I had left over rice, a single apple (a little past it's prime) 2 snack boxes of "hard" raisins so I made a rice pudding of sorts:
2 cup cooked rice 1/2 cup of raisins (dried hard ones are ok... really really dried ones could soak in some water first - discard water) 1 tsp cinnamon 2 cups dairy milk (or soy milk - the flavored soy milks make this interesting!) 2 tbls sugar 1 tsp vanilla 1/4 tsp nutmeg 1 apple (or pear) peeled, cored,and finely chopped (optional ingredient)
preheat oven to 325 degrees. in a 6 cup baking dish mix rice, raisins, and cinnamon. Add milk, sugar, and vanilla. Gently stir and add the apple and nutmeg. Bake the "pudding" for 15 minutes and stir. Bake for another 45 -50 minutes until the milk is nearly absorbed. Remove from oven. The rice will absorb any remainin liquid. Serve warm or chilled. Makes 4 servings.
This is a "basic" recipe. I like it for breakfast - warmed up in the microwave. I've used regular milk or flavored soy milk. I've used white rice, brown rice, jasmine rice. I've used other types of dried fruit (cherries or cranberries). It always comes out good!

DD1 and I are starting to get deeply into non GMOs and other organic type of foods. This sounds good for breakfast.
