Monday night black bean chicken. I'll serve it over rice. Bonus it will produce leftovers for Wednesday's lunch. I'm so happy you like this, you keep making it. π I'm curious how much you branch out with it? I've topped curly pasta, made quesadillas, and used it for omelet filler. it's seriously so versatile.!

We have a huge quantity of rice on hand so it's usually rice or I often eat the leftovers plain. I do like freezing it in portion sizes to be a meal later when I have no clue. I often use it in lieu of soup on cold days. I can't eat most canned soup and DH can and will.
It was a nice easy meal to ease back into reality. And it used up the rest of the chicken I wasn't super happy with. I know most chicken breasts says up to x% broth/water. I normally buy all of mine at Sam's Club but supply chain struggles caused me to buy some at a local grocery store. That stuff had way more water in it.
Wednesday night is unstuffed peppers. Still cold here and I'm trying to use up beef from the freezer. My family has placed a beef order so we need to make room for half a beef. I think it's going to be like 400 pounds worth for my share. Eek!!!

I found myself Cape side this afternoon, so I hit up the fish market. I'm grilling a half swordfish steak and roasting a zucchini tonight. I can handle washing a grill pan and cutting board. π€£

I made fajitas tonight, hubs and DD love them. Bought fresh veggies today so was very good.
Tomorrow having fresh greens beans cooked with bacon and some small potatoes, fixed it tonight. Having corn on the cob and ham with it tomorrow night.
The next night the rest of the fajitas.

last night was a fun night out for a once a year charity night. we started with a round of drinks and a white pizza appetizer at the hotel bar around 6, $60 including tip. after the charity event, we wandered in search if a steak for my friend C. we ended up at Smith & Wollensky where she got her filet mignon, I has a Caesar salad, and we both picked at roasted Brussels and a burrata appetizer. oh, and martinis. she wouldn't let me throw in for the bill with her $60 filet, so I'm not sure what the final tab was. π€·ββοΈ obv not an everyday thing!!
I just picked up Chinese takeout when I picked up the pups. PFR with bean sprouts, chicken teriyaki, baby bok choy in garlic sauce. this will last me til I leave on Wed am. including tip and the beverage I ordered while I waited, $43.
ETA: I found a full container of cremini mushrooms in the fridge last night. I pulled a roasted garlic chicken sausage link from the freezer, and I'll make stuffing for those mushrooms later today. I can make dinner out of that tonight, and quick lunches the next 2 days with the leftover stuffing.

Thursday night I was craving queso dip. I made that and we snacked on it during the draft. I had all the ingredients on hand and it used up another pound of hamburger.
Friday night we went to a baseball game. 2 orders of chicken tenders and fries for DH and our nephew and cheese fries for me were $28 after my discount. Beer was separate lol. I have become very leary of chicken tenders at places that don't disclose allergen information. Lots of them include soy protein for some crazy reason and that makes them a no go for me.
Saturday night grilling hot dogs while it's 70 and sunny. I need to pick up a package of buns and will come up with some side vegetables.

Last night we had leftover (parmesan and pork rind) breaded eggplant fries with pseudo chef salads consisting of camping leftovers. Tonight: Breaded shrimp with sauteed shrimp served on top of a bed of baby spinach, yellow squash and bok choy Tues: Beef tostadas using mini low carb tortillas, riced cauliflower Wed: Ground pork Thai lettuce wraps, leftover riced caul Thurs: Doctored up Caulipower pizza, leftover veggies Fri: Take out from? Sat: Something easy as we'll be out volunteering all day Sun: Grill/smoke something... pork maybe....?

Sunday night's dinner ended up being the last of the queso dip.
Monday night I oven roasted a huge sheet pan of vegetables seasoned with Italian seasoning and added chicken sausage. The veggies were carrots, green beans, zucchini, baby potatoes, and bell pepper. Aldi had no broccoli Sunday morning so I need to look elsewhere. Estimated costs $12?
This week's goals are lots of veggies and continuing to use up freezer proteins.

last night, I discovered the full package of mushrooms wasn't in the best shape. I stuffed the best ones and pitched the rest. it was a nice idea while it lasted. tonight, I'll be boiling noodles to go with some baby bok choy in garlic sauce. I'll reheat the last 2 chicken teriyaki skewers as well. there's still bok choy and pork fried rice left for tomorrow.

