Made this for the first time last night, using bone-in pork ribs and distilled vinegar since that's what I had on hand. Finally! A tender, repeatable pork rib recipe! Crock Pot Low Carb BBQ Baby Back Ribs

I had a dry basted, chipotle flavored tenderloin I cooked in the instant pot. Very good, then made potato salad and baked a pan of veggies that had been drizzled with olive oil and urban accents seasoning, was very good. Very good dinner, raspberry sherbert if anyone wants some. How do you like the Instant Pot? I hate to get another kitchen appliance, but everyone raves about this one. I see not all models "hard boil" eggs, and the smallest one I can get that does eggs is 6 quart. It's just me, and my crock pot is 2 quarts, so I hesitate to get something with three times that capacity. (Sometimes the crock pot capacity is a little small for what I want to cook, so maybe I should go slightly bigger.) I do love leftovers though. And I'm on Weight Watchers, and there are a bunch of low SmartPoint recipes for the Instant Pot. Should I pull the trigger and get one? Is it worth it?

Dinner: Sauteed yellow squash, Vidalia onions and straw mushrooms; cooked broccoli, mustard greens, collard greens and turnip greens. Toast with hummus and some sliced lean sirloin.

Or take a look at the electric pressure cookers. I love my pressure cooker, but still learning to cook with it. Not sure if they do eggs, but they come in several sizes.

Daughters made dinner tonight, like they do pretty much every week night since I've started at this job a few months ago. Matzo ball soup for DD#1 and me, and mashed potatoes for my vegetarian. They usually include some kind of veggie with meals, but if they don't they make up for it by snacking on raw veggies.
I'm proud for not caving in and ordering pizza, because I blew my eating out budget a while ago. I can't afford to keep giving in to my laziness anymore.

I have another portion of pork and garlic mashed with au jus packed to come to the office with me. whether I eat that or do something else (smaller, like a can of soup) is still to be seen. for lunch, I just had the other piece of swordfish from yesterday, crusted in black peppercorn and pan fried, with some of the spinach mac and cheese I made the other day. I'm kind of stuffed right now.

Rounding out the week:
Last night we had a meeting here in town, so DH and I grazed out of my office mini fridge: Deli turkey and chicken slices, cheese slices, and blueberries. I had cucumber slices w/ bleu cheese dressing, and he had a few black olives. 0.00
Tonight is take out. I'll order the teriyaki honey mustard wings. YUM. $8.96 for 8, but DH buys.
Tomorrow night I'll make cheddar cheese taco shells with ground beef and sour cream. Refried beans on the side for DH. Cost approx $7 for 2 servings.
Sunday: DH will smoke or grill something.

I got a chicken pasta dish at an Italian place. There are at least 2 more servings for me in the to go container. My brother had veal marsala. Both came with salads and bread.
I paid, $60 with tip. I make a lot more money and he was just in a nasty car wreck and is still banged up so I wanted to pay. He'll be fine but he's going to bruised and sore for some time. He was going to pay but I did.

roommate made a comment about doing stir fry tomorrow night, so I threw the whole chicken roaster in the crockpot tonight. it didn't go in til almost 4pm, though, so odds are that I won't actually have that for dinner tonight once it's finally done. oh well. there's a ton of other stuff here to choose from, and I could also just break into the package of BSCB that we will open tomorrow night for that stir fry.
I also need to pitch the last of the crockpot pork and risotto from last weekend as well.

Didn't make the meatloaf the other day.... (DH wasn't home), so that's tonight. Sides are salad, twice baked potato and green beans.
Sunday: Roasted Chicken. (Great deal on Oven Stuffer @ .77/#) Bought two. One's in the freezer. $5.29 Sweet Potato, Salad, and Corn. Absolutely will have leftovers. Will de-bone and follow Thyme's suggestion and freeze part. Guess some for chicken pot pie later in the week, and also save some broth.
Monday: We have a few leftovers from earlier in the week... so, a casserole of some sort.
Tue: Got a good deal on a Beef Chuck pot roast. Going to split that (there are only two of us) Potato and Carrots... Cost: Est $6.
Trying to menu plan more.
Iggy, ribs were on sale, but I didn't like the way they looked, so your recipe is a try later.

week-old leftovers have been pitched, and I found a container of black bean chicken that I had pulled to thaw a few days ago while I was cleaning stuff out. I boiled off some pasta and nuked some of the BB chicken to pour over, with some shredded cheese. I'm still a little hungry though, I may go back for seconds. low end of the timer for the crockpot chicken is 8pm. going to check the temp and re-evaluate. this roaster was probably 6lbs, so it's not going to be done yet.

sausage and corn, that's interesting. what kind of base do you use for it? I'm kind of picturing a creamy soup that looks like a cross between sausage gravy and corn chowder.

Chiv: here are the ingredients with out measurements of each. For sausage I use whatever I have....link kielbasa, fresh ground etc. Add the onion, green pepper and green onions; saute until tender. Stir in the water, corn, ham, tomatoes, fresh tomatoes, tomato paste, salt, if desired, cayenne, hot pepper sauce and sausage. Bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally. It's called Autumn sausage corn soup and the recipe is from Taste of Home. I enjoy making soups then freeze in individual containers. thanks, BG! I buy a roasted garlic chicken sausage once in awhile, that would probably work pretty well with this. dinner tonight was supposed to be a big chicken stir fry, according to all accounts yesterday. so happy I altered my weekend plans to accommodate that request. at least I will use the veggies I picked up this morning in other ways. so it's not a loss there, but I'm just fucking annoyed with it all. raising a huge middle finger at my second floor right now. I just finished a chicken Caesar salad bowl, and will likely munch on something else later on. chicken was a couple broken up slices from the crockpot bird from yesterday, romaine had been shredded when I was pitching old produce on trash day last week. somehow what I'd saved that day was still good tonight! grated parm and dressing were kicking around, and a crushed a handful of BIG! wheat thins for crunch.

dinner tonight will be a green/pasta salad mix with some chicken tossed in. the pasta salad was mixed with an Italian vinaigrette, so I'll just add a little more to the greens when I toss it all together.

Last night DH grilled dogs and a sausage, and I made spaghetti squash with leftover carrot top pesto from the freezer. Cost approx $7 for 4 servings.
Tonight: Leftover BBQ ribs with fried okra. $1.00
Tues: Chicken breast tenders breaded with parmesan and crushed pork rinds and Skinny Baked Cauliflower Tots. Cost approx $7 for 3 servings.
Wed: Pot roast which will use up some baby carrots. Cost approx $10 for at least 4 servings.
Thurs: Fish night! Grilled salmon, shrimp, and corn niblets. Approx $9
Fri: Take out from?
Sat: Something easy since I'll be doing taxes.
Sun: DH will smoke a pork something.

I ended up going to Cracker Barrel tonight. Had their open face roast beef on toast with mashed potatoes and gravy. Well worth the $12 including tip.
