andi9899 - chop a crown up into bite size pieces, keeping in mind that they will shrink in the oven. toss with EVOO and whatever spices you want, and roast at 400 degrees for 10-12 minutes. I typically do a lot of crushed red pepper and garlic powder. Thanks! I roast frozen broccoli, Budget Bytes told me I could! Slightly less work too, so I'm all for that!

dinner tonight was a chicken Caesar salad. I used the last romaine heart (that was looking a little rough) and one of the chicken thighs from the weekend. shaved parm, croutons, dressing were all on hand.
oh, and then I had a bite I'd bought a couple days ago - a 2" vanilla bean cheesecake with fresh whipped cream. Whole Paycheck has some amazing things lol... that little cheesecake was all of $2. I grabbed one for my roommate as well.

got home from my oil change around 730, and the roommate was already in bed. I wasn't about to start cooking what I'd had in mind for tonight b/c cooking smells go straight up the stairs and into his room. I can be an asshole, but that's unnecessary. I'll just make that pork fried rice tomorrow night, no issue. I decided to go up the street to the dive bar. I hadn't been in on a Thursday night since the night my car got hit in the lot. I got a cup of French onion soup and a drink, and when I realized how tired I was and really didn't want to be out at a dive bar tonight, I came home. tab out - $8 plus tip. when I got home, I reheated the last 2 slices of pizza from the other night and mixed myself something interesting. apparently someone's been "helping" with my cranberry juice stock, because there isn't any in the house. but, I had an unopened bottle of blueberry juice cocktail on the pantry shelves. so I figured I'd try replacing the cranberry with blueberry in a Cosmopolitan, and it's really tasty. it's also super sweet with the same volumes, so it totally works for *one* but I'm definitely going to try this again some time.

went grocery shopping this am on plastic, not happy about that. but I filled my cart with sale and produce, and made sure not to duplicate anything already at the house. dinner tonight is all from what was here, save for a slice of scala bread to mop up the dish.
I chopped up some bruschetta topping from some tomatoes that would have been pitched tomorrow, the end of a red onion, and more of the basil I used for pesto, and a little shredded parmigiano. boiled off the end of a box of rotini, and tossed the lot of it together with a cut up roasted garlic chicken sausage link. oh, and some of that pesto went in the bowl too.

DH's sister invited us to dinner. I contributed a jar of queso dip. I think it was $3.50 at Walmart.
They grilled chicken, steak and veggies for fajitas. She also made some cheese quesadillas. It was good and we didn't eat out or get take out.
I need to make a meal plan and a grocery list. Between having no AC all year and going on vacation, pickings are slim. Vacation is over and we have AC so I need to get back to cooking more. At least for 4 nights. We get on a plane to Nashville Thursday night for a long weekend.

I took out a package of chicken to thaw before I left for work. I'll figure that out when I get home. Either that or I'll just end up drinking beer with my dad which is far more likely.

Sunday night slow cooker honey teriyaki chicken over rice with a side of steamed broccoli.
Monday night is spaghetti with salad and garlic bread.
Tuesday night is salmon for DH. I'll have leftovers or a sandwich.
Wednesday night beef and broccoli over rice.
Thursday night something quick at home or take out on the way to the airport.
Friday through Sunday we are out of town so eating out.
I have AC finally so I'm trying to get back in the habit of planning meals and cooking dinner at home.

I am being unhealthy. I thawed out a 2 lb chub of ground beef, so half of it I made up into taco meat (froze to eat later) and the other half I made into 1/4 lb burgers. We had burgers tonight and will have the other two burgers tomorrow. At least I am being frugal - the beef was a Christmas gift from DH's boss, we ate all the lean cuts over the last six months and are down to mostly ground stuff.

