So whats for Dinner? We are having a roast pork tenderloin that we picked up for less than $2/lb, marinated for 36 hours in a apricot bourbon barbecue sauce, not sure on the side yet though, probably some roasted potatoes or pasta of some type.

Thawed two steaks yesterday, but decided to stretch it, so we had steak stir fry last night and will have steak burritos tonight. Soaked some beans yesterday, 13 bean--normally for soup, and will also play with that and see what I can come up with, but that might end up being for tomorrow.

Roasted whole chicken, roasted brussels sprouts and roasted garlic mashed potatoes.
Chicken was 1.29/lb. (6lb) Brussels sprouts were 1.69/lb (1.5lb) and potatoes run about 18c lb.
The chicken carcass and some meat will be used to make chicken soup for dinner one night this week. The rest of the leftover chicken meat will make a chicken and penne pasta with asparagus and mushroom dinner another night this week.

I think we are having breakfast for dinner. DH found a recipe for cinnamon roll pancakes he wants to try, so I will probably make that with some real bacon. Yummm bacon. (We usually have turkey bacon for breakfast - real bacon is a nice treat!)

Sauteed Pacific white shrimp in a spicy Asian home-made peanut sauce. Fat Udon noodles with a drizzle of sesame oil. A liberal sprinking of sesame seeds over everything. I think I have some sake in the fridge.

SL hon, your meal sounds dang bland compared to Welts supper.
I'm marinating a boneless chicken breast in maple syrop, fresh apple juice and beer. With a nice salad of spinach, red romaine, slivered almonds and cranberries. And I'm thinking of doing a nice garlic dressing for the salad.

Luckily DH loves to grill year 'round. After digging a path through the snow to the grill, he cooked up some swordfish with mushrooms, grape tomatoes, yellow bell peppers and sugar snap peas.

I turned the beans into refried beans. Not quite the same as pinto beans, but not bad. I plan to start making them at home more often (instead of using canned). Tried the seaweed trick someone suggested (kittensaver maybe?).
ETA: It was kittensaver... only problem was, the store only had roasted seaweed (at Grocery Outlet) sold as a "snack". None of the stores here have dried seaweed. So, not sure if it will help, but it was cheap.

Sorry--none of my functions are working again (quote, etc), but for Rukh...
from kittensaver (I had brought up freezing beans after cooking them): Soak a pound of beans overnight (8 to 24 hours) on the countertop in a brine of 2 quarts of water and 2 tsp salt (1 tsp for every quart of water, stirred or whisked to dissolve). In the morning (or next evening), drain away the soaking liquid and put the beans in a pot with plenty of fresh water. Add a piece of dried seaweed (nori or kombu, from the Asian section of your grocer, it really helps with digestibility), bring to a boil, reduce the heat and simmer until tender, anywhere from 30 to 75 (or more) minutes, depending on the size and the age of the bean. Stop cooking them a little before they're done if you're going to use them in recipes (they will cook again in your soup or stew or whatever). When cooled divide into portions (1 or 2 cups, depending on what you use most for your recipes) and freeze. Done! It's not that hard and you avoid the BPA in cans.
Of course, I remembered I bought the seaweed when the beans were almost done boiling...

yum, vonna! do you have any leftovers? lunch/dinner today is going to be a big pot of chicken fricot. it's supposed to be in the 50s here too, melting all that snow, but I have had about enough of whatever crap has settled in my lungs. time to get rid of it once and for all! Dad concurs, he'd going to swing by later today to pick some up for himself.

Boiled dinner. (Ham, cabbage, potatoes and carrots). I have a big chunk of ham on the bone that needs to be used up. One of my favorite meals ever. Just hope I have an appetite and can stomach it later since I was sick with the stomach flu all day yesterday.

Roasting a turkey breast for dinner with potatoes and salad.
The bones will be picked and turkey stock cooked overnight.
Tomorrow is my day off so I'll take the stock and make stews and maybe a pot pie for those nights when I don't feel like cooking or don't have time.

My former mother-in-law is 94, going on 95 this month, and when my daugher takes her out to lunch, they have litle arguments about who will pay for the lunch, whether they will split, and who gets to leave the tip. Grandma likes it that way, so DD gives her a little debate. That way, Grandma can win, although sometimes she changes her mind after she "wins". She still likes to go out to lunch and walk around Meijers on a good day. DD says she's using her walker more, though, and lets herself be dropped off at the front door of the store instead of walking from the car. Dropping her off used to be an insult, but she's giving in more now that she's in her mid-nineties.
