Something with hamburger for Tuesday night. Usually I would make spaghetti but I want to go to gym so thinking of lighter options.
Wednesday night something at the baseball game.
Thursday night happy hour with an old coworker and my brother.
Friday night I'll cook something. I'm off work. Chicken probably.
Saturday birthday party for DH's niece. I'm baking the cake.
Sunday I don't know but something at home.

last night, I boiled off some curly pasta and poured some of Sunday's turkey chili over it. there's leftover pasta for one more serving, I may bring that to work tomorrow for lunch. today, I'm WFH so I have time to be a little more creative. I checked the sell-by date on the B/S chicken thighs I had, and it says today. I may roast a bunch of veggies and grill (pan) the chicken. I know I have butternut and Brussels. not sure what else.

Last night I bought pork chops. I took a granny Smith apple and I stewed it in butter, honey and lemon juice. I don't think I put enough honey in because it was really tart. It wasn't coming together, so I added the pan drippings from the pork chops. Put the apples and sauce on the pork chops and topped with pecans. My husband really liked it. I felt it was missing something. My kids said nothing, but ate it.
I also made brussel sprouts, but no "starch". My son fussed that there wasn't enough for him. So he had toast with blue cheese.

I am absolutely clueless.
Last night, I cut up the last of the prime rib and added broccoli. Made rice and did beef with broccoli. There is one serving of it left in the fridge for TD to take for lunch. I made spaghetti and froze the sauce we didn't eat for later on. I made a shrimp pasta salad with an avocado dressing (I need to figure out the dressing, not impressed with it and am not sure what else it needs).
It's a chilly, rainy day out so I'm thinking comfort food. I do have a pork sirloin roast in the freezer I could take out.....

I decided on Instant Pot lemon garlic chicken. my sister made it last week and sent me the link. she made risotto and some roasted veggies. that sounds easy enough, and there can be leftovers other than chili. ETA: this is getting added to the rotation. wowza!

A friend dropped by and brought me a care package for the infirm. Lentil soup, fresh rye bread and a Russian Napoleon.

Bought a nice whole rainbow trout, which I'll pan-fry in garlic butter. Jasmine rice and Caesar salad for sides.

I'm not sure, have ground beef thawed, always a good beginning. Have lots of veggies so will try to make something with minimal meat and heavy on veggies. May cook some barley too.
I think the 2 pounds was the steroids like I thought, I have lost part of it already so not concerned.
We are not going to give up on this, as for us, this is a life style change, not a diet. Hubs and DD are in for it, so it should work. I just think we will have a very hard time not eating all the goodies we love. That will be our real problem. And I have some foods to get rid of. Hate to throw them away, its mainly the breaded mozzarella sticks, breaded shrimp, and fish sticks. Those are the only processed foods in my freezer and stockpile.

Last night DH smoked country style ribs from this year's half pig we bought from our neighbor. We served it with cauliflower puree and leftover sauteed broccoli, baby spinach and asparagus. $4 for 3 servings. Tonight: Cod, tempura shrimp (BOGO from the freezer section) and crookneck squash from DH's garden. Tues: Crock Pot pork roast (also from the neighbor's) with homemade apricot jam from DH's co-worker, and fried turnips. $8/4 servings.
Wed: Chicken and squash stir fry. $4/2 servings.
Thurs-Sun: Not sure yet. Have a wonderful week, everyone!

I think I used a little over 1/2c and had enough sauce for all of the leftovers to still be saucy.

last night, I grabbed a "salad" at Buffalo Wild Wings, where I had parked myself for a couple hours to mooch wifi and work on my way out to meet up with my sister. I put salad in quotes because the description of the salad didn't adequately prepare me for the 9lbs of shredded cheese and pile of generic Doritos that were on top of it. but hey, chain. the priority was the wifi. anyway, the Santa Fe salad - "grilled chicken / Desert Heat™ seasoning / house-made pico de gallo / roasted corn / jalapenos / cheddar-jack cheese blend / avocado / tortilla strips / cilantro lime ranch dressing / flour tortillas" and I replaced the dressing with Caesar on the side. thankfully, because it was nasty. so I just squeezed the lime wedges over the bowl and called it good. that, and a Killian's red (I haven't seen it on tap in who knows how long!) ran me $22 including tip. for 2h of desk space? that's a win!

Tonight I'm making a roast, mashed potatoes and steamed broccoli. I have no clue on costs. The roast is part of the cow we got last fall. I divided the cost of that by the packages of hamburger we got so I figure the other cuts are free.
Wednesday night will be leftovers since it's trash night and I'm getting home late.
Thursday night I think black bean chicken. It's another late night for me. Whoever gets home first can start the rice and shred the chicken.
I actually like the side salad at buffalo wild wings. I've never gotten the full size ones.

it was a pretty big salad, I was full. I dug out a bunch of the chips and cheese, too. if their side salad is the base mixed greens with added veggies, that's pretty solid. I just thought it was funny that the menu declared "it's okay, you can eat a salad at a sports bar!" and then it comes out with all that on top. like, why not just order wings? tonight, I'm cooking for the pups. I'm prepping enough rice and IP'd chicken breast to hopefully last until I get back. for myself, I'm using up the carton of chicken stock I opened last Tuesday for something. going to make spinach risotto and top it with some crispy pancetta. I also picked up a package of B/S chicken breast, I may saute one in the rendered pancetta fat and shred it into the risotto as well. B/S chicken ~ $2 split chicken ~ $10 for six pieces everything else was already here. I'll have leftovers for two meals for myself - either lunch/dinner tomorrow, or one tomorrow and lunch Thursday in a throwaway container b/c I'm leaving for the airport straight from work.

I cleaned out more veggies from the fridge tonight, on my way out the door. I had a few still usable basil leaves from the bunch I had bought to make pesto and never did. oops. I mixed up a bowl of bruschetta with that, using one of the remaining tomatoes. I chopped the rest for the pups for the weekend.
dinner was just pasta tossed with that bruschetta, and then there was wine. and I'll be in bed soon.
cost - nil. veggies were use or pitch. and there is so much pasta in this house, all bought on sale.

Thursday morning I discovered the crock pot didn't get the scrub it needed when we got home from the birthday weekend it was used at. We washed it there but it was a rental and dish washing supplies were limited. So take out it was. I had to get out the door to training so I had no time to wash it.
Friday night black bean chicken over rice.
Saturday night grilled burgers, zucchini and onion rings. Maybe $6? I got the onion rings for free with a grocery store coupon.
Sunday night leftover black bean chicken.

Roast and mashed potatoes. Maybe gravy. I'll have cooked food or a few days. I do get tired of planning, shopping, preparing then cleaning up meals. But I am blessed with ample money to buy the food.

We are gone for the weekend. What is the value of the instant pot when making spaghetti? It only takes 20 minutes? Does it shave time off that?
