I'm feeling way better today than yesterday, and after being able to hold.down cheezits on the plane this morning, I figured I would give pizza a shot since I had to come out somewhere to watch my college hockey team play a local tourney. I ordered it to go, expecting to maybe finish a slice. lunch/dinners the rest of the week will largely consist of things made from items that didn't fit in the upright freezer once I had to consolidate the basement one. My goal for 2018 continues to be to get you to point where you're comfortable making your own pizza dough.

worked from home tonight, since the office was getting snowed on when I would have gotten in, followed by freezing rain for my entire shift, after which I'd be driving home about now.....with the freezing temps line basically following me south. instead, we stayed above 40 all day, and it was actually hovering around 50 when roommate and I went out to grab dinner around 7! dinner for me was half a turkey bacon wrap with fries, and an "extra pale ale". I have the other half of the wrap and fries for lunch tomorrow, no beer lol... total cost, $17 plus tax and tip.

Last night the kids' dad took them out for Indian food, so dinner for me was a big cup of Greek yogurt, 2 squares of dark chocolate, and a homemade cinnamon roll my youngest made when she got home from school. (That girl is an amazing baker!)
Today I vow to get lots more protein and at least a couple servings of veggies.

I bought a package of thin cut NY strips. I'll use my grill pan tonight for the steak and add a baked potato with sour cream.
Steak: $3 Potato $1 (one of those wrapped in plastic and throw it in the microwave) Sour Cream $.50 maybe

I ended up making Low carb soppin biscuits last night along with gravy, scrambled eggs and cheddar cheese. They were the best lc biscuits I've made thus far. The gravy consisted of spicy sausage instead of the Jimmy Dean maple sausage I usually use. Total cost approximately $6 for two servings of all ingredients, plus 2 servings of leftovers minus the eggs.

DH's parents invited us to dinner last night.
I won't be home until later tonight. I have a massage appt. Maybe DH will make dinner. I planned to make sloppy joes and baked sweet potatoes last night.

hmm, okay. those won't do well stuffed. I'd say bake them (in a glass dish, flip halfway thru cooking) and pair with mashed potatoes and applesauce, or maybe colcannon and another vegetable.

I took pork chops out to thaw. Anyone have any ideas? Me, me! It will be too late, though, by the time you read this. Try this next time. Buy Zaterain's black-eyed peas and rice. Buy an onion. Buy some Zaterain's Cajun Seasoning. The container will last forever. Slice the onions. Sprinkle the seasoning on the chops and brown for about 5 minutes total. Remove and prepare the rice/peas mixture in the frying pan (basically adding water and bringing to a boil). Add the chops and put onions slices on them. Cook for about 30 minutes on medium. This is called Hoppin' John, and it is my favorite way to cook pork chops ever. I actually use boneless chops. I want some right now after typing this out. You can look the actual recipe up on the Zaterain's website.

Went out last night as planned with a small group of local friends. Had a Kobe burger stuffed with garlic butter, side veggies, 2 mussels, a vodka club soda, and a shot of Jager. I friggin' love my 2 week long birthday celebrations... Cost to me 0.00. Take out tonight: Smoked beef salad w/ blue cheese dressing. Tomorrow night a huge group of family and friends are going out to an Irish restaurant in the Big City. As good as things like Scottish eggs and Shepherd's Pie sounds, I'll have either the salmon or ribeye. But, of course I'll splurge on an Dublin mule: Jameson, ginger beer and lime. Down a few lbs so far this month. Happy weekend, everyone!

this morning before the dog park, I put together a small pan of eggplant parmigiana with a middle layer of unsauced garlic wilted spinach. I had the eggplant and sauce thawing from having to clear out the basement freezer on Monday. it's really tasty with the spinach in the middle, I'm definitely doing that again! I also boiled off some pasta when I sat down for lunch just now. I've got portions of both to bring to work tonight as well.

Cooked greens (turnip, mustard, collard) with mushrooms, rainbow carrots, grilled fish, baby new potatoes (just a few) and toast with hummus. (The toast is my reasonably "carbed" Dave's Killer Bread.) I think that after tomorrow, I am (gasp) out of greens. (YAY!)

I beat DH home Thursday night and made the sloppy joes and baked some sweet potatoes. Tonight was leftovers.
Saturday is dinner out after a show and we are celebrating one of his sister's birthdays.
Sunday we are having his parents and his brother's family over for dinner. Hopefully my brother will show up as well. Menu is spiral sliced ham, mashed potatoes, gravy, green beans, squash casserole, and rolls. Dessert is chocolate lava cakes and vanilla ice cream.

Last night was un-stuffed green peppers. Total cost around $6.00. Have leftovers, so, will use for lunch next week.
Not sure about tonight. We have way too many leftovers. (Making usual amounts but DH and I have been fighting colds, and we really haven't been very hungry.) Thinking maybe breakfast for dinner... french toast?
