I was on my own for dinner last night, so I pan fried a piece of fish and had a bag of steamed veggies. Tonight is going to be something with chicken.

Kraft dinner or homemade stovetop mac 'n cheese, mashed potatoes, butternut squash. anything that can be placed on the tongue and slurped, really. I think I lived on mashed and butternut from the local grocery hot bar for a few days after having all 4 wisdom teeth pulled at the same time. ETA: for thyme4change

by the time I finally got home last night, I was just done. dinner ended up a can of chicken noodle soup with goldfish crackers.
this morning, I marinated two boneless pork chops and four boneless chicken thighs in a packet of McCormick's "Brazilian Steakhouse" blend. I figured I could grill pan off all of it for a few days worth of cooking. well, the afternoon went sideways, and I just got around to grilling all of it, late. dinner tonight turned into a Caesar salad topped with some chopped chicken and pork.
$2 - pork chops $1 - marinade
everything else was here and needed using.

I've been buying lots of fresh corn lately, so today I decided to do something different. I made corn puree in my new blender. It's delicious! Now I can make fancy smears on on a plate.

Beyond Meat burgers and fresh corn. Oh, the burgers were pretty good. Texture was right. Smell was right. Taste was right. Here's the weird thing...it fooled the cat. He kept clawing at me and whining "I want some more!"

I had a big lunch yesterday, a huge Caesar salad with blackened salmon, when I met up with Malarky after my hair appointment. dinner turned out to be a cup of turkey rice soup, probably around 9 or so. not sure what's going on lately, but my appetite is in the toilet lately. that's not a bad thing.

Last night I ended up cooking a quick meal because DH was busy catching up on chores before he left again this morning. It ended up really tasty! I topped Birdseye penne "pasta" (coupon) with shrimp (paper coupon) and scallops (e-coupon). SO good. $13 Because he's out of town, I'll mostly have different prepared Atkins meals. They were on sale at approx $3.49 each. Friday we'll have deer steak from DH's harvest last year with sides.

Wednesday burgers on the grill. DH is working from home so I don't have to worry if he's home in time to grill.
Thursday something quick.

tonight is refreshed leftover pasta primavera aglio e olio. I added a couple mushrooms that needed using and a bit of the pesto I finally made this afternoon. I can't believe I am stuffed by what I brought home from another meal. that's nuts.

Monday night was leftover pulled pork, green beans and corn on the cob. DH bought the corn so I don't know on costs. The other stuff was included above in the party estimate.
Tuesday night is going to be spaghetti. Estimated costs $7.
Wednesday night we are going to grill burgers. Sides to be determined.

I am waiting on a small sheet pan that is currently roasting tiny potatoes, butternut squash, and Brussels sprouts. I'm going to toss them in some pesto and more grated parmesan cheese.
I picked up $21 of produce and a box of Texas toast on my way home. I think the half butternut was $2? I used about 1/3 of it tonight. the sprouts and potatoes have been here for awhile and needed using. I forgot the cost breakdown for the pesto.

Not sure yet. I bought a LOT of just-picked, incredibly sweet corn at the farmers market in the country. Maybe a nice piece of fish, green tea rice and fresh corn.

I used up the end of the pesto, tossing some cheese tortellini and a shredded sauteed chicken breast with it. oh, and more cheese. always more cheese 😁
BSCB cost me $3.75 bc I went to the village market as I had nothing thawed or ID'd to pull from the freezer easily. everything else was here.
ETA - there's a ton of leftovers.

We did take out last night for us and DH's two sisters and kids. It was a fundraiser for the kids school.
I made the burgers tonight. DH didn't want sides. I roasted some asparagus and topped with parmesan at the end. I should have made more. I'll say $5.

Tuesday night taco something. Or maybe burritos.
Wednesday something to go with the corn on the cob we got this weekend. I was thinking chicken sausages. DH is burnt out on burgers and dogs after the holiday weekend.

last night, I made turkey piccata for the week. I also cooked pasta for two lunches plus the little portion I had last night. turkey was $4.75, shallot was $.25, everything else needed using. I brought a small portion of it for lunch today, with either a cup of soup or a small salad from the caf.
tonight, I'm not sure. if I get home early enough to hit the fish market, dinner will likely be a Caesar salad with baked fish. if not, maybe I'll reheat some veggie pizza from the weekend and pair with a smaller salad.

Wellll, considering when I was planning meals last night I kept thinking it was Sunday... Last night DH grilled ribeye. They weren't cheap, and he wouldn't say how much they cost, but they were melt in your mouth oh so worth it! I fried yellow crookneck squash from his garden in an almond milk, almond flour and farm fresh egg dredge, a mock tater (cauliflower) salad, and stuffed eggs to go with. The ribeye are so large mine will yield 3 servings, and two for him. Cost $?
Tonight: Leftovers $0
Wed: Something with chicken breast, veggie $5 for 4 servings
Thurs: Fish, shrimp, veggie $10
Fri: Out w/ friends. I'll buy since they are clients. $?
Sat: Takeout from? DH buys
Sun: Grill/BBQ $?
I also made this to go w/ celery and cucumber slices, omitting the almonds and blue cheese. Haven't tried it yet, but DH said it's good: Have a fantastic week, everyone!

Salad fresh from the garden, bell peppers, green and purple, yellow and red tomatoes, I blanched and peeled them, and fresh cukes. We dress with rice vinegar, olive oil, and garlic salt. Next tenderloin, gravy, and mac and cheese, the bowls were cleaned tonight. I rarely do anymore but I fried in lard tonight, drained the grease, left a tablespoon or so for flavor and made gravy, that is the kind with the best taste. I didn't make that much. We did have a bit of salad left. I hadn't cooked much the prior 2 nights. I am getting ready to throw an apple pie in the oven, waiting for it to come up to temperature. It's apples from the same tree at neighbors I canned last year, and pie crust from Sav A Lot, they were cheaper, see if they are any good. I didn't want to go to the bigger store the other day.
About $3 for 3 tenderloin, $1.99 for pie crust, and whatever the cost of 2 cups of milk is.
