I thawed out cheese stuffed bacon wrapped chicken yesterday and will add my homemake potato casserole to go along with it. Looking forward for tonight.

grocery store isn't happening til tomorrow. instead, I hit up the fish market and picked up a beautiful piece of salmon that I will split with the golden. I'm debating how I want to prep it for myself. I could roast some tiny potatoes and veggies, or maybe make a scampi sauce for it over linguine. decisions, decisions. ETA: seeking suggestions/votes for tomorrow, I'm leaving the fish til then. I'm over today and not that hungry. I'll probably heat up a can of soup. Next time you get salmon, try this.... Marinate salmon in oven-proof dish, using soy sauce, garlic, ginger and real maple syrup. Marinate only 20 minutes, as any longer will cause fish to break down. Slide the whole thing in the oven until salmon is done. Easy-peasy and incredibly delicious.

I ended up freezing the turkey breast tenderloin and I reverted back to a college staple. I swiped some chicken from the 3 rotisserie birds I shredded for the dogs/freezer. chopped some broccoli and added both to a packet of Lipton rice. there's leftovers, but I may or may not actually eat them. Lipton rice and Kraft dinner are there for nights when I really don't wanna adult. tonight qualifies. 🍸

They are closing the mall near my parent's house. We went over to see what Macy's was clearing out and then walked around the empty mall. And then we smell it - Auntie Anne's Pretzels. So, I had pretzels. 😄

I would really, really like polenta with sausage, peppers and onions. Or maybe meatloaf with mac & cheese. How likely is either one? Only if I make it myself. Polenta sounds really good, but I'd have to forego the sausage, peppers and onions because I don't have any. Come to think of it, I could make the corn meal and divide it up before adding the ingredients to make some into a dinner meal and keep the rest of it plain to slice up in the morning and have fried corn meal mush for breakfast. Maybe country fried steak with biscuits and gravy would be more to my liking. It's a rainy and overcast day and not supposed to get past 55. How about comfort food of pork chops baked with apples and dressing? I don't have any cube steak for country fried steak and don't have any pork chops or apples. Maybe it would be simpler to just open a can of soup. ETA: Or how about Swiss steak with parslied potatoes? Don't have a round steak or potatoes, either

takeout late lunch was just small enough of a salad that it wasn't worth keeping what I didn't finish...so I ended up finishing it. ☺ lunch special Caesar salad with meatballs on the side. $17 plus tip.
if I get hungry later, I'll nuke last night's leftovers. given that I already want to just go to bed, this is unlikely to be an issue.

Ordered take out for my grandma. Pizza, salad, spaghetti and strawberry lemon cake. They'll be leftovers for another meal.
No cake, apparently it was sold out and whoever took my order didn't know.

Supper was an egg salad sandwich and just in the nick of time because DD came over with chicken soup from Chick-fil-A. She brought me some about a month ago, and it was good. This is now the fourth time she's brought it over, and I'm tired of it. It's in the fridge in case I feel like eating it tomorrow. Doubt it.

I pulled the turkey back out of the freezer, will use it tomorrow. this afternoon, I'm going to throw together a batch of veggie fried rice for quick pull lunches. that will use up some older stuff.
current plans for the next few days - tonight: mushroom ravioli with spinach, mushroom and roasted asparagus in a creamy sauce Monday: turkey piccata Tuesday: Taco Tuesday, might be enchiladas Wed: leftover piccata

Tonight is my new favorite salad again- cucumbers, grape tomatoes, cottage chees, a small cup of guacamole and everything bagel seasoning. It's so delicious.

We had a couple of pork cutlets, some mashed potatoes, gravy, green beans, and biscuits. Hubs was so hungry, he ate a bunch. DD and I not so much.

Hi everyone! Last night: We grilled a doctored up Caulipower pizza and served it with artichoke dip from the Crock Pot, pork rinds, and sauteed portobello mushrooms. Tonight: Turkey and bacon quesadillas w/ a side of flounder (cleaning out the freezer!), and avocado Tues: DH will make spaghetti sauce, and I'll have mine on a bed of baby spinach Wed: Shrimp three ways: breaded and baked, shrimp cocktail, and sauteed on top of a bed of baby spinach, asparagus on the side Thurs: Leftover spaghetti? Fri: Take out from? Sat: ? with turnip fries Sun: Beer can chicken (it's been awhile!), veggie fries from freezer Have a wonderful week.

Tonight is baked chicken thighs with stove top and mixed veggies.
I have spaghetti sauce for tomorrow and thurs dinner.
Friday I am thinking a baked potato.
Saturday I have a whole chicken for roasting but I am going to attempt spatchcocking it and roasting it that way with veggies. I will than make some enchilada's to freeze for later.
