tonight was supposed to be the last hurrah for my friend's food truck up the street (for now...) except it's been raining sideways all day. so, that's tomorrow night now.
tonight, since I haven't gone out to shop with a dead car battery this week, I pulled a Bertolli meal from the freezer and added some shredded chicken and fresh baby spinach to make the pasta ratio more appropriate. there's leftovers, but I won't be mad if I don't finish them. 🤷♀️

Thursday night I did homemade hamburger helper. We needed something quick before seeing a play. Warm was also a bonus since it was gross and rainy all day.
Friday night cheese tortellini mixed with jarred vodka sauce. Maybe $5-6?
Saturday night leftovers and snacks.
Sunday I pan seared the last package of amazing pork chops. I made a mushroom sauce to go over them and served with yellow rice and squash. I wanted zucchini to add color but struck out at 2 local grocery stores so squash it was. Estimated costs $10? Two servings left for later.

Wow life has been busy! ~Last Saturday for lunch I used a Chick-Fil-A gift card from Christmas on a chicken salad. It was just okay. ~Saturday supper: The neighbor's had a taco bar for their teen's BD party, so I cooked the following Sunday: ~Sunday, I baked the doctored-up Cauliflower pizza I was going to do Saturday and served it with air fried asparagus ~Last night I air fried cheeseburgers served in iceberg lettuce buns, and we ate them with Birds Eye lightly sauced mixed veggies ~Tonight: Air fried parmesan and pork rind breaded cod with sauteed baby spinach and broccoli slaw ~Wed: Low Carb Satay Beef
~Thurs: Not sure yet ~Fri: Finally want to get to the two leftover pre-made chicken tenders that were a part of a January WM substitute, with a few mozzarella sticks and a veggie. ~Sat: Something on the road ~Sun: Something grilled with Air Fryer Crispy Artichokes on the side Have a fantastic rest of the week, everyone.

Tonight is the remainder of stir fry with soba noodles.
Tomorrow is going to be cabbage soup.
Going to have to re-arrange the freezer and see what type of tetrus configuration so there is room. I also need to chop veggies for roasted sides.
Seafood is sounding good and I know I have cod, shrimp or salmon in there so that is going on the list. Roast some veggies and couscous for a good meal this week sometime.

I'm trying to break the rut I've been in, so I did a few things different this weekend and will continue to shake things up this week.
Monday - stuffed mushrooms (garlic chicken sausage, breadcrumbs, parsley, parmesan cheese stuffing), there's leftover stuffing for another side/small meal. Tuesday - Acadian chicken soup, a half batch. I'll pick at the pot the rest of the week. Wednesday - black peppercorn marinated pork chop, roasted Brussels and tiny red potatoes. I found the chop in the freezer this morning and pulled to thaw. Thurs - the food truck is up the street. wood fired pizza of some sort.
past that, idk.

Monday night we picked up pizza on the way home from baseball opening day. Food options in the club level were not awesome so we were starving. Costs $28 with tip. There's a few slices left. DH will eat for lunch one day.
Tuesday night grilled sirloin steaks. It's finally nice weather. I'm undecided on sides, I'll figure something out. Perhaps roasted squash and sweet potato. That'll use up those vegetables hanging around.
We made a plan for Wednesday and Thursday but I'm not sure. I don't think we will need all those meals. Friday we are headed out of town for Easter.

DD had leftover spaghetti from last night. Talked her out of barbecued meatballs and made spaghetti and meatballs instead, it was really good.
She had leftovers tonight, hubs and I had BLT's, found some large slicing tomatoes for $1.50 a pound, they were good. Only bought 2 of them.
Not sure tomorrow night, maybe go out to eat or order a pizza.

Tuesday night's veggies ended up being grilled. I'm rethinking buying a non stick grill basket. I tossed the veggies in some olive oil and now I've got sticky patches I can't get clean. None of the tips I've dug up from Google are working.
Wednesday night taco salads. Estimated costs $6.
Thursday night leftovers pork chops.
Friday night the last portion of cheese tortellini in red sauce. Maybe $6-7? I bought a big package of cheese tortellini at Sam's Club at the beginning of Lent and separated it into 4 portions.
Saturday not sure but probably out somewhere.
Sunday I'm bringing squash casserole, rolls, brownies and cake pops to dinner at my SIL's. She's doing the main meal. Maybe $25?

Best cleaning agent I have used on grease stains is Comet with Dish soap mixed in.

Easy Off forgives a lot of sins. Definitely use it outside, though. you'll be high as a kite in short order if you don't.

cold, damp day here today. warm sounds good, I'm thinking Instant Pot risotto tonight. that will be good for clearing out the fridge, too.

Okay, taxes are done and filed. I should be regaining some free time. This week: Sun: DH cooked a ham steak on the Traeger, I made air fryer French fries for him, and served 3 different vegetables on the side. Mon: Air fried salmon, sauteed baby spinach, green beans Tues and Wed: Not sure as I'll be out on business Thurs: Something simple Fri: Kielbasa, green beans, baked beans Sat: Steak, beans, veggie Sun: Not sure yet Have a fantastic rest of the week, everyone.

