Friday: Grilled cheeseburgers, chips and salad. Cost $3.50 est Saturday: Grilled fish, salad, rice pilaf.
Cost $6.80 est. Tonight: Grilled Pork chops, salad, angel hair pasta and carrots Cost: $8.50 est. Monday: Usually left overs, but I haven't been "over cooking" ... Thinking smoked sausage, salad, and not sure of the side yet.

not sure what I'm doing tonight, having some issues today that I'm not 100% sure isn't related to last night's (very tasty!) dinner of swordfish. could also very well be that I didn't end up eating anything today until almost 2pm after having coffee.
anyway, enough about that! once this Sox game is over, I'm going to be making a batch of chicken broccoli alfredo for this week's quick eats. I marinated 1.5lb of B/S chicken thighs in a black peppercorn marinade this morning. I'll grill pan that, roast a ton of broccoli, and boil half a box of some sort of curly pasta. I've got a jar of alfredo in the fridge that I opened to make a couple small pizzas, so most of the jar is still there.
$3.42 B/S chicken thighs (used 4 of 6) $.69 box of pasta (cooked a little over half a box) $2.50 jar of sauce $2? I have a lot of broccoli, I'm going to roast as much as will fit on the countertop convection oven pan. no oven today. $? marinade packet from who knows when.
ETA: updated quantities in parentheses. I had two small paper bowls of this mix once I was done cooking, so I guess that's dinner. what's left in the mixing bowl is easily 5 or 6 more meals, or smaller bites as needed. will just the lot of it into one big tupperware and portion accordingly as the week goes on. I also now have two B/S chicken thighs to use for salads or wraps as well.

The ham dinner was a success. Not many leftovers and we are waiting on two late arrivals. They are teenage boys aka bottomless pits so I don't expect much to be left after they eat.
I ended up doing the easy peach cobbler for dessert. Served with vanilla ice cream on top.

Similar to Blonde Granny , I am continuing to make meals out of pantry and freezer food. This week features a few types of jarred sauces. I thawed 2 slices of Thanksgiving pumpkin pie and DH had one last night. Said you cannot even tell it's 7.5 months old. Last night: Smoked sausage (sale, ecoupon) and Nathan dogs (sale) on the grill, with sides of leftover Budget Bytes Not Refried Beans from the freezer for DH, and dill pickles. Cost approx $6 for 6 servings. Tonight: There's a pork roast (sale) with spices and 3 meat Ragu (sale) in the Crock Pot. On top of baby spinach for me and DH can have it on a leftover hamburger bun or angel hair pasta. And he'll have leftover mandarins on the side. Cost approx $7 for numerous servings. Tues: Ground beef (multi pack) tacos on shredded cheddar shells, free rice from a Friday download for DH. $3.5 for 2 servings. Wed: Chicken (multi pack) Alfredo (sale) on top of zucchini noodles, I'll make cheesy bread from a leftover hamburger bun for DH. Cost approx $5.59 for 4 servings
Thurs: Leftovers $0.00
Fri and Sat: Camping $IDK yet
Sun: Most likely leftovers $0.00

also working with what's already here tonight. I did add half a baby bok choy and a handful of bean sprouts purchased tonight for a big stir fry with the roommate later this week. was able to use up rice noodles, chicken thighs (the first protein I found in the freezer), and veggies that would be pitched tomorrow night - yellow pepper, onion, scallion, broccoli. I would have added mushrooms but they were too far gone. I forgot the typical scrambled egg this time as well. oops I just sauteed the chicken and then veggies in canola oil with a splash of sesame oil, and added soy sauce to my plate. so good!

Tonight's vacation meal was brisket, corn on the cob and salad. Desserts are leftover peach cobbler, Rice Krispy treats and I think we got stuff to make your own ice cream sundaes.
I think we are going to go out one night. Especially if they do salmon. I don't like salmon. But DH loves it so who knows.

