I thawed something out to throw on the BBQ, but it's raining, so that's out. I wanted to run to the store, but everything is closed today. It's a HUGE holiday here, THE most important holiday for French Quebecers. Nothing is open. Well, some pharmacies are open, but I'm not buying supper from the drug store.

Fried chicken, mashed potatoes and gravy, some kind of veggie. It's what the kids want, so I'm going to toss my diet out the window for the evening. They didn't have to twist my arm very hard.

I just sauteed a bunch of chicken tenders for the week, and chopped up a romaine heart for a Caesar salad with some of the chicken.

Tonight: Breaded fish (coupon) for DH, baby spinach salad for me. Cost approx $5 Tues: Salmon bought on sale a few months ago, shrimp and a side veggie. Approx $9 Wed: Crock Pot pork ribs (sale) in leftover enchilada sauce, side veggie. $11 Thurs: Out Fri/Sat: Take out one of the nights and IDK the other Sun: DH will smoke/grill something Have a wonderful week, everyone!

I made spaghetti sauce, used a jar sauce, added onions, bell pepper, cracked pepper, 0bit of chili powder, hamburger, and garlic salt. It was good. Had angel hair spaghetti and some salad. Pretty good.

I sauteed large Pacific white shrimp with butter, garlic, a small shallot, lime juice, cilantro, peperoncino flakes and parsley. Served on basmati rice flavoured with turmeric and saffron. Also, a Caesar salad with homemade dressing.

Ended up making Sesame-Ginger Salmon en Papillote last night sans honey and with baby spinach to use it up in lieu of the other greens. The ribs are in the slow cooker today. Now unsure what we'll have tomorrow night, LOL.

I saved that link, thank you. that sounds outstanding! I would probably serve over white rice.
dinner tonight is going to be veggie centered, but not a salad. I feel like I've eaten my weight in Caesar salads lately. dinner last night out and lunch at home today to add to the list. I bought Brussels sprouts this weekend, I can either saute them with pancetta or roast them and top some risotto with them. will see what I feel like when I get home.

I decided to clean out the fridge a little deeper than originally planned. roommate got a meatloaf and jalapeno mac and cheese. I ended up with some risotto and roasted sprouts. I'd be lying if I didn't also admit to a scoop of that mac and cheese with hot sauce. oh, and a glass of rose. yay summer!

Ham, corn, some from the freezer I put up last year, and home canned green beans.
Using up things left. I have very little tomatoes left, but quite a few green beans, 2
jars of green tomatoes, a couple of relish, not sure what was left.

Last night: Grilled Angus burgers, bit of ribeye, and mashed cauliflower. The burgers and cauliflower were leftover from DH's BD party. Cost approx $9 for two. Tonight: Fried and breaded catfish, sauteed shrimp, okra. Cost approx $10
Wed: I'm going to take a stab at making these: Thurs: Leftovers Fri: Take out from? Sat and Sun: Grilling and smoking meat outside due to the tremendous heat. Happy Independence Day, everyone!

was feeling adventurous tonight. I broke down a value pack of sale BSCB and made chicken piccata with four cutlets (I wanted a lot of leftovers). I also roasted a broccoli crown. it's tasty.

I threw together another mini Boboli crust, since I had the open package. I used a couple tablespoons of Alfredo sauce from a jar (will use the rest this weekend to batch cook for next week), the leftover tomato slices from the weekend, some rotisserie chicken off the bird I picked up for the pups, and some broccoli florets. oh, and shredded cheese and crushed red.

takeout sushi and a Cosmopolitan. an eel and cucumber roll, spicy yellowtail roll, and salmon sashimi with daikon radish and cucumber. $22, and worth every cent.

We are having a frittata. We still have a couple dozen eggs left from our last visit to our in-laws, and we are going back out tomorrow. So I have to find a way to clear out space for more eggs.

I've got some balsamic vinegars that are fruity. but I'd think the red wine vinegar would be way less sweet. definitely intrigued

today was just a shitty day all around. so the highlight of my night is a big shaker of Cosmopolitans while I try to ignore the inner workings of my brain. at least the Sox are mopping the field with the Royals (sorry, sam!) for actual dinner, I roasted some broccoli (garlic powder, crushed red pepper, EVOO) and sauteed some BSCB (Penzeys "black and red", garlic and onion) and mixed that into a package of Knorr chicken flavored rice that I made with the end of a carton of chicken stock. my goal this summer is to work my way through my freezers and pantry, and get back to eating at home as cheaply as possible. packaged foods aren't ideal by a long shot, but they are already here. I may as well use them once in awhile when I really couldn't give a shit what I'm eating.

First night of vacation and we ordered pizza. Tomorrow we will probably cook because it's a major arrival day and traffic will be screwed.
The stupid ham was $36!!!! I forgot how freaking expensive Harris Teeter is. And their produce is always meh at least at this one. I should have brought it at home at BJ's and brought it with me but I had a million things to pack as it was.
Anyway if I cook tomorrow night we are having ham, hash brown casserole, squash casserole, green beans and rolls. Dessert is undecided. It might be nice to cook early in the week and be done with it.
I did buy a tub of spring mix, broccoli, carrots, peppers and frozen grilled chicken at Sam's club this morning. I've been eating like crap while waiting on the new AC to be installed. So the plan for lunch is salads.

I'm still eating out of the pantry and fridge. Today for lunch i opened the last can of Bush's baked beans and cut up 2 Nathan hotdogs. There is enough for dinner tonight too.
