I had the same experience that was mentioned in the article in terms of food research - when I gave up sugar and salt for awhile my tastebuds recalibrated. Now it takes much less to satisfy me. Unfortunately that means DH has to salt everything I cook.

That is interesting. I've always found it amazing how quickly your tastes can adjust (in either direction). I started making a conscious effort to decrease my sodium intake and within a week, a slice of Digiornio's pizza became unappealingly salty. I started using 2 Splenda instead of 3 in my morning coffee and now if I accidentally take a sip of DH's (he uses 4-5 per cup) it tastes awful. But if I backslide for a few days, my tastebuds are right where they started.

There are some things I just won't eat (mostly sugary things) because I just can't stop.
And I noticed when DH and I were in the store yesterday and he was looking for crunchy granola bars that they're almost all chewy. Of course- chewy goes down faster so you eat more. I was also looking at the number of things that somehow end up "candified"- a brand of energy bar called "Pure Protein" that has marshmallows in it, coffee flavored like cinnamon sugar cookies, graham crackers sandwiched with frosting, etc. No wonder everyone is overweight.

Great article. Interesting to see the regret by former workers in the packaged food industry - the guy who invented Lunchables, the Frito Lay guy, the Coke guy. It said the perfect junk food was the potato chip. No wonder people are fat and getting fatter. Sad.

I cut out added salt to my foods. I had the experience of a bag of Lays having so much salt in it making my mouth sore and my ankles swelled. I avoid potato chips now, if I want something I get a glass of water and a hand full of red seedless grapes.

One new years day our family swore off junk food. The three of us made a decision to eat better. My teenage boy had a moderate but constant case of acne on his back and shoulders. When the pizza, cheetos and cookies disappeared, so did the acne.
There is a young man at my church with a severe case of purplish acne on his face, I just want to take him home and feed him chicken breast and broccoli.
I was looking at pintrest last night. There was a kitchen decorating photo that had large platters arranged on a wall with lettering on each that read "you are what you eat". I think that would be a good reminder for all of us.

I gave up junk food for Lent, which is really something for me. I am thin but was marathon training for 4 months and was hungry all the time and ate chips, Swedish fish, ice cream, etc. to up my calories. I continued that after the marathon training was over and my weekly mileage plummeted. That was not so good. It actually hasn't been as hard as I thought. I did a whole week without really any troubles. Yesterday I did have a bowl of ice cream (Sundays are off days) and you know what, it didn't taste as good as I thought it would. I do "cheat" with a swig of some chocolate milk (with no HFCS) if I need a chocolate fix. Not the worst thing in the world to have for a treat.

The biggest problem with junk food is that it doesn't ever really 'satisfy' - or maybe it's just the blood sugar spikes. I've noticed when I stopped eating fast food/restaurant food that I'd eat less homecooked food and not have that horrible ravenous starving feeling within 3 or 4 hours - the kinda feeling where you can barely think about what you will eat next - just that you need to eat NOW. Now after 3 or 4 hours I'm hungry but I still possess rational thought and can choose something better to eat.
I think that's the problem with 'junk food' or 'fast food' or 'heavily processed food' it's not actually food - it's just empty calories and our brains DON"T count calories.

I had very bad acne all through high school and college. I wasn't a big junk food eater, and all the "helpful" people who suggested I improve my diet made me crazy. I cooked for myself almost always, and didn't eat potato chips or fast food or sweets. I ate a lot of chicken and broccoli. Sometimes food isn't the only source of acne. So, I hope you kept your disapproving looks and judgement to yourself.
I will never forgive the lady who paraded me in front of a bunch of high schoolers and commanded them to scold me if they ever say me doing a whole list of things that were suppose to make acne worse, including touching my own face. Her daughter moved to Europe to get away from her, and I know why - what a fucking bitch.

I do know that not all acne is the same, nor does it have the same causes. I had a horrible case of acne in jr. high and really didn't get completely over it until I went on the pill.
I would never assume I know more about someone's medical condition just by making an observation. I simply noticed an improvement at my house when we ate better.
My older son had acne that only got better with the prescription creams. Although, if he swam in the pool a couple days in a row, the chlorine really seemed to clear it up.

Back to the science of junk food. My husband went to college for engineering. Many of his friends in the chemical engineering program went to work for major food corporations. They need engineers to tell them how much junk they can put in "junk food" and still sell it as food.
Lately, I try to avoid anything in a cellophane package.

Anne- I have to thank you for posting this article. My son eats way to much sugar and I've been trying to get him to cut back and it's been a huge battle. My saying " it's not good for you" just wasn't getting through. I try not to keep junk food in the house, but unfortunately, I was out of town and DH did the grocery shopping. They had boys weekend and it was junk food galore. So he's been sneaking junk. Anyway, last night I was talking to him about this and telling him that the food companies were doing whatever they could to get him to eat more. I let him read parts of the article. He's only 11 so some of it is above his head. But he hated the thought that some one would purposely make it unhealthy. We had a really good discussion last night, and again this morning. He's agreed to stay off refined sugar for four days to see how he feel. This is huge for him. We'll see how it goes, but at least he's on board for now. He went so far as to throw some stuff away and put others in the freezer so he wouldn't be tempted. Out of all my lecturing, I can't believe this is what finally got through to him. Huge Thanks!!!

Agilemom, my kids have also responded well to the books Food Rules and Omnivore's Dilemma for Kids by Michael Polan, and Food Inc and King Corn documentaries.
Supersize me is next on our list.

I'll look into those books, but he knows what he should be eating. He's just in the mentality of "junk food tastes better". He really did not like the fact that it tastes better because they add so much crap, and spend an enormous amount of money to figure out what will make you eat more. I'm going to get him the book "Chew on this" since that seems to be more along the lines of what is getting through to him.

The funny thing is that we talk about marketing all the time and how companies try to convince you that you "need" something. We have a relative that works in a marketing firm and DS said "oh you mean she lies for a living". That made all of us laugh, including her. I just never thought to apply that same concept to food.
