I had one potato left. So I boiled and mashed it. I also cooked a hamburger patty, which is known around here as hamburger "steak" if you serve it sans bun. I also had some leftover green beans.
It was yummy.

I had leftover spaghetti from Saturday's night meal with Grandma. I fixed DH the last of the honey mustard chicken from last week and a steamer bag of broccoli. He had a piece of the chocolate cake I made for my dad's birthday for dessert.

It's my Monday. And I would very much like the hour back we "lost" over the weekend. Sunday: Out w/ family. We split a few appetizers and a pizza. We were celebrating someone's 21st birthday so a few of us did several rounds. Total cost $140 with tip for 4 of us. Last night: Leftover biscuits and gravy. What carbs? DH paid. Tonight is fish night! I'll bread cod ($1.99 with an e-coupon) with crushed pork rinds and seasoning, and serve it with shrimp ($4.12 for half bag, with an e-coupon) and okra ($1 on sale), and a bit of rice (free Friday download) for DH. Total cost $7.11 for 2 servings. I have a ribeye thawing for tomorrow night. $11.33. ACK!!!!!!!!!!! Thursday is grocery night so IDK yet. ?.?? Friday: Take out from? DH buys. Saturday: I'll ask DH to grill something. Maybe the big ass package of spareribs I bought last month to get them out of the freezer? $16.62 for 4 servings. Sunday: Something easy since we'll be gone most of the day. Have a fantastic week, everyone!

Tuesday night I had leftovers from my dad's birthday dinner at my grandma's. Free to me. DH refused to eat such things so he made himself a grilled cheese sandwich and a can of tomato soup. Cost maybe $3 or so?
Wednesday night black bean pulled chicken served over rice. Under $10 and we have leftovers. I also made mini apple cranberry pies to celebrate pi day.
Thursday night we have plenty of leftovers.
Friday night we have reservations before a concert.
It's been nice to have a break from cooking this week. I get burnt out on cooking every night.

Last night: Spaghetti, garlic bread and salad. Total cost approx $7.50. Enough in leftovers for my lunch today.
Tonight: Pork chops, mashed potato, salad, carrots. Approx cost: $8. I'm confident there will be leftovers.
Friday: Not sure
Saturday: Corned Beef and Cabbage, potatoes...cost approx: $8.

got.home around 8pm, cut in half a large pork chop is bought last weekend and never cooked. sauteed both pieces and nuked the rest of the roasted veggies from Tuesday night (barely a serving) and some mashed potatoes. after that, I went to the dive bar hoping to run into the waitress that walks my dogs when I need midday coverage, her phone has been f'd with the storms and not receiving texts. I'm going to need her again next week.
so, a big cosmopolitan for me, and I bought a beer for the electrical lines guy that was sitting at the same.bar corner with me. he's from VA Beach, and came here straight from NJ last weekend. that's not nearly enough thanks, but I was on my way out.
total cost was the bar tab - $20 including tip.

Saturday: I'll ask DH to grill something. Maybe the big ass package of spareribs I bought last month to get them out of the freezer? $16.62 for 4 servings. Sunday: Something easy since we'll be gone most of the day. We'll get take out Sunday instead of tonight.Have a fantastic week END, everyone!

We actually had the ribs last night. They weren't too bad, but I'm just glad to have the room in the freezer. Tonight we'll have leftover corned beef and cabbage. Price posted last week. Tomorrow is taco night with cheddar cheese taco shells with spicy (I used my own spice blend I posted about last yea) ground beef, sour cream and olives inside. I already cooked the beef last night so it's ready to go. I'll serve it with leftover rice from Saturday's Thai take out. Total cost approx $5 for 2 servings. Wed: I am so excited to try some new things this week! Last week at the grocery store I splurged for a can of crab meat ($13.99 after an e-coupon). Half will go into low carb crepes, and half will go into sushi made with riced cauliflower instead of rice. Thursday: I'm taking a friend out to celebrate the fact he's relocating to the other side of the state. Friday is take out from? Saturday I'll probably make whatever I don't Wed with the crab meat. Sunday: DH will smoke/BBQ something.' Have a fantastic week, everyone!

I'm going to freeze most of the eggplant, maybe I'll just freeze more than originally planned.
I am craving salad as well. idk.

last night, I didn't leave the office til after 8. I stopped at the dive bar on my way home, knowing that my roommate would already be in bed and not wanting to disturb the quiet house to grab a small bite. I had a cosmopolitan and a cup of turkey rice soup. $10, including tip.
so over this week.

Monday night we grabbed something out. We decided to do some shopping before the snow hit and it was already 7pm.
Tuesday night I made the spaghetti that didn't get made Monday. Cost maybe $7?
Wednesday night pork tenderloin with roasted veggies over rice. I don't remember what I paid for the big 4 pack of tenderloin and the veggies were not cheap! So $15?
We have a serving of spaghetti and pork and veggies left for another meal.

got home around 730 tonight, roommate wasn't home yet. he had his own 13h day today, got home about am hour and a half later. I was hangry, so I didn't wait for him to fix dinner. he nuked some leftovers from last night when he finally.got here.
for me, I made a serving of eggplant parmigiano with the sauce and fried eggplant I did up on Sunday, and roasted about half a pound of Brussels sprouts. oh, and a couple glasses of wine to hopefully keep me asleep through the night tonight. I haven't successfully done that the whole time I've been on days.
