Asparagus is awesome! I love it. Another favorite.
You know what else is good - really good string beans (or green beans, is there a difference?) My grocery store only gets crappy green beans, and then every once in a while - kablam - a great shipment! I can't stop eating them - raw or cooked!
I love Edamane. I even buy the frozen ones and whip them out whenever I want something salty. I do dip them in the salt, so I try to limit it. Although, I've been known to skip the salt part.

oooooh, you just reminded me that I have a couple of those steam bags of edamame in my freezer! I can snack on those this evening. I have fairly low blood pressure so I don't worry too much about my salt intake. Is that bad?

Try to use less than 1/2 teaspoon of salt when eating the edamane. A little salt goes a long way with those.

I actually have always liked the taste of Lima beans, but the texture is not that great. They are dry in the middle. I've always wondered if there was a different way I could prepare them. Are they actually vegetables, or are they legumes or beans? It probably makes a difference, right? I had never even heard of butter beans until about 6 months ago. They have the same texture as Limas, but they are giant! I might bring them into the fold.

Mmm... vegetables.... If you like asparagus, try roasting in the oven with a light drizzle of olive oil, Jane's Krazy salt, and lemon pepper seasoning. I also roast cauliflower. So delicious! Tonight we're having tuna with mashed red skin potatoes (BF's request). I have sweet potatoes I want to make at some point this week. Tomorrow night I'm making whole wheat rigatoni with zucchini, mushrooms, and broccoli. Thursday is shrimp enchiladas with zucchini (I really need to use it up this week, I forgot I bought it!). Friday, we're going out for drinks for BF's sister's birthday, so possibly tomato soup and the sweet potato? I don't know.
How's that for veggie talk? Was it good for you?
