something with vegetables. we had pizza brought in today for the site. at least there was salad, too. I am just so sick of the heavy foods that have been the catering options this week. and, having been in the room with the inspectors half the time, I couldn't really bring my own stuff in separately. we all ate the same thing.

woke up hangry from an unexpected nap with the pups when I first got home. as I was boiling off a BSCB to shred for them, I nuked half a chicken cutlet and chopped up a romaine heart for a quick basic salad. that was probably an hour ago and I'm hungry again.....so I'll probably snack again before I call it a night.

LUNCH: Turkey sandwich, apple, Progresso Lite Chicken Vegetable Soup.
DINNER: Grilled sole on a bed of wilted greens (chard, kale and spinach), steamed broccoli + pea pods, roasted beets, grilled asparagus, baby potatoes and some toast.

I stopped to get one thing at the store and there were hams on sale. So I instead made ham, mac and cheese, and zucchini and yellow squash. Can I freeze some of the leftover ham, or do I just need to start making ham dishes right and left?

I think you can freeze ham, I think other posters have said they do that. I don't eat it, so I'm not much help.
when I got back from the grocery store yesterday with a bag of lemons, I realized I already had a bag of lemons. so, I think I'm going to make some chicken piccata tonight to use up some of them. I'll make enough to have leftovers for the week, since I still don't know what my hours are going to be past tomorrow.

I have chicken marinating. It's soaking in a beer, honey, garlic, cilantro, salt and pepper. It's going on the grill when I get home. I'm making brown rice. If the kids come over, I'll make a salad. If they don't, I'll just eat the leftover veggies from last night.

Haven't decided if it's chicken or pork.
Sides will be wild rice, carrots, salad, rolls. Blueberry pie for desert.
Tomorrow: Whatever I don't make tonight... different sides though. Thinking angel hair pasta and green beans.
Costs about the same, $6.00 for two of us (b1g1 sale a couple of weeks ago)
Tues, beef fajitas.

We are having chili. It's in the crock pot.
Technically, it's too warm for chili (maybe 70 degrees), but I don't care. The fixings were in the pantry and need to get used.
I bought grass-fed lean ground beef from Sprouts yesterday for $3.99 a pound. I bought a pound-and-a-half and only use half of that in any dish requiring a "pound" of hamburger, etc. It cuts down a little on the red meat I eat, and it also saves money.
You really don't notice that there is less meat in whatever.

Tonight we are having a pork roast with a cherry glaze, roasted broccoli and mashed potatoes.
Monday night is taco salads.
Tuesday night I'm going to have dinner with my brother or grab some take out.
Wednesday night will be grilled steaks, salad and potatoes of some sort. Hopefully the snow will be gone by then and DH can get to the grill.
Thursday night will be pizza or other take out.
Friday morning we are both leaving town for the weekend.

Yesterday I made a big batch of chicken pot pie soup. I had everything on hand except the chicken $4.32, potatoes $1.09, baby portabellas $2.99 and the milk $1.69. I had that for dinner, froze three individual servings, and have a two-serving container saved in the fridge. So $10.09 for six servings.
Today I made black beans in the Instant Pot. I had the black beans on hand, and bought a bunch of spices and condiments I didn't have on hand (coriander, smoked paprika, green Cholula) which I won't add up the cost of because they're really staples that I'm replenishing but let's say all together what I used was about $1.00 of spices and condiments, bacon was $1.15 (the recipe called for two slices, and I bought two slices at the butcher counter), and a poblano pepper was $0.40. So $2.55 for maybe 6 servings of beans. I can make black bean soup, beans and cauliflower rice, and salad with beans.
And I'm marinating a pork tenderloin (from the freezer, $3.99) that I can have with the beans, fresh broccoli and fresh carrots I have on hand, etc. Probably 3 to 4 servings. I'll cook that tomorrow. It's marinating but still somewhat frozen.
Later, I'll make Chicken Cacciatore in the Instant Pot. $4.32 for the chicken, have the canned tomatoes on hand, ditto with spices, and I bought a green pepper $0.99, and a red pepper $1.25. So $6.56 for four servings. I have some whole wheat pasta on hand that I'll have with it.
That should give me plenty of lunch and dinner options until next weekend.
I also splurged on fresh fruit: cut up pineapple, plus raspberries, strawberries, and blackberries. I'm terrible about using all of the food I buy, so I am doing my best to prepare fruit salads, wash and hull the strawberries, wash the raspberries and blackberries, and keep it all in the front of the fridge. Goal is to eat it all by next weekend, or else it goes in the freezer.

