I'm a mix as well
Online I pay house pymt, car ins. cc bill. I write checks for utilities (heat, electric, phone, etc.) A few of the placed have drop boxes behind the Post Office for dropping of payments so that saves me a stamp.
When paying for groceries etc. I use my debit card

I pay everything with electronic bill pay. I used to pay the utilities by cc then pay it off, but my credit union has a great on-line bill pay system and I've now set that up.
We transfer the rent directly into our landlords account at her bank - she wouldn't let us do that for the first couple of years, but relented a few months ago. She usually gets it a couple of days early too!

All of our monthly bills are on auto-pay. The 2 exceptions are our credit cards. Both Citi and Chase send email that statement is ready to view, and they are then paid thru their online "make a payment". Checks are only written to pay for services needed around the house.

I only have one bill which is an auto pay and everything else is by check. While I don't like to write checks I like to have close control of my money and writing the checks helps me be 'honest' about my spending.

We pay 99% of our bills online. I still send property taxes in check form. We used to have our mtg. and 2 car loans on auto pay, and when car loans ended, we discontinued mtg. from autopay and pay it online.
I resisted doing online payments until a couple years ago, but after some research became comfortable... So far haven't had a problem and I love, love love the convenience...

I pay everthing online. The only things I have set up on autopay are the bills paid to my bank. DH has stuff all his stuff through the bank's billpay, but I just haven't sat down to do that yet.

I pay all my utilities and my monthly CC balances online. I still have to use checks for life insurance premiums. I choose to use checks for anything and everything else, charities, lawn services, healthcare, auto repairs etc.,. I would agree I don't necessarily want my credit card info out there for just anyone to snag.

Water and property taxes are paid by check in person. There's a fee to pay online and it's fairly close to not necessitate needing a stamp. The rest are paid electronicly.

I pay everything online through my bank's bill pay except for rent & Salvation Army. I have also stopped any paper billing & get all my bills emailed to me. Wonderful if you happen to be traveling when a bill comes in.