I swear cube steak never turns out tender when I cook it. My family buys whole cows and has them processed so I keep getting packages of it. I cooked it in the instant pot tonight. It's not bad I just feel it could be more tender.
I loaded it up with vegetables. I used baby potatoes, carrots, mushrooms, green beans and onion. Anyway I used 2 packages tonight and I only have 1 left.
I also roasted a rump roast and will slice that thin and use it on the slider buns we were given on Sunday. I'm trying to use up the remaining beef cuts in the freezer.
Wednesday I think will be leftovers.

it dried out and warmed up some when the sun came out yesterday afternoon. I ended up making a big green salad with a diced spicy chicken patty. risotto will be tonight, with some baked cod I picked up while I was out today. the piece of cod was bigger than I'd asked for, so the pups will be getting spoiled in the morning. risotto will be broiled asparagus and mushroom, maybe with spinach.
tomorrow, the pizza truck is back up the street.

Baked some parmesan crusted chicken and vegetables for Wednesday's dinner. Vegetables were some baby potatoes, green beans and zucchini.
Thursday is definitely leftovers. I decided to cook the chicken tonight so the packaging could go out on trash night instead of hanging around for a week. It's going to hopefully be warmer too so I'd rather use the oven while it's cooler.

For hubs chili, me some catfish, have to talk with DD and see what she wants, she doesn't really like either of those. I like chili too, but not going to eat it this time.
I could eat fish 3 or more times a week. I'm thinking of a salad for DD and some pasta, she loves it.
I would rather cook 2 or 3 things the family likes then a meal noone wants.

pasta and salad sounds like a good plan. yesterday midday, I had a bowl of salad greens with some shredded parmesan cheese and dressing. the bag of greens was the last of what I'd chopped for Sunday's salad that I brought to my sister's for dinner. I forgot how much I enjoy just that simple thing as a quick bite. my eating habits change so much from summer to winter, it's mind boggling to me. in the winter, I would cook off a can of soup/packet of cheap ramen/reheat a bowl of soup from a weekend pot. summer? give me a big Cara Cara orange or a bowl of dressed greens. anyway, the point of my rambling here, is that I picked up iceberg, romaine, and baby spinach today. I haven't seen radicchio in awhile, which is disappointing. but, I'll chop the lettuces and mix a container of salad greens to keep in the fridge now that it's warming up.

It is hard for me to eat salads, especially meal sized ones when it's so cold outside. I just want warm food. Also this past winter seemed particularly awful for bad quality produce.
Thursday is pick your leftovers for dinner.
Friday we are going out for dinner with DH's parents and uncle.

I'm not cooking this weekend, except to chop raw veggies for the pups. woo! I ordered two pizzas tonight specifically to have leftovers, and then the guys told me they will be back on Saturday. 🤣
I'm bent on making major progress in purging shit I don’t need from my basement this weekend. not having to stop and cook, at all, is a big help! lol...

this week is supposed to be crappy as well, starting tomorrow. my "big cook" for the week is a pot of minestrone soup I just made tonight. it's a knockoff Olive Garden recipe that I make, except mine isn't a salt lick. lol...
outings this week - Thursday the pups and I will be eating out at the sports bar patio before they go home with M for a couple nights. Friday night, I'll be in Boston for a charity event.
for the rest of the week - I picked up a ~4lb package of BSCB. whether I use it all for the pups, or I use one for myself, who knows.

~Saturday we ended up eating salmon since the steaks weren't quite thawed. Sauteed zuch and asparagus were served underneath. ~Sunday we ate the T-bone steaks along with shrimp stuffed portobellos and asparagus with bacon. ~Last night I air fried BBQ boneless ribs and served them with baby spinach, asparagus, and Birds Eye lentil based mac and cheese. ~Tonight will be shrimp tacos in iceberg "shells" with a shrimp caprese salad and eggplant fries ~Wed: Cobb salads with zucchini fritters ~Thurs: Take out from? ~Fri: Kielbasa, shrimp and veggie skillet ~Sat: Lemon pepper air fryer chicken strips, veggie ~Sun: Grill/smoke something on the Traeger

well, I got an update about my new dishwasher, sort of. there's 28 units of what I ordered, expected to be delivered to the warehouse while I'm on vacation next week. I should be getting one of those 28, based on how long ago I ordered - and paid for - mine. why they don't have a list of orders on back order so they can tell me exactly is beyond me, but whatever. so, my dad came down this morning to disconnect and pull out the existing one, so it can go with the delivery guys when they bring me the new one. what that means for now? I lost my handy 'drying rack' and now have a bath towel spread out on my counter to hold everything I washed from yesterday. I think tonight, I'm going to make a skillet chicken and rice* dish that will last me a few days with paper plates, to minimize dishes. I'm over not having a dishwasher! *I'll use up: 1 XL BSCB, sauteed and shredded 1 box Goya yellow rice 1 onion 1 jalapeno garlic frozen peas chicken broth
