We had lunch with hubs classmates today about 25 showed up. He enjoyed it.
We had to run to the city to see about renting a bunch of bouncy houses and such
for the local festival.
I bought fresh catfish while there and some of the sweet bell peppers. Dinner was
fried fish, fresh cut French fries, bell peppers, rolls. Was going to get some fresh
corn on the cob but $4 for 4 ears. No way, I could have gone to another store and
likely gotten it for much less but we didn't want to stop again.
The fish were excellent, very fresh today.

Prince Edward Island Blue Mussels, made in a sauce of shallots, garlic, chicken stock, red bell peppers, celery, more garlic, white wine, parsley, parmesan and heavy cream. Eaten with a fresh baguette, hot out of the oven, for dunking. The mussels were $3.99 for a kilo. that makes me really wish I could eat shellfish. that sounds heavenly. I'll eat your share for you. I'm a good friend like that. Seriously, I would hate to develop a shellfish allergy. I love it so much.

it really is a PITA, especially where I live. I can avoid eating it directly easily enough, but the cross contamination risks are just crazy. but hey, I like breathing, so.... dinner tonight was a chicken and vegetable stir fry over rice. we basically cleaned out the fridge of veggies that needed to be cooked or pitched, seasoned the chicken with ghost pepper sea salt and Aleppo pepper. I added a splash of teriyaki and soy, roommate went with hot mustard and duck sauce.

What does duck sauce taste like? I've never had it before. I imagine it doesn't taste like duck. I like duck though.

Last night was chicken, angel hair pasta and green beans w/almonds. Salad. About $7., it did feed both of us with leftovers for lunch tomorrow. Tonight, pork tenderloin (Sale, $2.98...darn good sale. ) Mashed potatoes, thinking corn and salad. Total, about $5.00. Probably leftovers. Monday night, chili and cornbread. Tuesday, might do Italian beef sandwiches. We've been eating down pantry and freezer, and I really have to grocery shop.

Last night we went out with a friend for dinner and drinks.
Tonight we are grilling steaks and will have baked potatoes and salad on the side. I will saute up a pepper and onion to top the steaks with.
Monday night is cheddar sausages, sweet potato tots and salad.
Tuesday night will be spaghetti and salad.
Wednesday night we will grab something on the way to our hotel.
Thursday we leave on vacation.

we are kicking around the idea of tacos or just going out with a Groupon for an Italian place near here. this will likely be determined by where the dishwasher cycle is by the time we get hungry. the stove has got to be broken down tonight, it's disgusting. but the dishwasher is packed and running now, and it takes forever.

Last night DH smoked a pork roast. YUM! It was about $14.
Tonight I'm making egg, bacon and cheese quesadilla and will serve with leftover rice and Budget Bytes Not Refried Beans. Cost approx $5.
Tues and Wed: I'll be out on business.
Thurs: Something easy.
Friday: Take out from?
Sat and Sun: IDK yet

that sounds really good, andi. report back after you try it. I've got split breasts in the freezer, I could definitely give it a whirl.
dinner tonight is a big Caesar salad with black peppercorn marinated chicken. lunch was a little heavier than usual, but that bagel was damn tasty!

Hot, cold, clear, rainy, doesn't matter. We have it all year 'round, as well; although, in summer I tend to make more scampi as it's not quite as rich. Alfredo just sounded right for the current weather conditions.

It's good. Even with me half assing it with bottled lemon juice and minced garlic in a jar. I added a little more lemon juice and did 3 cloves of garlic in the marinade since I didn't have whole cloves to put in the pan. I served it with mashed potatoes and broccoli. I'll make it again.

a very unsatisfying can of soup. but, I'm trying to subtly clear stuff out of my desk and not restock. I had brought with me today a couple pieces of Brazilian BBQ pork that I picked up when I went to lunch with my mom (pay by weight) to go with some salad greens that I already had here. but the office has been freezing today, so I went with the soup. oh well.

In December my DIL and I went to Christmas Village, an arts-and-craft type venue where they also sell stuff like packages of spices for soups, dips, etc.
I tasted and then bought one for pineapple chicken salad. I had all the ingredients . . . crushed pineapple, sour cream, cream cheese, mayo, chicken . . . so I finally made it today.
I'm waiting for it to chill, but it is yummy. There is also a lot of it. You couldn't make half because of the way the spices were layered in the package.
I will be eating chicken salad for a lot of meals over the next week. I don't think it would freeze.

I don't know tonight. I'm thawing chicken, got a jar of my home made spaghetti sauce, maybe chicken cacciatore and a salad, plus steamed green beans which no one but me will eat.
DD and I had fish sticks for lunch. She will not listen to me, bottle of strawberry milk for breakfast, my bad, should have mixed ours, less calories, so 440 for that. She found a easter chocolate peanut egg I forgot we had 170. Then fish sticks, not sure but ate at least 6 plus 2 slices of bread, now she is eating cheese. She is hungry all the time and mad at me because I say anything to her. For breakfast I try to make sure she has 2 slices of bread, an egg, slice of cheese, then a strawberry milk from fresh milk and mix, less calories. Sometimes just a sandwich, but she wants 2 or 3. Also when she goes out shopping I'm sure she is buying candy and hiding it. I have now gotten her to at least buy the G2 Gatorade so that's better. I do cook good things but she will eat something else or more, a sandwich after a full meal. And I think she gets up and eats bread all night. We went to whole wheat so she will eat less. I told her just go ahead, I'm tired of arguing all the time, trying to get her to eat salads and light foods. She says I try and try and can't lose weight, she tries nothing and getting her to move is impossible. I am having a bad day and noticed I just spread it all over 2 threads.

I didn't have any of that in the house last night, so I added about half a cup of rice. I figured little nuggets of starch is little nuggets of starch. It came out quite tasty.
