If you're worried about your eggs, put them in a bowl of cold water. if they lay on their side, they're very fresh. If they stand up, they're still good, just not as fresh. If they float, throw them away. I never pay attention to the dates.
ETA: pickled eggs... yummmmm!

I would make a two deep dish quiches and freeze one for later.
While boiling eggs, if they float, they are bad.

Can't help you much. I have chickens and they give me fresh eggs everyday except when they are moulting.
