Wednesday night will be pioneer woman sloppy joes and undetermined sides. We should have enough left for Thursday. Friday afternoon we leave town for the weekend.

Glad to read someone else likes her recipes! I have a backlog of her shows on DVR to catch up on, and have recently began perusing her website. Not sure if I want to commit to her magazine via subscription, though.

I bought one of the magazines. I did it at one of the warehouse clubs where you get a discount. Not sure it's worth it. I do see deals for subscriptions sometimes.
I cut this recipe in half and only use a pound of hamburger. There's just two of us and we don't need leftovers for days.

interesting. I'll have to try that some time. I don't use a lot of paprika ordinarily, wouldn't have thought to put it with brown sugar. thanks!
I've got bone-in chicken thighs that will likely have to wait til Thursday or Friday now, since I won't be around the next 2 days for meals. plan now is to make my half-assed arroz con pollo with them. I hate olives, so mine doesn't have any. but the rest is close to what I grew up eating at my Puerto Rican aunt's house. the chicken was on sale, $.69/lb. everything else was already in the house, but I can break down costs if anyone's interested.

I love Budget Bytes! I like her Adobo Chicken, except I use the sauce on a pork roast in the crock pot. I don't think I've ever tried it on chicken.

FINALLY getting around to roasting that damn duck.
I stuffed the cavity with diced pears, garlic and lemon slices.
Going to baste it with orange juice, apricot jam I made myself, honey and balsamic vinegar.
We'll see.
I don't really follow any recipes; I just wing it with the ingredients I have on hand.
Sounds like it should turn out OK. The ingredients complement each other.

Gave DS money to pick up some KFC (Korean Fried Chicken) on his way back from the gym. It's heavenly, and not greasy at all. $12.99 for a half chicken. and it comes with Daikon radish and Kimchi.

I took a nap when I got home today, just absolutely drained. figured dinner could be something super simple that used up stuff close to pitch date. I roasted a chopped broccoli crown, and tossed with orecchiette pasta and garlic chicken sausage, with copious amounts of crushed red pepper and grated parmigiano cheese. 1 crown, 2 sausage links, whatever was left in the bag of pasta. there's leftovers.

I have not tried that. I would imagine that as long as you ensure you have fat for cooking in between each slice, you're probably okay. as in, why else.would you slice so small if not to increase the additions...

I went to a living room concert tonight, bringing my beverage and a bacon jalapeno mac and cheese to share. I heard rumblings that my mac and cheese was the best thing on the table. I'll take that feather in my cap. 😉

We rearranged both freezers to make space for the half pig we bought. I cannot wait to become a bacon snob. ~Tonight: Crock Pot country style ribs (bought on sale several months ago) with Budget Bytes not refried beans and a half can enchilada sauce from the freezer, a remaining 1/3 bottle of BBQ sauce and a can of chicken broth. Cost approx $12.50 for 4 servings. ~Tues: Cod, shrimp, side veggie $8
~Wed: Venison steak marinaded in buttermilk, side veggie $?
~Thurs: Leftovers $0 ~Fri: Dinner and present exchange w/ a friend. Approx $30 for food/adult beverage and IDK yet for her gift.
~Sat: Something easy since I'll be baking all day (Snickerdoodles, fudge and peanut butter bark, oh my!!!) ~Sun: Grill/Smoke something

I had my big green salad, with some of the fixins I chopped yesterday. now I'm working on a portion of a frozen appetizer with guacamole. trying to work through the freezer.
later, I need to peel the hard boiled eggs I fixed before building my salad.

I mixed up a bruschetta topping and let that sit for a bit to marinate. I tossed that with some cheese tortellini and a half chicken cutlet. the tortellini comes in a bag that's like 2.5 servings for $1. I cooked half the bag.

I wanted neither of the options I had batch prepped, and there's always veggies to be had. I roasted half a broccoli crown and the rest of the Brussels sprouts, adding a chicken cutlet to the pan for reheating toward the end. tossed the lot of it with a box of Kraft dinner spirals and called it good.
the golden puked right after I got home, roommate has been home so much the past couple days bc he's been dealing with the other end. my sis (2h away) described similar to roommate's issues, apparently there is something going around. after cleaning up after the golden, I ran out to the grocery store for canned pumpkin. while walking around the store, I felt a little queasy. really hoping this lab rat doesn't catch whatever's going on.
