Pfffftt! You're late to the party. :PAlthough I have to say, I could use a glass myself, I have to go out again in a bit to get a manicure. So, no drinking before driving.
I have an interesting sparkling wine chilling....it's a South African chardonnay/pinot noir. I had no idea that there were any wineries in South Africa making sparkling wines, but for $17, I thought I'd try it out.

LOL...I remembered a few things I forgot at the store this morning, and DH stepped out twice for errands...that made me realize I could start in on some wine. I already had my nap...and my, oh MY...such a nice dream I had too! One of "THOSE" kind of dreams!

I don't think I've ever seen a white/red mix, sparkling or otherwise. you've definitely piqued my curiosity! as for me, I've got a glass of cab going - Smoking Loon - while I make my appetizer for tonight's party. not bad, especially for the price. for tonight, I'm bringing 2 bottles of my choice. I know from past parties with this group that whatever I bring tends to go first, and in very short order. I must have good taste or something. anyway, I'll be hiding one bottle just to make sure I get my second glass! it's a cab/carmenere blend by Cono Sur, which I fell in love with at a wine dinner a couple months ago.

I've tried Smoking Loon, before (the wine, you wise guys, not lighting up the bird )!. Always liked it. The South African sparkling is a pale rose color, really pretty, but it is on the drier end of the spectrum, the wine seller told me. He tastes everything he buys, so I took his word for it. It's a tiny little shop, run by a brother and sister, and I am all for buying from the locals.

LOL! I am on my 2nd glass of Zin and getting started on my mac & cheese. ooh...which mac 'n cheese did you decide to make? I am winging it! I tossed in some leftover feta, havarti (which is rather bland, but I picked up lite so that is probably why) provolone and mild cheddar. I am kind of wondering about the bread crumb topping, do I toss the bread crumbs with melted butter before I sprinkle on top, or just sprinkle on top dry? I am using Panko bread crumbs.

There are lots of great wines out there. We have a couple of bottles of Spanish Cava that I'll let you know how they taste.

Cheesy, I hope someone answers about the bread crumbs. I don't ever bake my mac 'n cheese, so I don't use bread crumbs at all. when I do up a whitefish bake, I mix the breadcrumbs or crushed Ritz crackers in butter. don't know if that helps..?

Cheesy - You are supposed to sprinkle them on top (and if I remember correctly it's towards the end of baking so they don't burn). I usually don't add them the rare occasion I make homemade mac and cheese.

Thanks for the bread crumb tips ladies! Actually Baked Mac & Cheese with the bread crumbs is quite delicious! However save some cooking time and go to White Castle. Yummm

I'll be honest, I'm not much of a wine drinker. My wife on the other hand is a bit of a wine snob. She got into wine in GE & knows what to buy. We picked up some wine at Sam's one day that shocked her (it was so good). It's called "Moscato D'Asti" & we paid $11 a bottle for it. It's now her favorite. If you see it you might give it a try. Oh & I'll even drink it (as as I said I'm not much of a wine drinker).

I just spent a week testing macaroni and cheese recipes for a recipe site (I work part-time as a freelance writer). When they publish, I will let you folks know. One of them is a mac and cheese carbonara, with sauteed onions, bacon, cream and cheese.

For mac/cheese, I make a roux with milk, a good amount of thyme, ground black tellicherry pepper, cayenne and McIlhenny's, then add the cheese and drained elbows. For the cheese, I use white Canadian sharp cheddar, danish fontina (texture), a little Maytag blue, and parmesano reggiano. I heat to bubbling, then broil until browned, take it out, add a mix of fresh bread crumbs, finely chopped parsley, minced garlic and more parmesano, then broil to darken.
