I made chicken tetrazinni for lunch today. One serving is in the fridge for tomorrow, and four are in the freezer. Supper was a piece of cheese toast. I don't even know what chicken tetrazzini is, but this was going around for awhile, and every time I hear "chicken tetrazzini" I can only think of this lady. 90 seconds of Chicken Tetrazzini! I'm sorry, but I didn't understand a word she said except for chicken tetrazzini.

takeout is sounding good for tonight. I do not feel like cooking. idk, we shall see.
ETA: scratch that, I needed to make rice and chop veggies for the pups. I ended up chopping a little extra veggie and piling it onto a frozen pizza. whatever. is it Friday yet?

Baked chicken quarters (the leg and thigh) and sautéed veggies. I had a yellow pepper with ranch dip as a snack.

Last night I made "Marry Me Chicken", which apparently is a thing, and if you Google it, there are dozens of recipes out there. I had never heard of it. Hours after dinner was over, my family was still telling me how much they liked it.
I should stop assuming my family won't like the new recipe I picked out - because the more I think they will not like it, the more likely it will be a family favorite that I am asked to make often.

this week went off the rails when I used the turkey for something other than piccata on Monday. I've also ended up eating my large meal for lunch this week, oops. today, this was a huge chicken Caesar salad from the local Greek pizza shop ($10) and dinner was the last slice of leftover frozen pizza in the fridge.
tomorrow lunch will make chicken piccata from the BSCB I pulled from the freezer the other night. the lemons still need to be used. 🤷♀️. dinner could be a can of soup, a turkey burger, or some other small thing.

Thursday night was leftovers. Plenty of those in the fridge.
I'm undecided on Friday. Either I'm making a teriyaki shrimp stir fry or ordering crab cakes. The broccoli and zucchini in my fridge say I should cook at home.

Hi everyone! Last night: We grilled a doctored up Caulipower pizza and served it with artichoke dip from the Crock Pot, pork rinds, and sauteed portobello mushrooms. Have a wonderful week. Hey Iggy - I bought and cooked one of these and the pizza was really wet on the bottom. I need to use a pizza pan when cooking was that the issue? Do you cook it differently? Because I could not even attempt to have leftovers...they were just too flimsy and sticky with moisture for me to eat. Snap~

We put ours on a sheet pan covered in foil then put it in our Trager. True, the crust is more tender than a traditional pizza. Have you tried making Fathead crust pizza? Those tend to come out more "crispy" if you will and it's my favorite. There are also recipes out there for homemade cauliflower crust pizza as well as chicken crust pizza.

I took yesterday off and had some free time. Here are planned meals through the next week and a half: Mon: College basketball game munchies, aka cleaning out holiday and Super Bowl leftovers from the fridge and freezer: Taquitos, mini quiche, Little Smokies wrapped in crescent roll dough Taco Tues: Spicy ground beef in low carb tortillas, riced cauliflower Wed: Turkey, bacon and tomato in low carb tortillas, veggie Fri: Take out from? Sun: Grilled ground pork and beef patties, veggie Mon: Leftover peach pork from the freezer Taco Tues: ? Wed: Canned chicken with frozen stir fry veggies, riced cauliflower

I started a chicken recipe in the Ninja. It calls for 1 pound of thin sliced chicken. I cut 4 lbs of chicken breasts in half and browned them with mayo instead of flour like recipe recommended. The recipe says the 1 pound thin sliced is done in 15 minutes because partially browned. I'm thinking that 4 lbs will take a lot longer.
I didn't have quinoa so I'll substitute minute rice at the end. I have one half cup rice. Ugh. If we want more rice I have some already prepared rice in a packet. One of the add ins is artichoke hearts. So I'll put those in instead of asparagus. I also did not have white wine so I put another cup of chicken bouillon in.
Note to self. When H. brings in a big package of chicken, separate it. The freezer was so full this last time, I worked my way in to it.
I'll freeze over half of this recipe.
Just thought of this. When is Uncle Ben's Rice going to get a different look like Mrs. Butterworths has.

ETA: takeout another night. I just threw a chopped broccoli crown in the oven, I'll stir that into a box of Kraft dinner and call it good. broccoli needed to be used. 🤷♀️

Artemis Windsong, I separate bulk packages of ground beef and ground pork, chicken breasts and drumsticks. Portioning out the prortiens makes it easier to thaw when preparing a recipe.

I did a Sam's Club run today and have 2 big packages of chicken breasts to split. I need to instant pot some to make portions of shredded chicken.
DH cooked, teriyaki shrimp stir fry with broccoli and zucchini.

A long, long time ago, probably in an age before dinosaurs, I found a recipe for a chicken-bacon-ranch casserole. A couple of weeks ago I got around to printing it. Already had one of the last two packages of chicken in the freezer along with part of a package of bacon. Yesterday got the rest of the ingredients. Today I'm finally going to make it.
There's something that's off about the recipe. It calls for a 16 oz package of rotini, says to bake it in a 9x9 baking dish, and serves four. What? A one-pound package of rotini serves four? Two ounces uncooked is equal to one serving. What? And 16 oz is going to fit in a 9x9 baking dish?
I'm going to use a 9x13 dish and hope that the leftovers freeze well. There will be leftovers because only DD and I will be around to eat it, and DD is usually a ? anyway.

I just took out a 2 oz. filet steak that I purchased from QVC a few months a go. They are so tender and delicious. Adding to it will be a baked potato with sour cream. Not sure if I find another goodie to add, but will take a look. Blonde Granny have you ever tried the No Name Petite steaks? They are a perfect size and I have had really good luck with them

I had grand plans for a tuna melt on sourdough tonight, and then a very disappointing grocery quick grab tuna sandwich at lunch killed that craving. 👎 I ended up baking a spicy chicken patty and chopping up a taco salad.
