I'm tempted to make dinner now, but I'm probably hungry because I'm behind on my hydration again. Tonight will be ground beef w/ onion, a green veggies and either kidney beans or potatoes done in a skillet. Its the last 1/4 lb. of my grass fed beef, so that's about $1.25. The rest totaled should be less than $1. My green veggies with either be collard greens chopped, French cut green beans, or peas. Probably should consider finishing my salad greens tonight or tomorrow.

We're having a Mexican food day at work tomorrow so I'm making rice tonight. Tonight's dinner will be pork with red sauce and rice. Yum!

I reheated a big bowl of minestrone soup when we got back from the dog park. added a bulkie roll for dipping.
tomorrow I need to do something with the turkey tenderloins I bought Sunday morning. sell by date is tomorrow. I think I'll freeze one, and do something with the other. but what?

I had to look that one up, don't think I've ever had it before. sounds like a great idea for whatever's leftover after tonight, thank you. I think I'll roast some tiny potatoes, since I have them. maybe broil some asparagus wrapped in prosciutto or roast some broccoli.

Sorry, that should have been Turkey Tetrazzini, not Tertrazzini. We had some excellent chefs at the hospital, and they made it once in a while. It was delicious, and I always bought extra to take take home. It doesn't sound like it's hard to make, either.

ha, I didn't even notice the typo. I've heard of it, just didn't know what it actually involved. my mom hates casseroles, so I never had any growing up.

Fried potatoes, hamburgers and cheeseburgers with pinto beans.
I made macaroni salad, but no flavor so going to add some more sweet pickles and let it cool overnight.
I had my reverse osmosis system installed today, hope my water through the fridge and my ice tastes better. They said to take my filter out of the fridge, it will work without one, but just got it new so will see how it tastes.

if I chop and roast a broccoli crown before mixing it into a pot of Kraft dinner, that's okay right? full broccoli crown, EVOO and crushed red pepper. box of spirals (smaller than the regular elbows) and whatever's left is getting pitched.

There's chicken breasts with honey, broth, Mexican spices and lime juice in the Crock Pot for tonight. Approx $5 Tues: Salmon and shrimp, side veggie. Approx $9 Wed: Pork chops bought BOGO a few months ago, side veggie. $1 Thurs: Cod, shrimp, side veggie. Approx $9 Fri: Take out from? Sat/Sun: Smoke/BBQ something Have a fantastic week, everyone!

I'm craving fish. I think I'll pick up something from the local market on my way home, usually ~$5. will likely pair with roasted veggies. I found Brussels sprouts in the crisper drawer this morning, that works.

the market had yellow tail flounder today, so I bought a filet for $3. about 1/3lb, not bad. now to figure out what I'm doing with it.
edit: I baked it, coated in Cajun seasoning, alongside roasted Brussels and tiny potatoes. it's not as good as I thought it would be. oh well.

Had fresh fried catfish fillets, French fries, and macaroni salad, cottage cheese for hubs. Cherry turnover for dessert, I had a small amount of ice cream.
Thinking eggplant parmesan tomorrow night.

Sunday night we had grilled steaks topped with sauteed yellow bell pepper. Salad and baked sweet potato on the side. Cost $4? Pepper needed used and the steaks were the last two from a big chunk we bought and sliced into steaks last fall.
Monday night spaghetti and garlic bread. Salad on side for DH. I forgot to stop and pick up more salad stuff and I had salad and veggies at training today. Cost $6.
Tuesday night I'll do something with a package of pork chops. Salad and baked sweet potato on side.
Wednesday and Thursday I don't know. We are out of town for the weekend.

A new pizza place opened and they had sent us a coupon for a large pizza - we got a fully loaded veggie pizza and I must say, it was very good

We are having our cookout tomorrow night. I didn't want to, but hubs was afraid the weather would turn bad and we couldn't. It's about a 3 acre church yard he takes care of next to his moms house we bought. Between he and his dad and mom, they have for probably 50 years. No church been in it since right before we were married.
He picks up tons of limbs and cuts a tree now and then, therefore an annual wiener roast. We supply most, hotdogs, buns, plasticware, sodas, fire, ice, tables. Now hubs got a bunch of metal roasting sticks. People bring chairs, whatever they want to contribute food wise. This years total invited about 20, they are from the neighborhood and our renters.
Tonight I'm making a huge bowl of potato salad, have the potatoes and eggs cooked in my instant pot and now cooled. Ready to peel and chop. We will have some for dinner. Tomorrow throwing together a big pan of baked beans, won't take long. I'm thinking about a cake tonight and another tomorrow. Going to cook us a pan of brownies so I can keep them out. For our dinner tonight, just the potato salad, a skillet of fried cabbage and kielbasa, and brownies.
Others try to help, but one lady there is sick, another is in her 90's, maybe 95 this year? Another lady also very old so can't do what they did. Our renters will help hubs set up and take down so won't be so hard on him. And everybody helps clean, so not hard on me either.
It's just this morning I felt really bad. However I finally got relief, not enough but enough to feel like a human without massive pain so I'm in heaven right now. Best I've felt in a month.

I made chili tonight. DD ate the rest of the eggplant parmesan. I have jello for dessert and koolwhip if wanted.

Not very hungry tonight so I heated up some chicken nuggets. The one bag is now empty and out of the freezer. I didn't like the panko variety so I bought something else.
