it is what came in my CSA box this afternoon, along with some other unidentified green. What the hell do I do with it?
At this point, we've had salads just about every night this week and I still have more greens in the fridge than I know what to do with! At least we got cherries, apricots and (more) carrots too. Oh, and more sprouts! How much more sprouts can 2 people eat?

I don't usually do kohlrabi. You can slice it thin salt and eat raw. Or roast it.
You could pickle the sprouts.

You can also shred the kohlrabi, mix it with a little flour and an egg, and make fritters. Fry them crisp. They're delicious, as is roasted kohlrabi.

Now I just need to figure out what this unidentified green is. It has a strong taste, a little like cabbage. Dark green, tinged with red, curly leaves. Narrow red stems.
Oh, and more garlic scrapes too.....I'm thinking that I'll be trying to make some pesto out of those this weekend.

I've stopped my CSA box for the time being, but I learned about a LOT of new veggies that I had never tried before, and tried some again that I thought I hated. Some I still hate, but others I learned I liked if they were prepared another way. I had kohlrabi once in my box, but it went bad before I got around to using it. I had found a kohlrabi fritter recipe that sounded interesting, but never tried it.

Swiss chard
There is also kale that gets purple-tinged but usually not this time of year.
Swiss chard, to me, is actually a mild green. Kale is more hearty.

I love Kohlrabi - green or purple!
Here's a list of herbs to pair with it: Basil, Chives, Dill, Fennel Seeds, Parsley, Coriander, Mace.
Cut off the leaves and peel it. You can slice it up and eat it raw. It's nice in salads. You can slice it, put it in a microwave safe covered bowl, add a tablespoon of water or so, add an herb or two of your choice and Microwave it till tender. My low wattage microwave takes 3 - 4 minutes. Add a pat of butter and a hit of salt/pepper and enjoy.
You can also make an 'aluminum foil packet' for the grill: you can also slice it up, slice up a sweet onion (or a sliced fennel bulb!) combine in the center of a sheet of heavy duty aluminium foil. Add a hit of olive oil, salt and pepper. Close up the foil packet and put on the grill with your other food(s). Takes about 30 to 40 minutes to cook. YUM! You can do this as a casserole in the oven or even roast this mix in the oven. It cooks quick in the oven. Don't let the alien looking little guys frighten you!

I highly recommend Garlic Scape Pesto. I make a lot of it (I get extra scapes from the farmers market) and freeze it in an ice cube tray. I add this to things like mashed potatos, use it as a spread on bruschetta, add a bit to mayo for a sandwich spread. Love me some garlic scapes.

Yeah....the garlic scrapes are going to be made into pesto and frozen. I found a recipe and wanted to use up them all, so waited since there were going to be more in the box.
The kohlrabi is purple, anyone ever brush it with olive oil and grill it?
Sprouts I'm ok with, but just don't know what to to with 3 large containers.they are kinda meh....

I personally have never grilled it whole. I had it at a BBQ where it was cut into thick round slices, marinated, and put on foil on the grill. It doesn't take much to cook it to tenderness. It was tasty. there was some sort of soy sauce based marinade used. I don't see why you couldn't just brush the slices with olive oil and grill it.
Kohlrabi has a very mild turnip/cabbage kinda flavor. Kinda like how zucchini are mild flavored (compared to other squash).

I LOVE kohlrabi but it is really $$$ here. Mostly I use it in salads like others use cukes; slice or cut into 1/4 inch strips. I have also used it in stir frys.

Peel, slice and salt the kohlrabi. Then try it. If you don't like it, just compost it and prepare yourself for more Swiss chard. If you got some this week, there's a heck of a lot more to come.
Steamed or boiled chard goes well with butter or vinegar or both. It's so darned mild that you can add it to almost anything.
Unfortunately, it won't go bad very quickly. If it's reasonably dry, it won't compost in your crisper and take the decision off your hands.
Chard also goes well in paper bags left on your neighbors' porches. At least that's how I get rid of it.

Me and Dh is on a diet right now. We don't eat bread, potatoes...we are not so strict and cheating sometimes but only in 10%. Kohlrabi are a great substitute in a soup for potatoes.
I am even going to try and make chicken stew with kohlrabi.
Grate it, squize out juice, add green onions, cucumbers, salt, pepper, oil and vinegar - you are going to have an awesome summer salad.
For a swiss chard and endive - cut it and throw on a hot skillet. Cover with a lid. Add chopped tomatoes, cannellini beans and garlic powder. Best side dish for fish.

We always grew kohlrabi in our garden when I was a kid. You can prepare it just like you would mashed turnips or potatoes. I second peeling it, slicing it, and grilling. Yum!

Swiss chard is also excellent in a quiche with onions/leeks and a covering of fresh tomato slices on top . . . just sayin' . . .
And I agree about the kohlrabi - cook it/use it like you would any hard root vegetable.

There is a restaurant that grills the garlic scrapes with olive oil and they are so yummy. A bit like grills asparagus. I can hardly ever find garlic scrapes here (they are called garlic spears locally). But every now and then I can find them at the farmers market.

Last night, I wound up putting the kohlrabi in the salad. LOVE it! I'll be looking for it in the stores now. There's one left, I want to try grilling it after it is brushed with olive oil.
Getting into the swing of receiving a CSA box and getting it used is a bit of a hassle. They do give us a head's up as to what we're going to receive though. The first week's box (actually it was the second week) we got a double dose as we had been on vacation during the first week. It really was too much food and we were scrambling to eat it all. The first week's box had spinach, mixed greens, head lettuce, carrots, garlic scrapes, spring onions, sprouts and apples....all x2.
Last week's box had Ranier cherries (like those lasted any time), apricots, another head of lettuce, more carrots and garlic scrapes, more sprouts, snap peas. After tonight, all that will be left is the scrapes.
I've been given the head's up to expect raspberries this week....lots of them and to make sure that we eat them fast as they will not last. Not sure what else I'll be picking up Thursday.

I'm hoping to get the time over the weekend. Gotta do some shopping tomorrow. It really sounds good and I think mother would like it, too.

Shred kohlrabi like you would a cabbage and make a cole slaw out of it. Delicious. We will do this with a marinated and grilled Chuck roast on Sunday.