hmmm.... I don't have canning jars, and I'm not a huge fan of Middle Eastern cooking. it sounds easy enough if I buy the hardware. I know you're a huge fan of that style of cooking, but what else do you use these for? I'm intrigued. I use them for any dish I use lemons in, except for sweet dishes. Great for fish dishes, lemon chicken, linguine with clams, etc. The first time I made them, I didn't use a canning jar. I used an empty glass jar from strawberry jam. Turned out great.

I sauteed some green onions, red and yellow bell peppers, a tomato, garlic and tossed in a pound of shrimp, finely diced preserved lemon and fresh cilantro. Served over basmati rice. Delicious. The shrimp was on sale for $7.99. The vegetables needed to be used up.

Good morning, everyone! Last night we had BLTs- I put mine on a homemade pretzel roll, and DH's on Hawaiian sweet rolls from the freezer. I served them with a side of fried eggplant. Cost approx $4.75 for the 2 of us with leftover eggplant for lunch today. Tonight: LC shrimp and crab (coupon for both) crepes with a side of zucchini ravioli (I assembled the latter Saturday to save money during the work week): Cost approx $16 for 4 servings. Wed: Chili with homemade cornbread for DH, a pretzel roll for me. Cost approx $6 for numerous servings. Thursday: Leftovers Friday: Take out from? Sat and Sun: IDK yet Have a fantastic week!

last night I sauteed 2 chicken cutlets. sliced up half of one and tossed it with a package of chicken and prosciutto tortellini and a bruschetta mix with extra prosciutto. added a small Caesar salad. had half last night and the rest for lunch today with another small salad.
tonight? something with more of the chicken. not sure what.

Tuesday night I had take out. DH pan sauteed two pieces of salmon and nuked a broccoli cheese thing. Cost $6-7? The bag of salmon fillets was fairly pricey.
Wednesday due to the not grill friendly weather I made some honey mustard chicken instead. I rounded it out with salad and I made potato cakes with the leftover mashed potatoes from Sunday.
I will take the leftover chicken and potato cake to work Thursday for lunch.
Thursday night's dinner will be leftovers to clean out the fridge. We are both leaving for the weekend.
I need to restock on chicken now. I have one portion left and it's for black bean pulled chicken.
Steaks will go on the menu for next week one night.

last night, I opted for a cup of French onion soup and a Caesar salad at the dive bar when I went in to pay my dog walker who works there on Tuesday nights. add a few beverages while I was chatting and watching hockey, tab was about $30. tonight, I'm back on normal work hours. I had the pasta and salad that I'd brought in for lunch yesterday and didn't eat in favor of going anywhere just to leave the building. not sure what's on tap for tomorrow night. maybe another soup/salad at the dive bar since it's my typical thirsty Thursday.

Prince Edward Island Blue Mussels, made in a sauce of shallots, garlic, chicken stock, red bell peppers, celery, more garlic, white wine, parsley, parmesan and heavy cream. Eaten with a fresh baguette, hot out of the oven, for dunking. The mussels were $3.99 for a kilo.

I just put the meal Thing 2 says "tastes like thanksgiving".
Leftover chicken (this time, you can also use turkey)
One can cream of chicken soup (you can us mushroom or cheese soup or leftover turkey or chicken gravy),
One bag of frozen broccoli thawed almost all the way
One box of Stove Top (or homemade) stuffing
Cheese (any yellow shredded cheese)
In a casserole dish combine chicken, broccoli and soup. Thin out the soup a little with milk just enough that it coats everything else well. Top the mixture with the stuffing and sprinkle the top with a thin layer of cheese. Bake at 350 until the cheese is melted and everything else is hot, about 15-20 minutes.
