that expire tomorrow. If I hard boil them, will they still be okay for a short while longer?

What do you mean "expire". I think that is just a best before date. If the eggs have been refrigerated you are probably fine for another week. But if you are worried, yes boiling will get you a bit more time. You could also throw them in a jar of vinegar for easy pickled eggs.

Eggs generally stay good for 3-4 weeks past their "best by" date.

I agree with the above, you still have a good few weeks after the date on the carton. One good thing about using older eggs for hard-boiled eggs is that it makes the shell super easy to peel off (now I want deviled eggs!)

You can make some mini-omelets and wrap them, then use them all week. If I have to leave the house very early, I will fix an omelet the night before and take it with me to go in the morning.
I like Archie's idea of the fritatta. Eggs, potatoes, veggies, meat in any combination. I can eat that hot or cold. ;D

I am having breakfast burritos tomorrow, thanks to InsuranceGal's idea. I've got some tortillas leftover from a Tex-Mex casserole, eggs, milk and seasonings.
Oh, and Insurance gets and eggs-alt for that!

Lol, Later. I'm not the biggest fan of eggs, but my son loves doing all kinds of stuff with food so I'll probably hard boil some and let him throw a few in a jar of pickle juice will that work ok? He loves pickles--he still has a few peanuts he threw in there because he wanted to try them. Oh, and I hate pickles so it's a good thing he likes them, I need the juice for deviled eggs.

Meant to say "just made yesterday." Seriously, eggs are fine for a few weeks, we always use them after the date and have never had a bad experience. Just like with milk--unopened you usually have a week after the date to use it without it going bad.

I agree that the date on eggs is a "sell-by" date. I have eggs in the frige from the same time as Apple and we are using them without problem.

Later, I had an uncle that kept pickled eggs and pickled pig's feet going all the time but I never ate any and he didn't live close enough for us to see him very often. I don't remember my dad (it was his brother) ever mentioning pickled anything. My dad enjoyed some things that definitely weren't for me (fried eggs and brains! tongue!) but he didn't seem to share his brothers love of pickled eggs since I didn't know they existed until that trip to visit.
