We've been kind of grazing the past two nights. I've had huge lunches at training and DH took very late lunches.
Spaghetti Wednesday night. Thursday night we are meeting my cousin for dinner. He's working in town for a couple months.

I threw a roast in the crock pot. Leftovers tonight. Tomorrow I'll make tacos from what's left. We're having a cinco de mayo themed birthday party for all the May birthdays in the department on Friday. I'll just make a ton of rice as it's what I'm assigned to bring with the tacos and take the leftovers to work for the party.

Thanks for the leftover pork ideas, chiver78 and andi9899. Yesterday's pork roast resulted in a LOT of meat, and I usually don't care for warmed up leftovers, as I find it bland and dry. Mexican dishes it is!

no problem! have another idea for you, just did this myself for breakfast. take some of the unsauced pork and crisp it up in a fry pan. olive oil, chili seasonings, get those crispy edges. when that's cooked, the pan should be hot enough to do up some over easy eggs in about 30 seconds. pour those over the top and let the yolks flow. I dipped some bread, maybe there's something LC you could house for the same?
dinner tonight will be some rice noodles with chicken. I'm going to grab a small order to go from the Chinese place I love that is in the mall where JC Penney is. I'm heading there next.

I'm packing up a couple options for dinner tonight. I don't know if I'm going to want pork for both meals when I go to eat again.
I have the rest of the turkey and broccoli pasta, and salad greens to build a pork and slaw salad.

Chicken was on sale for 99 cents a pound.
I made "Jamaican Curried Stew Chicken", with Indian flatbread for dipping. I never made it before, and it was beyond delicious.

Monday night is ribs, green beans and either some sort of potatoes or mac and cheese. Cost $13?
Tuesday night will be spaghetti. Cost $5-6?
Wednesday night we have happy hour to celebrate a friend's promotion. I have no idea on costs. I intend to pick up my brother's tab as he paid for dinner for my cousin and me last week.
Thursday something at the ballpark so not cheap!
Friday I'm going home for the weekend. So wherever Grandma wants to go for dinner.

I ordered takeout from Applebees. there was a spinach artichoke pasta on the menu that looked decent. added a Caesar salad as well.

Tonight: Breakfast for supper-chorizo with eggs (farm fresh from a neighbor) and cheese (coupon) in leftover tortillas from last week's carne asada. Approx $3 for 2 servings Tues: Cod, shrimp and roasted turnips (had a seafood e-coupon). $9 for 2 servings Wed: Baked chicken legs (sale $2.50 for 10 chicken legs) with fried eggplant. Approx $4.50 for 4 servings Thurs: Sausage link (sale) and zucc. $3.50 for 3 servings Fri: Steak and side veggies. Haven't yet been purchased. Sat: Brats and dogs. Also haven't yet been purchased. Have a fantastic week, everyone.

Saturday night was salad, meatloaf, sweet potatoes and green beans. Cost $8.45. Enough for both of us and one + lunch. Sunday night was salad, baked chicken, potatoes and carrots. Cost $5.21. Still have some left over. Tonight will be leftovers (garbage pickup is Tuesday) Tuesday, Pulled pork sandwiches, DH will have a salad with that. Cost $5.82. I'm sure we will have leftovers. Wednesday, if the weather clears, would like to grill some burgers. Thurs and Fri, not sure yet.

dinner last night was a hearty chunk of French baguette with seasoned oil and cheese, and a few glasses of wine.
dinner tonight, and most of the week as long as it lasts, is Cobb salads. I've got 2c Pyrex bowls with all the chopped veggies, as well as marinated grilled (pan) chicken and crumbled bacon in a thermal bag while I sit here at the dealership for an oil change. I will need to pick up a bottle of salad dressing somewhere near work later, as I finished the bottle I'd had in the fridge there last Friday night.
I'll bring in fresh greens every day, but will leave the Pyrex station setup in the office fridge.

It's grocery shopping week, so some items haven't yet been purchased. Last night was leftover brats, veggies and dip. $0.00 Tonight: Tuna nicoise salad using up fridge leftovers and a couple cans tuna. $1.25 Tues: Rotisserie chicken, side veggies. Approx $7 Wed: Something with ground beef. Need to buy.
Thurs: Fish. Need to buy.
Fri: Take out from? DH pays.
Sat: IDK yet
Sun: Something smoked or grilled. Have a fantastic week, everyone!

the hot bar at the local grocery store had garlic parmesan chicken bites when I stopped to pick up salad dressing. so.... my salad tonight isn't going to have chicken or bacon when I get around to eating it, because I grabbed some garlic parmesan chicken and just had those.
