All our eggs are brown... Haven't seen a white one in decades. I thought it was because they were different hens.....but could be wrong. Almost all commercial egg producers in the US use Leghorn chickens because they are prolific layers and almost never get broody (wanting to sit on a clutch of eggs). They only lay white eggs.

Do you guys have bird flu?
None of our National flock are free range anymore... they are all in barns.
It has spread pretty rapidly and could be something to do with the increase in prices.

(I'm from a farm family, although the farm was sold before I was born. So my "chicken facts" are based on what my Dad told me.)
I'd always been told egg yolk color is based on how healthy a diet your chickens are fed. Some folks also believe that chickens kept in cages (factory farms, for example), don't get the nice color that chickens allowed to run around a yard can get. But, egg shell color is based on the breed of the chicken.
Makes me wish I WAS on a farm, the way the prices are going up at the grocery store. I may need to start raising chickens, pigs, etc to fill my own needs.

Bird flu is one of the main reasons the price is going up around here. Facilities in Iowa not far from me had every bird wiped out. When you have 10's of thousands packed into one barn disease spreads fast.

Yes I have heard of those.
We have mostly Rhodes Island Reds.... or hybrids with Sussex.
Don't know enough about chickens to know why that is (had to look it up)

They're chocolate flavored. Just kidding, there is no difference. Although "local sourced" eggs tend to have brighter yellow yolks, almost orange, and a deeper flavor. Grocery store eggs are gross after raising my own chickens. Not only are the yolks just pale yellow, but they're almost flat which is so weird to me now. Mine are orange and sit up really high, and yes more flavor. It's like the grocery store ones are "watered down" or something. I buy local during spring and fall markets. And yes there is a big difference! I just wish the egg lady was closer during “off season”. She is 20 miles from me and can’t justify that drive for dozen or so eggs So EB it is between local market stints. I basically have fresh eggs 7 months out of year.

I also read that the drought (lack of water, cost of water) effected Chicken farms - the cost of feeding the chickens. Many farmers cut back on the number of chickens they were raising. That along with Bird Flu is what caused there to be fewer chickens laying eggs and maybe fewer chickens for people to eat as well. Another interesting thing - is that American household egg consumption went up in the recent past - when the health guidelines changed stating that eggs weren't the "totally bad for you" food after all. On a side note: I saw an ad for a breakfast sandwich (at Dunkin, maybe) that was avocado and bacon on toast (there might have been cheese not sure). No egg. I'm guessing lots of fast food places and restaurants are struggling with the cost of eggs. As well as bakeries (the big manufacturers of baked goods) and probably even the "cake mix" companies. I think eggs are in some crackers and even chips... haven't gone down the what's safe to eat/buy if you are vegan in over a decade (and there were lots of foods that had critter in them that you'd never expect from back then...) (I had 2 dozen eggs left over from Christmas - didn't make an additional batch of eggnog and didn't bake 2 more batches of cookies. - I needed to use them - so made a breakfast quiche (and froze most of it) and made french toast (froze lots of servings). to use up the eggs before they "went bad".

I need to start eating more eggs. My hens were on winter break for quite a while and have been kicking it back into gear lately. I wouldn't have thought the extra 30 minutes or so of daylight would make that big of a difference, but I've gone from 0/day for weeks to 1 to 2 a day now so have a couple dozen in the fridge again.

I miss fresh eggs, I had a coworker who had a neighbor with chickens and haven't had fresh eggs since he retired about three years ago now. The shells were so much thicker and the yolks so much brighter, it was amazing. The city where I live doesn't allow people to have chickens, even though it's allowed literally everywhere else.

