Last night was tilapia, couscous, and salad. Tonight I have no idea. I took out some chicken. Don't know what I'll make with it. We also have plenty of salad left.

I threw together some pasta. roasted grape tomatoes, rough chopped arugula, nuked the last of the cooked chicken. tossed linguini with the lot of it, and some ricotta cheese. tasty, but needed a little more to it. should have added some roasted broccoli.

I didn't take anything out of the freezer for dinner. I'm picking up something on the way home. Screw it. After the rather interesting home inspection experience I had this afternoon, I bought fast food for lunch instead of having leftover ribs for the 3rd (4th??) time for lunch today.

We had sliced cold pork, corn, cauliflower and broccoli steamed. Little guy and DD liked it, hubs said it was ok. I said
welcome to probably some of the stuff on a new menu later. Caught him eating tortilla chips!

was surprised to find rotisserie turkey parts when I stopped at the grocery store tonight for chicken to cook for the pups. $6.59 for a huge turkey breast that will make for a few meals. I made a package of stuffing and roasted some Brussels for tonight. I have no problem pitching a bunch of stuffing if I don't get to it. tomorrow I'm trashing my kitchen in a red sauce marathon, intending to freeze a bunch. but there's going to be a lot of options this week. the kitchen is now closed lol...

roommate asked me to make him a meatloaf tonight (apparently I can replicate his late mom's magic 🤷♀️) and mashed potatoes. easy enough. for me, I broiled some asparagus and prosciutto to go with some mashed and chicken cutlet.
bonus - roommate did all of the dishes except my big fry pan. I still have to drain the spent oil from that, it was too hot earlier. I'll take that, thank you!

I always save shrimp and seafood shells in the freezer. Those puppies have a lot of untapped flavour!
I made a stock with the shells, garlic and bay leaves, then added sauteed onion, red bell pepper, celery, sherry, and a kilo of PEI blue mussels, Parmesan and heavy cream. A dense, hot from the oven French bread for dipping. Nirvana!

Tonight is a goulash of sorts. I fry potatoes. When they're almost done I add smoked sausage, then green pepper, then onion. Once everything is cooked and the veggies sweated out, I serve it with a drizzle of ranch dressing. It's not the greatest for you, but not the worst since everything is fresh.

Back from a 3-day weekend. ~Sunday: Dinner at a ski resort with the family. I had the handmade butternut squash Agnolotti made with brown butter emulsion, pumpkin seed pesto, and apples and split a Caesar w/ DH. Dad paid.
~Monday: In a glaring contrast to the night before, we stopped for fast food on the way home. $16+ :S
~Tuesday: Cod, shrimp (e-coupon), side veggie (also e-coupon). Cost approx $8
~Wed: Zatarain's (e-coupon) dirty rice with ground venison. $2
~Thurs: Out for appetizers and adult beverages with friends. I've budgeted $40 which includes tax and tip.
~Fri: Take out. DH pays.
~Sat: Leftovers. $0
~Sun: Dinner at our house. DH is smoking a bone-in ham from the half pig we bought. I'll make au gratin potatoes, and compile a cheese, olive and meat board, and family will bring sides. Making a cherry cake for dessert. ~Monday: Raiders vs the donkeys. Football game munchies.
~Tuesday: Leftover ham w/ trimmings ~NYE: Our annual crab legs and lobster tail.

I'm solo for dinner tonight. But I'm going to cook a decent size meal so I can have leftovers for tomorrow. I have a party to go to after the gym, so I'm not cooking. Making glazed pork chops, homemade mac and cheese, and some kind of veggie. Don't know what yet.

Iggy, I want that squash dish. damn, that sounds amazing!
tonight, I had a salad with reheated chicken cutlet and a couple.eggplant slices. note to self - the eggplant doesn't nuke well.
I also reopened the kitchen to make a lot of butternut squash soup for tomorrow's office pot luck. after today, I wonder why I bothered, but when I checked in, the guy that was organizing sounded like he would be grabbing bowls and spoons for my contribution. since it was use or pitch, I made the batch. whatever.

I'm in the New Haven area this weekend. my friends big holiday dinner party is tonight, I came up last night to help her prep as usual. two Italian cooks, trashing a kitchen? priceless 🤘
last night we went out to dinner with her DH and two of his male coworkers. we got an order of nachos, chicken and lemongrass potstickers, and two big buckets (40pc) of wings for the table. $25pp, including tip.
tonight's menu is crazy, but it will be a good time. I'm expecting to have porketta, roasted butternut, steamed green beans, and a little mac 'n cheese. she's also got an 18lb prime rib for the beef eaters, and more sides, appetizers, and desserts.

this weekend, and past week, for that matter, was a lot of rich foods I don't normally eat. last night was a spread for the ages. an 18lb prime rib, 9lb porchetta, scalloped potaoes, mac 'n cheese, a spread of roasted veggies, and a kitchen island full of appetizers....and later, desserts. and all of the wine. but not just me lol.... 25 of us killed 6 magnums of wine and most of a full oval crockpot of mulled wine. this morning, I woke up and picked up an XL iced passion tea and hit the road, was home by 11am. today has been all about getting back to basics, and less sauces and butter and cream. first thing when I got home, hangry, was to make a batch recipe that I will pick from the next few days. I sauteed 1lb of BSCB, shredded it, and tossed it with a 12oz box of bowtie pasta, a roasted cut up broccoli crown, some tomato and some chicken stock. add cheese when serving. tonight for dinner, I roasted a few cut up tiny potatoes with EVOO and spices, some Brussels with EVOO and different spices, and I baked a cod fillet with Italian breadcrumbs and more spices. it's exactly what the dr ordered.

tonight I reheated some of the chicken broccoli pasta I made probably last Thursday. I pitched the end of it, there's still a ton of leftovers to work through, including rice noodles that are coming home from the office tomorrow. wasn't expecting lunch to be brought in this week at this cheap ass company I work at.....for just another 3 weeks.
