I had a bagel with smoked salmon and cream cheese. I made mashed potatoes and a pork tenderloin for DS. That's always a big hit.

Tonight was fajitas. Sauteed the bell peppers and onions in the avocado oil, also the meat. I bought 2 fillets and cut thin, marinated in some sauce from Ortega, was really good. Had shredded Mexican cheese, lettuce, tomatoes, green onions, all diced. Then a couple of avocados, peeled and sliced. Hubs and DD had flour toritllas, the big ones, and I had the small corn ones, I really like those. It was enjoyed by all!

Wednesday night I made a chicken parmesan pasta bake. Served with garlic bread. Estimated costs $10.
Plenty of leftovers for Thursday when we are busy.

Last night was pork loin and green beans. Tonight will likely be gnocci. I need to get some meat out of the freezer or buy some at the store today. I forgot to get anything out yesterday.

Tonight will be chicken cordon bleu from the Fresh Market and baked potato with sour cream. Maybe a few peas and green beans as another side dish.
I'm still in the mode of getting my freezer empty before May when it starts to heat up and then I turn the freezer in the garage off till fall.

I made some of the best pinto bean soup I've made in ages. I had a ham bone that I cooked yesterday in the instant pot. Then soaked beans overnight. This morning put beans on at 7 and cooked till 9:30 and they got done. I just always felt that only a ham bone flavors them well and this one is outstanding, yummy! Apparently not gas either as I also ate some at lunch. I used to also used hocks but anymore they are just greasy and tasteless, so no longer.
DD and her dad may have ham salad tonight, not sure yet, I didn't make cornbread but could if he wants it.

tonight I IP'd some B/S chicken thighs into a lemon garlic chicken recipe (I'll post if anyone wants it, I think I have already) and made a bowl with some curly pasta. I've got at least three more meals worth of chicken, and a lot more sauce for something else. everything is in the dishwasher tonight, which I can run when I wake up and leave for my THREE showings tomorrow. woo!!
cost- chicken, $4.13 for six pieces. parsley, $0.79 for the bunch. I might have used 10 cents worth.
everything else was here.

I have absolutely no idea. I'm not all that hungry. All I had today was a protein cookie and a bowl of chicken fettuccine alfredo that I made the other day. A Taco Bell commercial came on and I'm really considering breaking my no fast food pledge.

We had Subway sandwiches, I had tuna, DD meatball, and hubs cold cut combo. But its 12 PM and I got hungry for scrambled eggs and just scrambled 3. I read when you are deficient in Vit D you crave eggs, just had mine tested and it was mostly ok.

I had a mini meatloaf last night along with a baked potato with sour cream.
It's too early in the morning to think about dinner for tonight. Whatever it is will be coming from the freezer.

Sunday night we had wings for the super bowl. And I made buffalo chicken dip. The bbq place had chocolate lava cake in the cold case when I picked up wings. $38 with a $5 tip for wings and cake. They were open later than normal yesterday for the super bowl and they were working like crazy.
Monday night I'm going out with friends. A friend who moved last summer is in town for a visit. DH won't get home in time to go. He's having leftover wings and quesadilla from yesterday's lunch. There's still chicken dip too.
Tuesday beef and broccoli and rice. I can't remember what I paid for the beef. It was a 2 pack from Sam's club.
This week's lunch for me is chicken teriyaki with vegetables and rice.

tonight I roasted a small broccoli crown that my mom didnt get to last week while I was away. I also boiled a portion of linguine and nuked some sauce from the lemon garlic chicken I made over the weekend. there were a few bites of chicken in what I ladled out. topped with grated parmesan and fresh parsley.
cost - $3 for the tub of parm. I might have used 10 cents' worth. everything else was here. I'm enjoying shopping from my pantry and freezer as I pack up to move. it's really cheap!

Since I had a good lunch yesterday at the VA, last nigh was a Jimmy Dean breakfast bowl for dinner. If sold separately at Walmart the cost was $2. I still have 3 left in the freezer that need to be on the menu before May and cut off time for the freezer.

I am in the process of clearing out the fridge. Last night, I make fajitas out of the leftover steak from Saturday and the leftover guac from Sunday. I still have a grilled pork tenderloin in the fridge left from Thursday, so need to figure out what to do with that tonight. I am out of ideas.

I realized I needed to make rice for the pups tonight, so I am going to swipe a little to make a taco bowl with some chili seasoned baked cod. I got a half pound piece at the market, so I will bake some unseasoned for a treat for the pups in the am. I can use the last of the rotisserie turkey with leftover black beans as well. thanks for the pep talk! π ETA: it turned out pretty tasty!

We cooked a fair-sized ham recently and have been using it up in various ways. Ham salad with crackers, a pot of bean with ham soup and a meal of scalloped potatoes with ham. Not much of it left now so probably will polish it off with poached eggs for breakfast. It's a good thing we like leftovers.

The plan didn't hold up very well.
Tuesday night I made cheddar sausages with salad. My oil change took longer than planned putting me home later.
3 sausages are left in the package for DH to eat this weekend while I'm away.
Wednesday I finally made the chicken teriyaki. We had dinner and leftovers are packed up for my lunch. This was a different recipe than usual with more vegetables. Both of us liked it.
Thursday night something with hamburger.

dinner tonight was a quesadilla using up leftover rotisserie turkey, black beans, and tomatoes I had diced last night. I had tortillas here, and bought a block of pepper jack cheese at the village market - $4.29, yikes. but, convenience. π€·ββοΈπ€¦ββοΈ
I forgot how nicely cheese melts when it isnt pre-shredded. one of the things I lost with the picky PITA former roommate. he used so much cheese in stuff, I used to just pick up shredded cheese by the BJs sized bag.

Back to the freezer last night. Banquet Mega Bowl of mac & cheese with chicken nuggets & jalapeΓ±o peppers. It is big enough for 2 servings so will the rest of it tonight. Cost was likely $3.

M and I went out to the dive bar for a couple of drinks, to get out of the house. I grabbed a small pizza to have for leftovers this weekend. she picked up the tab and got mad when I tried to even add the tip. cost - free

I think tonight will be spaghetti with marinara sauce (in jar) that is in the fridge. I'll add 3 tiny frozen meatballs and some parmesan/romano cheese. Total cost maybe $1.50?