Tonight: Leftover ribeye from volunteering over the weekend, veggie. $1 Tues: Crock Pot lasagna. $6 Wed: Teriyaki salmon, veggie. $7 Thurs: Low carb egg rolls or egg roll in a bowl. $7 Fri: Take out. DH pays Sat and Sun: Grill and/or BBQ outside

I bought boneless pork chops this weekend. baked one off tonight and saved half for something tomorrow. alongside, I roasted some HUGE Brussels sprouts and made mushroom and kale risotto. there's leftovers of both sides as well. maybe lunch tomorrow will just be a repeat of tonight. that wouldn't suck.

I put some sloppy Joe meat/sauce that I had frozen down a couple of days ago and ate it tonight. After a long day at DH's clinic, it was surprisingly tasty.
I need to freeze more stuff like that.

A neighbor gave me 4 beets from her garden last night. Because I refuse to operate the oven in this 95+ heat, anyone have any microwave/stovetop recipes to utilize these?

A neighbor gave me 4 beets from her garden last night. Because I refuse to operate the oven in this 95+ heat, anyone have any microwave/stovetop recipes to utilize these? If you microwave fresh home grown beets I will hunt you down and you will wind up in a EE freezer. Turn up the a/c! Rub a little olive on them. Wrap in foil and bake in oven. Let cool a bit a take old bath cloth and rub off skin!

Cut them into small pieces. Saute with a little bit of oil, salt and red pepper flakes - easy peasy. Add a little water and simmer them till they are cooked.

I sooo want to eat that! I'd make a big mess of the kitchen though. Happy prose, I said a few weeks ago I'd check back in about that. The mess wasn't too bad. The fact we have a large electric griddle helped, though, I'm sure. And, I didn't use nearly enough cheese, LOL. Lots of practice is necessary apparently.

The teriyaki chicken and spaghetti were cooked as plan.
Tuesday night I had a salad with grilled chicken. DH had half of the leftover teriyaki chicken and the broccoli. The rice was gone so I cooked one of those Knorr pasta sides. I used to eat them and then I developed a sulfite allergy. They all say may contain sulfites and I don't feel like gambling. I'm slowly feeding them to DH.
Wednesday night I will have the leftover spaghetti and DH is making salmon for himself. He can pick whatever sides he wants.
Thursday night I may finish the other half of the chicken teriyaki before we head to the airport.
I went through the freezer and figured out what we have. And I have a few meal ideas for next week. I'm trying to use things up before another big shopping trip.
ETA: I steamed the rest of the broccoli and dumped the teriyaki chicken over it. DH had his with the salmon. The spaghetti will be my lunch Thursday.

I made cabbage rolls but they weren't very good. Not sure what I did differently but something just wasn't right.

Hey Iggy aka IG what was the outcome with the beets? I had to "buy" some the other day - yellow and reds - no one I know grows them - not even sure they would grow well here so was wondering you take on them. Were they good, etc and how did you cook them.
Now I will go back and catch up on post and see if you have already answered my question - if so NEVER MIND

wasn't all that hungry last night, so I fired up the grill and cooked off a veggie burger. since we were out of chips, I nuked a Steamfresh side and ate about half. a friend is coming up from NJ tonight, she's visiting family tomorrow about an hour from my place so she's going to hang out tonight. not sure what we're doing for food, but there will be wine.

so there was actually some peach vodka last night, at my friends suggestion. I guess Ketel One does seasonal flavor infusions? anyway, peach and orange blossom with seltzer, very tasty. and an onion and pepper pizza later in the evening.
tonight? I kind of don't want to cook anything. I made a big batch of pasta salad for the week, shredded four bone-in chicken breasts for the pups, baked a batch of blueberry corn muffins. and cleaned out the fridge. maybe I'll throw a frozen turkey burger ($5 on sale for 8 Butterball patties) on the grill and call it good.

Chinese food. Had a craving. Up until the fried rice tried to kill me, that is. Apparently I tried to suck down too much and it got stuck in my throat. So trying to drink water to get it to move along only made me throw up on myself. Charming, I know. I do hate when that happens.