Cheeseburgers, steamed native corn, homemade hash browns, leftover salad with a ton of veggies. Cost? $20 for 3 including a college kiddo who ate as much as 2 or 3 normal people.

in my adventures at Whole Foods tonight, I found a 50% less sodium version of a frozen veggie burger I used to buy a ton of back in college - Amy's "California burger" that's got mushrooms and walnuts in it. I haven't had that in years, and I love the l/s option. I figure that's a stupidly easy dinner option for the summer, with a salad of some sort.

it's been a long time since I've had them, and I eat way less processed stuff these days, so I hope I still like them! I have been making my own black bean burgers the past couple years, but there's one from this brand as well. it seems like there's fewer preservatives in the stuff from this brand.

Ham, corn, some from the freezer I put up last year, and home canned green beans. Using up things left. I have very little tomatoes left, but quite a few green beans, 2 jars of green tomatoes, a couple of relish, not sure what was left. My father died when I was five, and Mother was on furlough from the state mental hospital. It was an interesting three or four years before we ended up living with relatives. Anyway, sometimes she ran out of money and there was "no" food in the house. However, we had aunts in the country that canned like you. They would share with her so there was a closet filled with homemade canned food. When she'd say she didn't know what we would eat, I would point out that we had plenty of applesauce, green beans, and corn. And we did. You'd think I would hate these foods, but they are comfort foods to me even today. Thanks for bringing back that memory.

I make sure we have plenty of food. I have no idea why, have never done without or been hungry. But I just feel I need to do it.
I have got to quit saying anything locally about canning. If we did have problems in this country they would likely flock to our house. For us would last a long time, for many not long at all.
I'm glad your family gave you food, how sad it would have been if you went hungry.
I am always amazed, people here whine and cry about no money. We have a food bank, that catholic charities and others donate too, they dispense food weekly, I'm not sure how often you are allowed to go though, seems like its once a month. Well, it doesn't take much to put out a couple of tomato plants, bell peppers. They could even take a small flower bed and plant lots of carrots or a cucumber plant. And squash is easy they grow and produce like crazy. In a very small area I could produce a lot of food if I did not have enough to at least run through the summer and supplement whatever else you have.
People have lost all skills to be even minimally self sufficient. If we as a country get in dire straits no one with food will be safe and the social order would collapse. Scarey isn't it?

I picked up a pizza on my way home from tiring the pups out at the dog park for the first time since starting the new job. you'd think I was starving them, the way the golden is pouting at me from the bay window. LD is up my ass stretched out behind me on the couch. sorry guys, I'm not dropping anything anyway, onion, green pepper, mushroom pizza. and lots of leftovers.

Thing 2 didn't eat the other turkey burger patty I made last night, so I'm having a turkey burger with veggies again tonight. No need to cook for one. Once this last kid is gone I don't see myself cooking much anymore.

Once this last kid is gone I don't see myself cooking much anymore. batch cooking. seriously. between the dogs and the fact that the roommate and I don't overlap hardly at all in our cooking tastes, I'm basically still cooking for me, but with less time. so if I spend my Sunday (this is insanely easier during football season....) batch cooking at least one recipe, having deli meat/chicken salad on hand and protein cooked to add to salads, that's it. welcome to my life lately. tonight's pizza was just a case of the fuck-its. oh, and I was able to cash in that $100 scratch card I bought at lunch.

Tonight's dinner was chicken parmesan, pasta, garlic bread, and salad. Dessert was apple pie and vanilla ice cream.
DH and I might go out tomorrow night. I'm not sure what the plan is dinner wise for the house. I thought it was salmon but that is Thursday night and we are leaving late Thursday afternoon.

Count me in with having plenty of food on hand crowd. When the recession hit, and things started to decline in our home quickly, I remember having no food in the house at one point. No pasta, canned goods, nothing. I swallowed my pride and went to our local food bank. They asked for donations and I gave them the few dollars in quarters I had in exchange for a small box of food. Yes, I was recognized (I'm a small business owner in a relatively small town) but oh well. I will never, ever forget those times which is fine because they keep me motivated here at the office. I don't can, but make sure we have a large stockpile of store bought canned and other non-perishable items, as well as many different frozen proteins. All bought on sale with coupons with possible, of course.