My neighbor has chickens - last summer she was giving away eggs constantly. Unfortunately, one chicken died, the rest aged and it has been ridiculously cold and dark. She is lucky if she gets 5 eggs per week now. ☹️

I liked the idea of having backyard chickens - my suburb modified the law to allow up to 3 chickens per household. But the expense and amount of modifications I would need to house them year round - along dealing with sick, hurt, elderly, dying chickens was a little more than I wanted to do. I kind of wish there was a neighborhood "chicken co-op" or something along those lines offered by some enterprising person in my neighborhood. I'd sign up for an "egg subscription". I'd even pick them up (so they wouldn't have to be delivered). I wouldn't need them packaged - if they'd let me bring a container to take my eggs home in. . I'm not sure about the economics of this for someone who has chickens. which always gets me to Milo Minderbinder (aka Capitalism) in the book Catch 22:

I know everyone loves the yolks. I've been buying carton egg whites for years. 20 egg whites for about $6 now. Great for omelets or breakfast bakes. The egg substitute that does have egg in it plus chemicals (ugh) are around $5.50. Those are the ones that blew up in the egg cooker in the microwave. When eggs were cheap I'd make a quiche from Martha Stewart's cookbook that we really liked. It was actually an appetizer that was ample enough to freeze some.

Farmers market eggs - large aa went up to 6$ from 5$ a dozen. But that is the only stall that has a long queue from 8 to 1.

I guess I got lucky with a “sale”. 24 count brown eggs for $6.99. I spent over $300 at BJs and I did not fully stock up with the extras. I noticed that all the other shoppers had lighter loads too in their carts at the check out lines.

Almost cheaper to buy new printer with ink included!! I also didn't check eggs when in Sam's the other day. I did see a guy with two large cartons of eggs in his basket - no I'm not a basket nazi police like some. He just was just standing beside me contemplating the same purchase! I remember they were in a brown container though LOL

MPL - a bit off topic (a lot actually). Your avatar - I'm a big fan of possums. I often see them late evening on my patio finishing off the cat food left by the backyard cats. This past early summer, and for the first time ever, I saw a momma possum eating the cat food while carrying about six or seven babies hanging onto her back and sides. Tried to take a photo of them but I would have needed to step outside to do so which would have scared her off. Pretty neat scene. I love possums. So many hate them and it makes me sad that people aim for them with cars and shoot trap/shoot them regularly. They are so harmless. They don't carry rabies, eat ticks and mosquitoes, aren't destructive and won't bite unless they are completely cornered and have no choice. Their biggest defense is looking scary when they hiss! My dad rescued some babies off a mom that got hit by a car and they would follow him around the shop while he was working. They absolutely LOVE cat food.
I follow Facebook page of a woman that rescues them and is trying to help their reputation a little. (Gilbert the Opossum if anyone is interested)

Almost cheaper to buy new printer with ink included!! LOL We spent extra to buy the printer that you can refill with a bottle of liquid. We did it because my husband was so mad at the price of ink. To recoup the extra cost we would need to buy 4 or 5 refills. But, after using it for a bit (and not liking the functionality) it stopped working. The tubes that connect the ink wells to the printer heads are just empty. The nearest authorized repair shop is 2 hours away, and god only knows how much it will cost to fix it. I told my husband to somehow get it fixed, or I am just going to go buy the cheapest printer I can find.

I just paid $4.69 for a dozen at our local grocery chain. DH and I finish a dozen in about 2 weeks. Yes it is the highest I have paid to date, but I think the price of butter is worse!

For egg-free bread, replace the egg with 1 “flax egg.” To make one flax egg, combine 1 tablespoon of flaxseed meal and 2 ½ tablespoons of water. Let the mixture sit for 5 minutes before using.

Now following Gilbert. Thanks. So, facebook just suggested Gilbert the Opossum to me... along with a bunch of other Opossum themed merchandise and pages. Which is weird because I haven't been searching "Opossums" or anything vaguely related to them. Even though I love the prehistoric "ugly cute" little critters.

I was in Walmart today -- prices ranged from $3.29 for a dozen medium to just over $6 for organic cage free dozen. They had 24, 48, 18, and 6 egg packs as well. Still the cheapest I have seen so far. Very popular item among shoppers this morning.

Price on eggs jumping around here. I paid $7.?? for 18 count of EB eggs a while back. That was up from $6.49. Went the other day and EB 18 count was back down to $6.49. Not many takers for $7 eggs I guess. And prices vary from Walmart to Walmart. And we have a WM on every other corner here. Super WM, different size WM Neighborhood stores and so on. Got two more months till Market and egg lady. I hope she is gonna be there. Off to find website/FB and see if any news!
