I've tested these, and they are delish! Slice the potatoes (unpeeled) in thin slices (1/3" or so apart ) ALMOST through - don't complete the slice - stop about 1/4-1/2" away from bottom edge of potato. Place in foil-lined shallow pan or baking dish.

(Place chopsticks on both long sides of the spuds, parallel to each other. When you cut down through the potato, the chopsticks will provide a "stop" that will prevent you from accidently cutting all the way through.)