Wednesday night I made a Tex Mexican chicken skillet. I'm all out of canned black beans so I made my own using the instant pot. I got the equivalent of 3.5 cans out of that bag and I bought it for $0.25 last year. I think it was a brand the grocery store didn't normally stock that they ordered during covid and then marked down to get rid of. I served it over a quinoa/brown rice mix. Estimated costs $9.
Thursday will be beef and black bean tacos. Estimated costs $6. It's Cinco de Mayo themed and quick. We have a play so dinner needs to be fast.
Friday will either be leftovers or something at the baseball game. It's looking like the game might be rained out.

It was a Stromboli I found at the deli in Food Lion yesterday. OMG, I found something that is easy that DH actually likes. It had ham, salami, pepperoni & at least 2 cheeses in it & it was GOOD! And there is enough left for another meal too. That & a salad filled us up. And there is carrot cake with cream cheese icing that is pretty good too...the cake is from a box mix so not as good as scratch, but it's still not bad.

Saturday night we had pizza.
Sunday night DH's brother hosted for mother's day. We contributed a lemon raspberry cake and green beans. The cake was very popular.
Monday night I thought we were doing risotto. DH moved that to Tuesday night and picked up subs.
I need to figure out the rest of the week. I need to get down to the freezer and start making room. The half beef is ready so I need to find room for 400 pounds of beef.

I got home from almost a week away, about an hour ago. tonight is the can of soup simmering on the stove rn, and last night was a strawberry shortcake ice cream treat from the Tom Thumb gas station on my way back to Atlanta from the FL panhandle. π€£
I started a shopping list tonight with essential perishables, and I'll figure out the rest in the morning from the online flyer. it will include a lot of vegetables and lean proteins, bc this weekend was a whole lot of liquid calories and not a lot of food. π as in, I'm not even hungry for this soup, bc I had airplane snacks this morning and that ice cream last night...so I'm good. π€¦ββοΈ
will post back when I figure out the grocery list for the week π

Buffalo chicken salad uth blue cheese dressing and crumble blue cheese. First had it several weeks ago when I went out for dinner on Easter Sunday. Now my go-to meal when I don't feel like doing a lot of cooking.

Not sure what to make tonight. Body was less than happy with me today. Culprit might be some undercooked ground pork or maybe my mayo is bad? How do you tell if your mayo is bad?

no idea on the mayo, sorry. it always looks like it's bad, to me anyway. I think chicken piccata tonight. I saved one BSCB from the package I bought this morning that is now in the IP to shred for pups. I hadn't planned it that way, but I apparently need to defrost my fridge this week as it is hovering around 50 degrees. I might also be posting about "how do you know if X has gone bad" over the next couple days. also - ISO recommendations for a dorm/beer fridge. I can use it while I defrost this one, and then it can live in the basement near the bar. TIA. so, chicken piccata. costs: $2 - BSCB $.69 - lemon $1 - chicken stock can $.50 - pasta ?? garlic, flour, butter, fresh parsley, spices cooked chicken will hold alright as I keep hitting the "power cool" and leaving the door closed as much as possible. so I can have the other portion tomorrow and hopefully not get sick.

chiver78, I've seen posts on the local NextDoor from people trying to offload their garage fridges for little to no money, as well as some smaller dorm size ones as well so maybe try there. Another thing I saw on NextDoor was when I went looking for recommendation for someone to come fix our Samsung fridge when it wouldn't hold temp couple of years ago. I found out that there were a lot of people who were having problems with their Samsung fridges and not too many options for fixing them as no one wanted to. What we noticed was that there was some ice in the back of the fridge where the vents are so we pugged it out and thawed, that worked. Good luck!

Honestly, I would throw it out, but I don't eat it much, anyway. If your pork was undercooked, I'm sure it could've made you sick. I'd throw that out, too. Not worth getting sick.

I like the Buffalo chicken salad idea. That was one of my favorite salads at the work cafeteria. I should replicate that. Hopefully salad quality has improved.

Good luck! thanks, that's basically what Ken and I found this afternoon (thanks, Ken!) that there's some drain add-on part I should install, but I need to defrost it first. *I* can get by on shelf-stable and frozen shit for a few days, but my dogs eat fresh. I just ran over to Home Depot and picked up a 2.6cu ft Magic Chef fridge for $120. it can easily be the beer fridge later. I thought about searching the local groups, but I'm still wiped out from my sunburn. I just wanted it done. a 2.6, I could lift by myself and not have to worry about awkward packaging banging off my sunburned shins. oh, and my fridge is a Samsung, too. love them for electronics. they should stay in their lane as far as everything else.

You can just use your hair dryer to defrost any small buildup of ice and then your fridge should work fine
