While it's kind of a segway, when I used to wait tables in college the most demanding customers were generally the worst tippers (aka the cheapest). The customers that were friendly and easy to please were almost always the most generous. I'm not surprised clients in other industries behave the exact same way.
Hmm, I'd have to disagree here. I served tables for 7 years. I am a demanding customer because I know what I like. But if/when I get great service, I always tip above average and make sure to let management know or write a comment card commending that person. Serving isn't easy, but you don't get to be an ass just because I want a refill.

Serving isn't easy, but you don't get to be an ass just because I want a refill. I waited tables for a while too, and I agree that the laid back customers are usually better tippers. The super demanding customers not only tended to be mediocre tippers, they also eat up a lot more of your time, which means your other customers get worse service. It's really hard not to be an ass when you have somebody at one table demanding all of your attention, who you're pretty sure isn't going to tip worth a damn anyway, while you're also losing tips on your other tables because the demanding customer is a giant time suck. I didn't mind picky customers who knew exactly what they wanted though. They can be a pain in the ass to deal with, but at least they're quick. It's the wishy washy person who wants to sit there looking at the menu for ten minutes while you stand there the whole time answering a bajillion questions about each item. If you're that damn picky about your food go home and cook! The customer may always be right, but while I'm standing there dealing with you, I've got other orders getting cold in the kitchen, or people at other tables complaining that I'm not there to give them a refill, take their order, etc.
