DH smoked salmon, and we had it with tempura fried eggplant and cherry tomatoes with mozzarella, olive oil and basil. The eggplant and tomatoes were from his garden. Delicious.

M and I came out for a couple drinks and salads. she had a Cobb, I had a <restaurant special> Caesar, both with blackened chicken. my special had added hard boiled egg, red onion and crumbled bacon. $15 apiece.

Tonight: Shrimp and veggie mix. It was on sale, so we'll see. $5.99
Tues: Attending a rally and there will be food there. $0.00 Wed: Whole chicken in the Crock Pot, side veggie. $6 Thurs: Maybe a local chili cook-off, if not, leftovers at home. $10 or $0 Fri: Take out from? Sat: Supper w/ my sis for her BD. Sun: Smoked pork belly, which we haven't purchased yet.

Maybe if I take a piece of fish out of the freezer when I get home, it will be halfway thawed by the time I get home.

I made baked beans today while working, DD listened for the buzzer and turned them off for me. Makes her feel good to do little things like that. She also went to the basement twice, once to get corn and once for mushrooms. Good exercise also.
So I thawed some filet mignon out, sautéed mushrooms with it, and fried potatoes plus baked beans. She isn't normally one to eat steak but she said those were good and even took 2 helpings. I had bought them from the new butcher shop where we have been getting meat. I should have put them on the grill though. I didn't take the time, but I like them better that way, they were delicious. We had jello with kool whip for dessert.
Last night was chili, she had leftover eggplant parmesan, the last of it. All of us were hungry ate it all.

Tried the roast beef dinner from the hot bar at a local grocery store. $15 for both of us. DH was happy with it.
Tomorrow will probably we more take out. I want to get my Halloween decorations up.

last night I made arroz con pollo with 3 of the chicken thighs from the large package I bought this weekend. I figured that would be three meals for me, since roommate wasn't interested when I started cooking. about that.....he tried some of the rice in a little bowl, then came back for seconds of it AND took a piece of chicken. he doesn't do dark meat or bones. so I guess it didn't suck. anyway, I have one chicken thigh and enough rice leftover for one lunch this week. cost - $1.25 chicken thighs (.89/lb!) $1 yellow rice packet $1 chicken broth, half a carton $? onion, pepper, spices

It's cold and raining. I think I'm going to make some chicken soup tonight. I've been wanting cauliflower soup lately too, but I don't have any cauliflower. I'm going to get one this weekend and make it.

I think DD and I are going to a pizza dinner put on by our chiropractor this evening, sounds great. They are also having chair massages. Hubs will be on his own, he can have canned tamales, he loves those things anyway.

andi9899, like minds! I poked around yesterday looking for low carb soup recipes. I found one I cannot wait to try: Cauliflower and ham. Since we currently don't have any ham, and I don't want to go to the store, I'm going to use Spam from our stash. I'll use the broth from tomorrow's Crock Pot chicken as the base.

I have finally put together several nights of menus. It's been a struggle to get back in the groove. Fiscal year end is behind me, I'm recovered from my sinus procedure so now I'm trying to do better.
Tuesday night homemade sloppy joes, tator tots and salads. Cost $4?
Wednesday night we will have crock pot chicken fajitas. Cost $7ish?
Thursday night homemade hamburger helper. It's supposed to be rainy and crappy all day and we have a play to attend in the evening.
For the weekend, DH is on his own. I'm going home to attend an annual event my family hosts. All meals this week are producing leftovers so he's not completely on his own.

trash pickup was delayed this week for the Monday holiday, so tonight is "clean out the fridge" night. there's a ton of vegetables stuffing both crisper drawers, that I need to sort tonight. planning to make pork fried rice with a lot of it. last night, I sauteed about 2/3lb of Asian pork (basically boneless spare ribs) and made the rice. both are better in fried rice as leftovers.
last night's dinner, roommate made chicken marsala for both of us. rice for him, a little pasta and a roasted broccoli crown for me.

I have been eating a beef roast that I cooked in the crock pot...when I make this I use 1 jar of sliced peppercini's and ital seasoning for the spices and liquid. It is so yummy and I usually end up cooking a pork loin instead of a beef roast but there was a lovely roast in the butcher case at the grocery store. I have been enjoying it immensely.

I live in "Little Mexico", so I can get fresh ones anywhere. That and no self respecting Mexican would eat tamales (or refried beans) from a can, so I've never had them.

The only thing I eat with eyes is Seafood! Just something that evolved about 15 yrs ago due to lots of dental work and when time came I bought a small filet mignon and couldn't for the life of me swallow it. Same with chicken and pork.
