DH told me this morning that it was "Bacon Day" (as in holiday) according to his Arizona news site. So I stopped by the farmer's market and picked up a basket of tomatoes and some lettuce. Surprisingly, he decided to join me in a BLT for the first time in the nine years we have been married. I had to do some modifications since he can only wear his upper dentures so I peeled the tomatoes, roughly chopped the lettuce, and cut the crust off the bread. He didn't want it toasted his first time out, but next time he said to go ahead. He ate all of it! Mine was yummy. So was all the extra tomato that i ate.

picked up 1/4 lb of salmon filet from the market. took the skin off, rolled it in Cajun seasonings and baked it. I flaked the salmon into a big Caesar salad. I chopped a full romaine heart and diced some red onion to go with the parmigiano, croutons and dressing.
wine pairing tonight is a crisp rose. I wonder how much longer I'll be able to get rose this season....
cost tonight - $4 for the fish.

I fixed hubs fried cabbage with bell peppers and kielbasa, he likes that. DD didn't want it so heated up the leftover spaghetti for her, made her happy. I didn't know what I wanted. Ended up eating a tomato, then sunflower seeds, then some fresh cherries, and now a peach yogurt. Still not satisfied, if not so late would pop some popcorn.

very jealous, NNP. I am way overdue as well.
so the chicken I pulled from the freezer on Sunday turned out to be bad when I opened the bags today. that wouldn't have been a big deal, except I had already prepped everything else to make chicken piccata since I had lemons and parsley to use or pitch, as well as an open carton of chicken stock in the fridge. so, I left the pups out back and the banana bread in the oven and I basically ran across the street to the market at 6:57pm to catch the service counter before it closes at 7 to buy more chicken. I don't particularly enjoy paying $3/lb for BSCB, but it saved me a 20mi round trip to the closest grocery store! I picked up two, and thin sliced both. that's what had thawed, so whoever gets to it first tomorrow or whenever is all set.
I've got the thin cutlet (I am incapable of slicing two even cutlets) and a pile of spaghetti. the thick cutlet was sliced in half the short way to check for doneness. I will probably make a sandwich out of one piece for lunch and have the other with more pasta at some point.

grabbing dinner out while doing a shopping loop 10mi out. salmon sashimi and a spicy yellowtail roll, with an order of rice noodles that will mostly come home with me. worth every cent.

Dinner tonight cost DH $25 for the tip. His parents gave us a gift certificate for our anniversary last month.
We had filets, asparagus, and scalloped potatoes. DH had a salad as well. I ate too much and I'm suffering with reflux now.

dinner tonight is tacos. we had 5 burgers left over from tailgating, already chili seasoned. so we broke up the 3 beef and 2 turkey burgers, and chopped up the fixins with yellow rice and black beans. I still have guacamole, and taco meat. Will be making taco salad tomorrow at least once.

Thanks. It was last month but we finally got around to using the certificate.
Tomorrow night will be chicken and black bean tacos.
Tuesday I want to try and make the pulled pork.
Wednesday and Thursday DH is on his own. Friday we leave for the weekend.

I'm going super beaner and having chorizo and eggs. Yum. I'll should drink some beer with it so I can be full on beaner, but I try and save the beer for the weekend. Too many calories.

I made the pulled pork in my instant pot. It turned out very well. I miscalculated the time for it to come to pressure so dinner was a bit late. Fed DH's nephew as well. He had thirds of the pulled pork.

Last night grilled a couple of burgers. DH had some chips and salad.
Tonight, Pork tenderloin, mashed potatoes, salad and green beans. Est cost: $7.80. Will be leftovers. (tenderloin was $3.28) There will be leftovers. Tomorrow: Tacos. Shells, $1.50, hamburger (DH doesn't like turkey tacos) $2.50, lettuce, cheese...etc. Guess $5.? Weds: Think I'll use the rest of the tenderloin in a pot pie. (supposed to be rainy here)
Thurs: Not sure Probably Chicken.
Friday, out.

Homemade baked haddock, homegrown green beans, rice, and salads. DH got a craving and made a DQ run so he had an Oreo Blizzard and I had a small vanilla soft serve for dessert. Cost? $20 total with one serving of fish and some rice left over.

Morning! Tonight: There is white lasagna in the Crock Pot for tonight. In an effort to use up some of the 8+ packages of frozen veggies, I googled certain ingredients. So it's breakfast sausage, canned chicken, Alfredo sauce, cottage cheese, mozzarella, thawed frozen spinach, and a bunch of seasoning. We'll see. The Crock Pot is full, that's for sure. Cost approx. $11? Wed: Asian Sweet Chili Chicken. Again, to use some sweet chili and chicken breast cut into tenders in the freezer from several months ago. Cost aprox. $4 Thurs: Leftovers $0.00 Fri-Mon: Camping. Suppers will include smoked sausage, ground beef, and one other Have a fantastic week, everyone!

I ate and drank like the calories didn't count this weekend. but hey, birthday weekends only happen once a year! so, this week is going to be way more cleaned up than normal. well, once I finish off the birthday cupcakes and leftover pizza from Sunday night.... I opened a package of turkey tips with a sell-by date of the 2nd last night, making scampi. there's one portion of that left, for lunch at some point (maybe today?). will use the rest of the package tonight, maybe a Caesar salad. or tacos, b/c Taco Tuesday. the rest of the week, I've got all of the vegetables to use up. broccoli, a HUGE baby spinach clamshell, zucchinis. pretty sure we're going to make fries out of the last big russet to use up the end of the peanut oil as well. the ones we made Friday night were amazing.

so much for cleaning up my act this week. tonight I met a friend for happy hour. when she wanted a refill, I ordered mine with a small order of broccoli cheddar poppers, since I could already feel the first drink. when I got home to a quiet house, I just made a box of Kraft dinner. spirals, so a smaller box, but still. not ideal. oh well. long walk with the pups in the AM. it's barely 9pm and I can't wait to turn off my lights.

I dredged catfish fillets in flour, Italian breadcrumbs, parsley and dill, then pan-fried in butter. Served with saffron and turmeric jasmine rice, marinated wild mushrooms, a spicy curried mayo and lemon wedges.

I was going thru our freezer. Last night was ham. (Left from Easter...had butcher split it when I bought it). Not sure how to figure that cost. Sweet potato, baked beans and salad. Tonight, from a B1G1 chicken sale, So, yeah, chicken, roasted.
Not sure what sides I want to make yet. Will be leftovers... many leftovers... Monday: Thinking beef. Have many choices waiting to defrost.
