Are they sure its mold? If its from the kitchen, it may be a lot of rotten food. Based upon what your general area and soil, I would think that a lot of the moisture would just soak away into the ground because its so arid. But I know a lot of food particles go down my sink - especially with the dishwasher hooked up to it. And the mix probably isn't right to make good compost..... So, it may be mold - but not necessarily just from the water, but from the food particles. Caliche forms a hard pan that acts a lot like concrete so think of a pool of water trapped between two concrete slabs. Somehow they are going to need to suck out all that semi liquid stuff and back-fill at the same time. Otherwise the void will cause the slab to buckle and sink.
I agree about getting some more bids.

Honestly, I don't know what I would do. This is a new one on me. I'm so sorry this happened, and I doubt seriously insurance would cover it. I hope you get some answers to this.

Maybe they could lift up the house to get it off the slab. There's been a lot of lifting of houses lately in my area - either to elevate them or to move them. It sounds awful, and crazy how it was able to go on this long without being caught. I would've thought the kitchen drain would've backed up a lot after a while.... I am so sorry you are going through this mess!

I am so sorry you are going through this mess! You would be surprised to find out how long this stuff can go on.
We had an issue with our house (built in 1964) where it turned out the utility company pile drove a pole through the sewer line connector in the street. We had a back up after a New Year's Party in 1996 and when the sewer company dropped a camera into the line they reported there was no connection! The City had to dig up all that contaminated dirt and re-route the sewer connection. I'm so grateful it wasn't on our dime. All that work including getting the utility company out to hold the pole was on overtime!
After hearing about this story I'm even more grateful this "crap" wasn't flowing back under my house!

At this point I have stopped, The first thing I am doing now is finding an "Old Jewish Attorney" ( someone with years of experience) involve with remediation. I don't want this documented until I know what the ramifications are ,, Like if an insurance Co. is going to cover this, If not the most cost efficient way of dealing with it!

I don't want this documented until I know what the ramifications are ,, Like if an insurance Co. is going to cover this, If not the most cost efficient way of dealing with it!
You might pop over to the Bogleheads Forum. There are a couple of AZ attorneys over there. I'm sure one of them can give you a referral to a specialist.
If you know any good real estate agents they may also be able to give you a referral.
