new skill, I go all out. I decided to put a new vanity top on in the bathroom. Never removed one before. Never really did any type of plumbing. Well, by gosh, I watched YouTube. I removed the darn thing, got a new one and installed the faucets properly with plumber's putty, etc. I caulked and hooked everything back up. I even stained and attached some quarter round molding to give it a more finished look. Never did a miter cut before. Of course I had a lot of hiccups along the way. I cannot do a clean miter cut with handsaw whatsoever. So, I brainstormed and was like Duh, just go to the lumber mill and let them cut it. I didn't know there Inside points and outside points on a miter cut. Well, now I know. So, I did that and go that attached. I completed the entire job except I could not get the P trap hooked up properly under the sink. Plumbing LOOKS like it should be easy. I even watched youtube, lol. I wound up paying a plumber $50 to finish that part but I did everything else and it looks great. Dh never knows what I will rip apart next, lol.

You don't have to smoke the cured pork loin (use the loin, not the tenderloin). You can just roast it in the oven at 225 degrees until it gets to the recommended internal temperature. I don't bother to tie the loin before I smoke it. Tieing the loin makes the shape more round, like commercial Canadian bacon, but it dosn't change the flavor/texture. You will see that some parts of the Canadian bacon are darker colored than other parts. This is normal. It's caused by the difference in the muscles that make up the loin. (Part of what makes commercial Canadian bacon so expensive is that they trim away the muscle that makes the darker bacon. I find that I like the flavor of the darker bacon more than I like the lighter bacon.) If you want a sweet, maple flavor, brush the pieces of pork loin with dark maple syrup before roasting. I suppose that you could also inject the loin with dark maple syrup diluted with a bit of water after the loin is roasted. And then let it sit in the refrigerator for a few days so the flavor can distribute in the meat. After smoking and an over night stint in the refrigerator, I slice this into thin slices, seal in a FoodSaver pouch, then freeze. It'll keep in the freezer for about a year. You could also use simple zip bags, but it won't keep as long because air the the zip bag will cause freezer burn. But, you should be good for a couple of months. Or, you could make this in about one pound pieces, freeze, and then slice as you use. In some areas, you can find Morton Tender Quick (a blend of salt and curing agent) in the grocery store, with the salt and spices (look for a dark blue 1 pound paper bag). I expect that outdoor stores, such as Cabella's, Bass Pro Shops, or Gander Mountain, may also carry it. I've ordered it from Amazon, and I think that WalMart's webstore also carrys it. And then there are the web stores that sell sausage making supplies.

Please share - I need some perfection in my life. 2 bottles of POM, 1 bottle of Jose, 1 small bottle of triple sec, can of frozen limeade, limes, ice. You can run it through a blender to make it slushy. Sometimes I use blueberry pomegranate juice. Toss assorted fruit in it for variation.

Dogs like me. I was just watching the Emmy Awards show and I couldn't stop thinking that is too large of an audience for me to comfortably speak in front of. I do make announcements (prepared) at work in front of 30 to 45 people. then answer questions on subjects I don't have all the information on. I'm still ok. But at the Award show, with that many people, and nothing prepared or prepared, I would think I would forget what I wanted to say?

I would like to master drinking this ^^. Would that make me a cannibal? That is my recipe for Margaritas (minus the POM) but I also use Grand Marnier. Best Margaritas ever. I'll have to throw some POM in next time. There was a BOGO recently so I already have the ingredients and it would be much healthier so I can have an extra one.

Back when I played, if I went to the gym to shoot I would shoot free throws at the end. I wouldn't leave the gym until I made 22 of 25 twice in a row. And even back before that, the local newspaper and park department used to sponsor a contest. I won my junior high qualifier and went to the city finals.
Now, I haven't played in a while so it might take a day to get it back, but I'd take that bet. And I KNOW you couldn't have touched me in a dunk contest.
