Last night: Salad, pork chops, mashed potatoes and butter beans. Est cost: $7. It fed both of us, and have leftovers for lunch tomorrow.
Tonight, maybe Home made chicken pot pie. I need to pick up mixed veggies though. I also have some hamburger defrosted, could do meatloaf... not sure.

I'm prepping a few things for the week today. chicken and leek soup, fruit salad, and chicken taco salad (ready to assemble)
tonight's dinner may or may not turn out to be a serving of one of these things. not sure yet.

I'm also prepping for the week.
I'm on Weight Watchers, and they've assigned zero points to a bunch of new foods, so I made zero-point turkey chili (my own recipe).
large can of tomatoes, $1.49 canned black beans, $0.79 green bell pepper, $$0.99 onion, $1.04 99% fat free ground turkey, $6.99
I raided the pantry/fridge/freezer for chili powder, red pepper flakes, white corn, baby carrots, and celery.
So, total cost is $11.30 and I got rid of some veggies that needed to be used up. It made at least 6 servings.
In the oven now is another zero-point recipe, roasted vegetables.
red bell pepper, $1.49 green bell pepper, $0.99 yellow squash, $0.60 zucchini, $0.70 canned artichokes, $3.69 fresh thyme, $1.99 (my slurge)
I used a red onion that I had on hand (just in time as it was starting to sprout).
So total cost for the roasted vegetables is $9.46. I'll have it as a side dish, and over brown rice or pasta. Should last much of the week.
For tonight's dinner, I'm making baked chicken breasts with lemon and fresh herbs.
organic chicken breasts, $8.81 lemon, $0.67 fresh rosemary, $1.49 fresh parsley, $1.49
So total for that is $12.46.
I expect this will cover me for the week for 6 lunches and 6 dinners. The chicken will stretch to 4 dinners, so some of the meals will be vegetarian.

I'm tired of being cold. So I'm making some comfort food. I peeled a potato for mashed potatoes. Then I will grill a hamburger patty. Add some green beans, and it is pretty much perfect for a cold day.

I said something about tacos as I was starting to chop salad veggies, which turned into very badly timed tacos w/fixins, beans and rice. oh well. it's 730pm, and I've already had my house back to myself from Captain Chaos and his mutts for a half hour already. I'll take it. final tally today is 1qt of fruit salad plus half a cantaloupe only (for the pups), 2lbs of shredded taco seasoned chicken tenders, 1 head of chopped iceberg lettuce, all of the taco fixins and tortilla strips plus ready made guacamole, and 4qts of lemon chicken orzo leek soup. I'll enjoy my wine for a bit before calling it a night

We went to the Nepalese restaurant this afternoon, man, was it good, but gosh was it expensive. Son liked it too, little guy didn't care for it.

Odds and ends. I haven't left the house much because of the cold hell.
Turkey soup I pulled out of the freezer. I made it at Christmas. One small catfish fillet. Half an avocado. Hummus with caramelized onions.

This week: Tonight: Pepperoni and cauliflower (sale) casserole. Cost approx $4 for 4 servings. Tuesday: Leftover casserole from the freezer. 0.00 Wednesday: Chicken tenders breaded in parmesean and almond flour (huge bag from Sam's Club), veggie. Cost approx. $5 Thursday: Leftovers. 0.00 Friday: Take out from? 0.00 (DH pays) Saturday: IDK yet. $?.?? Sunday: Fish night: Stuffed crab, shrimp (e-coupon), cod, side veggie. Approx $9 Down nearly 8 pounds since Jan. 2nd. Have a fantastic week, everyone!

well, I brought in stuff to assemble a taco salad tonight, but it's $#&^*#$& freezing in the office today. I may have to do soup instead.....which irks me b/c I could have brought some yummy homemade soup from home if I'd known. oh well, tomorrow I guess.
if I go with a carton of chicken tortilla soup (from the desk drawer), that was a $2 purchase. if I go out and buy soup somewhere, it will be more. there's a Whole Paycheck in the same plaza as the crafts store I'm already planning to hit, so maybe I'll grab something warm there.

I am 63 years old (64 in a couple of weeks), and I never ever knew you could cook frozen hamburger patties until now. I bought a box of Sam's Choice Angus burgers . . . 6 patties that are 1/3 pound each. I cooked one last night and enjoyed it so much as an entree that I cooked one tonight to enjoy as a hamburger. It will be a while before I cook the rest, but I was really impressed at how they turned out on my George Foreman. Mine does have variable temperature control so I was able to turn it down to medium and cook for 14 minutes. Anyway, tonight was the hamburger. I just use loaf bread, which is reduced calorie wheat from Publix. There were some leftover baked beans. I am ready for "the" game. Roll Tide!

I sautéed Pacific White Shrimp ($8 a pound on sale) in butter and garlic. Then added fresh ginger, sesame oil, soy sauce, honey, hot pepper flakes, mirin, shallots and sesame seeds.
Served over jasmine rice.
Lovely.

I’m making potato and leek soup. Not sure whether DH will like it though, so my backup plan it to thaw some split pea soup I made a couple of weeks ago.

Last night was Chicken in lemon/butter sauce. It was kind of meh, but ok. Mashed potato, salad and corn. Cost, around $4. for both of us. (I really need to learn how to cook) Not sure about tonight. Thinking pizza or chili. (Okay, I'm halfway decent on chili)

I'm about a mile and a half off the exit at both ends. it's not ideal, but it's not like I'm in bumper-to-bumper Boston traffic every day. it works for me right now
