Oh, and since it's a Friday in Lent, we'll be having cheese pizza for dinner. :-) I made blackened catfish, and DH very wistfully reminded me that cheese pizza is acceptable too. ROFL. I alternate between haddock and cheese pizza or homemade mac n cheese with the latter 2 preferred by my family, LOL. Cheese. It's what Lent was made for. :-)

I had a bean and cheese burrito for lunch, but I won't feed that to DH for dinner because I have to sleep beside him.

I just came home with some (4 or 5 thanks to this thread) cheese from the Italian market...I don't know what all I bought because they are local cheeses. I did get an Asiago and a brie. I also got one with walnuts in it....I am about to make a cheese and cracker tray, pour a glass of wine, settle in and do some homework. aren't you in italy? or am i confusing you with someone else. Yes, I am in Italy. I always fund myself saying "Italian market" because we live near a military base and most of the Americans shop at the Commissary. I don't shop there because the food isn't as good IMHO (the meat looks green and disgusting, the produce has no taste, the rest is pretty much processed crap). I shop on the Italian economy, and whenever I say I bought something most will ask me if I got it at the Commissary. So it has just become a habit to say at the "Italian market".

It's what Lent was made for. :-) We didn't eat ANY animal products for Lent, and that included all dairy. No eggs, either.

I'm just going to have to live vicariously through y'all for a little while. I'm returning to the dairy-free plan I was on before going on vacation. I'm trying to lose some weight, and going completely dairy-free is forcing me to shake up my meal planning. as a result, I won't rely on cheese quite so much for the long run. I haven't been so good since I got home. so, no cheese for me today, and none yesterday until an unexpected quick snack-size meal for dinner yesterday before going out (last-minute change of plans). if I'd had more time, it would have been something else.

I finally bought the chevre cheese I have been wanting and made a strawberry, chevre and spinach wrap today, heaven!!!

(Yay! My quote function works again!) A couple of my tips for the crackers... I put the rack on the top spot to keep the bottoms lighter (normally just leave it in the middle). She shows a silpat type thing, but I didn't get one until last weekend so I haven't tried it yet--I did just fine with an ungreased cookie sheet (although I'm guessing the silpat will help keep the bottoms from getting burned). I like the "kick" the pepper jack cheese gives--just cheddar seems a little more bland. You can also add things like cayanne pepper, tabasco sauce (reduce amount of water), try different cheeses, all kinds of stuff. I leave everything else the same as the recipe. I just made my first batch with a 15 month aged english cheddar. This is probably the biggest mistake of my life. these things are like CRACK! also- i think i made mine too thick, also i used a pizza cutter instead of a pastry wheel... i guess that means I just have to make a new batch tomorrow.

Yeah, I have to limit myself to a handful at a time! I used a knife on my first couple batches, then finally gave in and bought a cheap pizza cutter. Then I found a pastry wheel for a few bucks so I did that. I don't worry about leaving them too thick or following straight lines when cutting, so mine end up all different shapes and sizes. Glad you like them!

I just don't get that! i loved the markets in italy. actually one of my favorite things to do in a foreign country is go to the grocery stores and roam around and look at things! i have no idea why, but it is so entertaining. When on vacation in italy, we always hit up the local markets for fresh bread, cheese, meats and produce!
